SO EASY SALMON PATTIES
This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley.

Steps:
- Saute onions in 1 TBS olive oil until cooked through but not brown.
- Drain liquid from the salmon.
- Combine salmon, sauteed onion, breadcrumbs (parsley if you use plain breadcrumbs), eggs, salt, and pepper.
- Form mixture into patties.
- Melt butter and oil in a pan.
- Brown salmon patties on both sides (about 4-5 minutes per side).
- Place cooked patties on a paper towl to absorb excess oil.
CLASSIC SALMON PATTIES
Steps:
- Gather the ingredients.
- Turn the salmon and liquid into a medium-size bowl. Flake the salmon with a fork, removing any skin and bones. Smaller bones are edible and may be mashed. Add the grated onion, parsley, and pepper; blend thoroughly.
- Add the beaten eggs and blend well. Add enough breadcrumbs, about 1/2 to 3/4 cup, to make the mixture thick enough to shape into about 12 small patties.
- Roll the patties in the remaining breadcrumbs to coat thoroughly.
- In a large heavy skillet or sauté pan over low heat, melt 2 tablespoons of butter. When the butter is hot, add the salmon patties. Fry patties slowly on one side until browned. Add the remaining butter, turn the patties, and fry them until browned on the other side. Serve and enjoy!

- Mix together 2 cans (7.5 oz) salmon, 1 package Ritz crackers crushed, 1/4 cup chopped onions, 2 eggs, 1/8 teaspoon dill weed (optional), and salt and pepper to taste. Melt some butter in a skillet. Form the patties and place in skillet. When they are nicely browned on one side, add a little more butter in the skillet and flip the patties. Once they have browned on both sides, place them on a paper towel - covered plate to soak off any excess butter.

- Mix salmon, onion, and egg together in a bowl; stir in flour. Stir baking powder and 2 tablespoons reserved salmon liquid together in a separate bowl; stir into salmon mixture until mixture holds together when shaped. Add more flour if mixture is too soft. Add more reserved salmon liquid if mixture is too firm. Shape salmon mixture into small patties.
- Heat shortening in a skillet over medium heat.
- Spread cornmeal into a shallow bowl and press patties into cornmeal until evenly coated on both sides.
- Fry patties in the hot shortening until golden brown, about 5 minutes per side. Transfer patties to a paper towel-lined plate using a slotted spoon.

- Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.
- Add onion, corn meal, flour, mayonnaise, and egg. Stir until well blended.
- Shape the mixture into patties about the size of an average burger or less.
- Cook in oil in skillet over medium heat until browned on each side. Turn once while frying.

- If using canned salmon, drain and pick over to remove hard cartilage and bones.
- Finely chop onion.
- Using fork, flake the salmon and then combine in a medium bowl with onion, egg, bread crumbs, Worcestershire, hot sauce, black pepper, cheese and parsley.
- Using about 1/3 cup salmon mixture for each cake, shape the mixture into rounds about 1/2" thick.
- Sprinkle flour on a plate and dredge the patties, coating well, but dusting off excess flour.
- Place patties in the refrigerator and let set for 30 minutes.
- Heat the butter in a large skillet until foamy and hot.
- Add the patties and brown both sides, cooking about 5 minutes.
- Remove the patties from the pan and drain on paper towels.
