An Irish staple since the late 1800s, here's a way to make cabbage tonight that your family will love.

1½ lb shredded green cabbage
5 oz Herb Butter (That you make or buy already seasoned.)
Salt & Pepper to taste
5 oz unsalted butter
½ tbsp garlic powder
1 tsp lemon juice
½ tsp black pepper (freshly ground)

Steps:

  • Cut head of cabbage in half, then cut the halves into fourths. Cut away the core of the cabbage.
  • Shred the cabbage to the size you desire. Set aside.
  • Mix your butter with your desired herbs and spices. Place in the pan and begin to heat your pan. Once your butter is melted, just before it starts to bubble and possibly burn, add your cabbage.
  • Stir gently until the cabbage is cooked through.

Herb butters are so quick to make and are great to have in the freezer - fantastic to have with vegetables, chicken, lamb chops or just on some toasted ciabatta. They can be made with any herbs - thyme, lemon zest and garlic, or sun-dried tomato, basil and garlic. This dish has summer savory in it, which is a very English herb, is quite strong, and apparently stops flatulence! And is a great substitute for salt and pepper.

6 sprigs fresh rosemary
1 pound rib-eye of beef, off the bone
Oil
2 cloves garlic
Small bunch (20 grams) summer savory leaves
Pinch sea salt
8 3/4 ounces (250 grams-2 sticks plus 2 tablespoons) unsalted butter, at room temperature
Potatoes, peeled, cut in to 1 inch dice and cooked for 10 to 15 minutes
Fresh rosemary leaves
1 bulb garlic
Sea salt and freshly ground black pepper

Steps:

  • Pre-heat the oven to 200C degrees/400 degrees F/ Gas Mark 6.
  • Remove some of the rosemary leaves from the stalks by running your thumb and forefinger down the length of the stalk. Sharpen the ends of the rosemary skewer to make them into little arrows, then pierce them through the beef to flavor it. Chop up the rosemary leaves and press onto the beef on both sides. Cover and allow to stand for 1/2 hour until room temperature. (Beef tastes better if cooked at room temperature.)
  • Make the butter by bashing the garlic, summer savory and a pinch of salt in a pestle and mortar, then combine with the softened butter, mixing to flavor all of it. Put into buttered paper, roll into a sausage shape, and chill.
  • Cook the potatoes in boiling, salted water for about 10 to 15 minutes. Drain, then toss in the colander to chuff up.
  • Drizzle some oil over the beef and pat onto both sides. Heat a frying pan suitable for the oven, and cook the beef for 1 minute on each side. Remove from the pan, add the potatoes with some rosemary and bashed garlic, salt and pepper, then put the beef back into the pan. Put the pan into the oven and roast the beef and potatoes for about 30 minutes.
  • To serve, slice the meat and place 2 slices of the butter on top. (Freeze the remaining butter.)

3 pounds corned beef brisket with spice packet
2 carrots, cut into 2-inch pieces
2 medium onions, chopped
1 small head green cabbage, cored, roughly chopped
2 cups apple juice
1 cup water
1 1/2 pounds baby red potatoes, sliced in 1/2
1/2 stick butter, softened
1 tablespoon chopped garlic
2 tablespoons chopped fresh parsley leaves
Salt and freshly ground black pepper

Steps:

  • For Corned Beef:
  • Put the carrots and onions on the bottom of slow cooker, and put the corned beef on top. Arrange the chopped cabbage around the beef. Add the apple juice and 1 cup of water along with the contents of the spice packet. Cook on low 6 to 8 hours until the beef is tender. Remove the beef and vegetables to a platter and keep warm.
  • For potatoes:
  • Bring a large pot of salted water to a boil and add the potatoes. Cook until the potatoes are tender, about 12 to 15 minutes. Drain and return them to the pot.
  • Add the butter, garlic, parsley, and salt, and pepper, to taste. Gently combine so that all the potatoes are evenly coated. Transfer to a serving bowl and serve with corn beef and vegetables from the slow cooker.

½ cup butter
3 cups water

Steps:

  • Grind up the dried oregano until very fine; measure out 3 tablespoons.
  • Melt butter in a saucepan over medium-high heat. Lower heat to medium-low and stir in oregano. Carefully pour in water. Simmer gently, stirring every 20 minutes, until flavors combine, about 2 hours in total. Remove saucepan from heat.
  • Wrap a piece of cheesecloth around a glass, ceramic, or metal bowl and secure with a rubber band. Pour butter mixture through cheesecloth into bowl. Remove rubber band and carefully squeeze excess butter out of the cheesecloth, making sure oregano is strained out.
  • Cover bowl with aluminum foil and chill in the refrigerator until butter solidifies above water, about 4 hours. Break the butter in half with a knife and transfer to a plate. Cover. Discard water.
