BAMI GORENG (INDONESIAN VERSION OF LO MEIN)



Bami Goreng (Indonesian Version of Lo Mein) image

My grandmother was born in Indonesia and growing up we awaited the next time she would make Bami Goreng- "Fried Noodles." She made it with pork, but since I no longer eat pork I substitute chicken here. This is the basic version. You can add any vegetable you like. I add tiny frozen peas and carrots for color, or red or yellow bell pepper thinly sliced using a mandolin.

1 lb spaghetti noodles or 1 lb egg noodles
2 chicken breasts, boneless, skinless, sliced thin
2 cups chopped leeks (clean the leaves well)
1 cup bean sprouts
1 cup sliced bok choy or 1 cup cabbage, washed
1/4 cup ketjap manis (or more, to taste)
1 tablespoon pepper
1 beef or 1 chicken bouillon cube
1/2 cup water
1/2 inch piece gingerroot (or 1 tsp powder)
4 garlic cloves, minced
1 teaspoon sambal oelek (chili paste) (optional)
fried onions (optional topping)

Steps:

  • Stir fry chicken in wok in oil on medium-high heat.
  • Add leeks beansprouts and cabbage. Stir fry until cabbage wilts. Add next 7 ingredients.
  • Simmer until it comes together and enjoy the smell. In the meantime, fire up a pot of boiling water and prepare spaghetti.
  • Throw noodles into chicken mixture. Mix and add more ketjap and/or sambal to taste. Top with fried onion (optional).
  • NOTE: A tablespoon of pepper seems like a lot, but it gives the dish a nice zing!

SHRIMP LO MEIN



Shrimp Lo Mein image

This is a wonderful shrimp lo mein recipe. To cut down on prep time, I peel and devein the shrimp ahead of time, or buy the ones that are already done for you. Sprinkle with a little sesame seed and sliced scallion for a nice presentation. (Note: Oil measure is approximate; you may need to add a little more to prevent sticking)

2 lbs medium shrimp, peeled and deveined
1/2 cup soy sauce
8 teaspoons cornstarch
1/2 tablespoon grated fresh ginger
6 cloves garlic, minced
4 teaspoons sesame oil, divided
12 ounces snow peas
2 cups shredded carrots
1 head bok choy, sliced
1 (15 ounce) can chicken broth
7 scallions, sliced
12 ounces fettuccine, cooked and drained

Steps:

  • Combine first 5 ingredients and set aside for 10 minutes.
  • In skillet or wok, heat 1 tsp oil over high heat.
  • Drain shrimp, reserving soy mixture.
  • Cook shrimp until pink, 2-3 minutes.
  • Remove from skillet.
  • Add 1 tsp oil to skillet, then add peas and carrot, and cook 1 minute.
  • Add to shrimp.
  • Cook cabbage in skillet with remaining oil 1 minute.
  • Combine broth and reserved soy mixture and add to skillet, along with shrimp mixture.
  • Cook until thickened, 1 minute.
  • Remove from heat and mix in scallion and fettucini.

I played with this I love Lo-Mein and I like cabbage this is my own mix on a meat and vegtable Lo-Mein. You can add carrots and more spice to you taste.

1 lb lean beef (london broil or your choice)
1/3 cup soy sauce
1 cup beef broth
1/2 cup water
1 tablespoon cornstarch
1 tablespoon red wine
3 minced garlic cloves
1 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes
1 cup julienned sliced onion
1 cup julienned sliced green bell pepper
1/2 cup sliced fresh mushrooms
2 cups chopped cabbage
1/4 cup chopped green onion

Steps:

  • Slice choice of beef in 2 inch thin slices across the grain and set aside. Cook fettucinne according to instructions less about 3 minutes, strain,rinse and set aside.
  • In a bowl combine the beef broth, soy sauce, wine, ginger, and crushed red pepper flakes. add meat toss and set aside for approximately 5 minutes Prepare your julienned sliced vegtables and cabbage.
  • With slotted spoon now remove your marinated meat.
  • In a nonstick skillet or wok heat on med high heat add your oil and half of your chopped garlic stir around for 30 seconds and add meat cook until about 6 to 8 minutes Add all vegtables, the rest of the chopped garlic and stir fry about 5 minutes then add your fettuccine stir around to well mix with vegtables.
  • Add your liquid with spices mix well until hot (mix corn starch and water stir until blended) put in pot and stir around until thickened.
  • Garnished with chopped green onoins.

8 ounces linguine or Asian noodles
1/4 cup soy sauce
1/4 cup rice vinegar (unseasoned)
2 teaspoons grated peeled fresh ginger
1/2 teaspoon sugar
1/2 teaspoon red-pepper flakes
1 tablespoon vegetable oil, such as safflower
1 pound large shrimp, peeled and deveined
2 garlic cloves, minced
1 head green cabbage (about 2 pounds), halved, cored, and thinly sliced
1/2 cup water
1/4 cup fresh cilantro, for serving (optional)

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente according to package instructions. Drain and return to pot.
  • While pasta is cooking, combine soy sauce, vinegar, ginger, sugar, and red-pepper flakes in a small bowl. Heat oil in a large skillet over medium. Add shrimp and half the garlic; season with salt and pepper. Cook, tossing frequently, until shrimp are opaque throughout, 2 to 3 minutes. Transfer to a plate.
  • In the same skillet, combine cabbage, remaining garlic, and the water. Cook, stirring occasionally, until cabbage is crisp-tender, 6 to 7 minutes. Transfer to pot with pasta. Add soy sauce mixture and shrimp; toss to combine. Serve immediately, garnished with cilantro if desired.
