THICK AND TASTY CHICKEN TORTILLA / ENCHILADA SOUP
Pretty much my favorite soup in the world. It has a thick broth rather than a thin, clear one. Yum! My family now has their own substitutions for the bullion and the cream of chicken soup (it still tastes as good with the substitutes) but this is the original recipe from my mom.

Steps:
- Soup: Pour all ingredients except chicken, sour cream and flour into a pot and bring to a boil.
- Mix Flour and Water to make a pour-able paste.
- Add flour water mixture to soup while stirring constantly.
- Add more flour/water mix if it is not the consistency you desire.
- Stir until it thickens.
- Reduce heat.
- Add Chicken and Sour Cream.
- Mix Gently.
- Ladle into bowls and add garnish on top.

HEARTY CHICKEN ENCHILADA SOUP
This soup is my take on the classic chicken enchilada soup recipe. All my friends love this one and are always asking for the recipe.

Steps:
- Boil chicken breast for 45 minutes to an hour.
- Saute garlic and onions in butter.
- Add flour and brown to form a light brown roux.
- Add water, chicken bouillon, enchilada sauce, shredded chicken, drained corn & Rotel tomatoes.
- Season with seasoned salt and paprika. More or less may be added to suit your tastebuds.
- Cook for 30 minutes, stirring frequently.
- Top with shredded cheese, avocados, and tortilla chips.

MAX AND ERMAS CHICKEN TORTILLA SOUP (OR ENCHILADA SOUP)
This is the closet (and easiest) recipe I have come across that is very close the Max and Erma's Chicken Tortilla Soup. This came from a quick cooking magazine in 2002. The ingredients are simple and it comes together in less than 15 minutes

- In a large saucepan, combine the soups, milk, chicken, enchilada sauce and chilies; mix well. Cook until heated through. Garnish with Sour Cream, Shredded cheese and tortilla strips.
EASY CHICKEN TORTILLA SOUP
This is the best and easiest tortilla soup recipe! I found it in the newspaper and have made it countless times since. If you don't have the pre-packaged beans and rice you can substitute a can of red beans and 1-2C. cooked instant rice; you'll also need to add some extra chili powder to taste.

- Over medium heat, in a saucepan, add Olive Oil, Onion and Chicken Breast and cook till chicken is almost done and juices are almost clear. About 4 to 6 minutes. Add Garlic and Jalapeno and cook for two more minutes. Add Taco Seasoning and Water and cook till the water has almost completly evaporated.
- Once the water is just about gone , add the rest of the ingredients and heat to just before it boils and remove. Serve with tortilla strips and cheddar cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl mix the soup and sour cream; set aside.
- Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken, chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through.
- Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.
- Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

- 1. In a large sauce pan dissolve bouillon cubes in 4 cups boiling water.
- 2. Add chicken to broth and simmer until cooked through.
- 3. Remove chicken from pan and set aside to cool.
- 4. Add tomato paste, chili powder, hot suace, onion flakes and lime juice to sauce pan and bring to a simmer while stirring.
- 5. Salt to taste.
- 6. Cut chicken into cubes.

- In a large saucepan, heat olive oil on medium heat. Add onion and sauté until soft, approximately 5 minutes. Add garlic and stir for another 30 seconds.
- Pour homemade enchilada sauce and chicken broth into pot, and bring to a boil. Add chicken breasts and reduce heat to simmer. After chicken is done (about 15 minutes), remove and shred. Using a standing mixer makes the shredding super easy!
- Add the frozen corn and black beans to soup mixture. Add shredded chicken back to saucepan, and simmer for another 5-10 minutes. Stir and check seasonings.

- Preheat the oven to 350 degrees F. Sprinkle the chicken breasts with salt. Place on a lined-baking sheet (I used foil for easy clean-up) and bake the chicken for 30 to 35 minutes. When done, allow to cool to room temperature until it’s cool enough to handle. Shred the chicken with two forks.
- To a medium pot, set over medium heat, add the olive oil. When warm, add the onion, garlic and a few pinches of salt. Cook slightly softened about 5 minutes. Add the onion mixture to the blender, along with 2 cups of chicken stock. Blend until smooth, about a minute.
- Place a few sheets of paper towels on a plate. To a small saucepan, set over medium-high heat, add the oil. Frying them in batches, add the tortilla strips to the oil and allow to fry up for 1 to 2 minutes. Transfer to the paper towels and sprinkle with salt. Repeat with the remaining tortillas.
- Divide amongst bowls and top with whatever toppings you’d like to add. I added a bit of avocado, cilantro, sliced radishes, cotija cheese and green onions.
