BUTTERY DEVILED EGGS
This was a different flavor than I expected for deviled eggs so I liked them because it wasn't the usual. However, at first I wasn't sure I liked it. I wouldn't have thought about adding butter or sugar or pickle juice to deviled eggs, but it was good. If you want to mix up your deviled eggs, this is the recipe. Recipe courtesy of Sugar Spun Run.

CURRIED DEVILED EGGS
Steps:
- Put the cold eggs (straight from the refrigerator) in the bottom of a medium saucepan and cover with cold water. Bring the water to a boil and remove the pan from the heat. Cover the pan and let stand for 12 minutes.
- Drain the eggs and rinse with cold water. Let the eggs cool a bit, and then peel while they are still warm (they are much easier to peel this way). After you peel them, you can then store them, covered, in the refrigerator.
- Mix together the mayonnaise, mustard, vinegar, curry powder, mustard powder, cayenne and paprika. Season with salt.
- Slice the eggs in half lengthwise. Spoon out the cooked yolks and transfer to the bowl with the mayonnaise mixture. Mash together with the tongs of a fork until smooth. Alternatively, you can press the yolks through a fine sieve over the bowl and stir together.
- Spoon the filling into the egg whites, or you can put the filling into a re-sealable bag, cut one end off and pipe it in. Garnish with paprika and chives before serving.

- Peel the chilled eggs, removing all of the shell and membrane. Using a sharp knife, divide each egg in half lengthwise. Remove the cooked yolk from the egg and place in a bowl. Repeat until all of the eggs have been prepped in this manner.
- Using a large fork, break up the egg yolks. Add the softened butter and continue using the fork to work the yolks and butter into a smooth paste. Add the mayonnaise and mustard and mix until smooth. Taste for seasoning, adding salt and pepper if desired. If you prefer, white pepper can be used to keep from creating black specks of pepper in the bright yellow yolk mixture.
- Using a small spoon or a pastry bag with a large tip, fill the hollow egg whites with the yolk mixture. You can top each egg with a sprinkling of paprika for color or add a bit of fresh minced herbs from the garden. We tried fresh dill, thyme, and chive and loved the burst of fresh flavor they each added to the deviled eggs.
- Deviled eggs are best eaten within an hour or two of assembling, so serve them immediately and enjoy every last bite!
