Steps:
- In a bowl whisk together the vinegar, oil, Dijon, sugar, and season with salt and pepper. Set aside.
- In another bowl, toss the cabbage, carrot, red pepper, red onion, and chives together lightly.
- Drizzle the salad with the vinaigrette, and toss to coat.
CABBAGE SALAD FRESCA
I've enjoyed the common Chicken Noodle Ramen Seasoning recipe for years. However, I do NOT enjoy serving MSG to my family. So, I came up with a way to revise the recipe, still make it tasty and flavorful and fresh for my family. This is very similar to the original recipe.

Steps:
- Toast your seeds and nuts and set aside.
- Shred cabbage if not buying store bought shredded.
- Shred broccoli and carrots (if desired).
- Combine cabbage, onions, broccoli and carrots and set aside.
- For the Dressing:.
- Combine Olive Oil, Vinegar, Sugar, Salt, Pepper and Spices.
- Whisk or shake till mixed well.
- Before serving, pour the dressing on the cabbage mixture. Add the nuts/seeds. Also consider adding cooked chicken if desired (my favorite way of eating it).
- Note: Regular white vinegar is fine.
- Note: I'm guessing on the amount of Poultry and Mexican Blend because I just add a little at a time until it tastes the way I want. In the past, I have also substituted portions of the sugar out for Xylitol and/or Stevia with good results.
- Note: This recipe could probably serve 8 people as their main meal if you add chicken. Its a very large recipe.

FRESH CABBAGE AND TOMATO SALAD
This recipe was in a brochure from our Health Insurance Company. It sounded good so I tried it and we liked it very much. It is a heart healthy recipe from the National Heart, Lung and Blood Institute. Guess that can't hurt...lol. You can make more of the dressing if you like extra flavor from that. We made a double batch of the dressing. Cook time is chill time if you want it chilled, but other than that there is no actual cooking time. Use a small head of cabbage. I couldn't get the software to let me reflect that in the directions or the ingredients.

- In a large bowl, combine cabbage, green pepper and onion. In a small bowl, combine mayonnaise, vinegar, sugar and salt. Pour over cabbage mixture and toss to coat. Cover and refrigerate at least 4 hours. Stir in bacon just before serving.
