PEANUT BUTTER BANANA BREAD
Peanut butter stands in for butter and oil in this quick bread - and also makes for an indulgent glaze.

- For the bread: Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
- Whisk together the flour, baking soda, cinnamon and salt in a medium bowl.
- Beat together the peanut butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth. Beat in the egg and vanilla, then fold in the mashed banana. Add the flour mixture, and beat on medium-low until just combined (it's OK if there are some lumps).
- Transfer the batter to the prepared loaf pan, and bake until the bread is golden brown and has split at the top and a toothpick inserted in the center comes out clean, 1 hour 10 minutes to 1 hour 20 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. (You can tent the bread with foil if it begins to brown too quickly.)
- For the glaze: When the bread has cooled, combine the peanut butter, butter and confectioners' sugar in a medium microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Let the glaze sit until it has stiffened up a bit but is still spreadable. Spread over the top of the bread, and sprinkle the peanuts on top. Let sit for 10 minutes to set up before slicing. The bread can be stored at room temperature in an airtight container for up to 3 days.
BANANA BREAD WITH VANILLA BEAN "PECAN BUTTER"

- For the butter: Combine pecans and brown sugar in a food processor and pulse until coarsely chopped. Add the bourbon, if using, vanilla, butter, vanilla seeds and salt and pulse again until smooth. Scrape into a large ramekin. Cover with plastic wrap and refrigerate for at least 1 hour and up to 24 hours. Let soften again before using.
- For the banana bread: Preheat the oven to 350 degrees F and place an oven rack in the middle. Liberally spray the bottom and sides of a 9- by 5- by 3-inch light metal loaf pan with nonstick cooking spray. Set aside.
- Mix together the flour, sugars, baking powder, cinnamon, baking soda and salt. Set aside. Mix together the butter, oil, vanilla, bananas and eggs in another bowl. Lightly fold the wet ingredients (banana mixture) into the dry ingredients using a rubber spatula until just combined. The batter should be thick and chunky (do not over-mix; the batter should not be smooth). If you over-mix, the bread will become rubbery!
- Scrape the batter into the prepared pan. Bake until the bread is golden brown and a toothpick inserted into the center comes out with a few moist crumbs attached, 50 minutes to 1 hour. Let the bread cool in the pan on a wire rack for 15 minutes, and then remove the it from the pan. Serve slices warm slathered with the vanilla pecan butter.

- Heat the butter over medium-low heat in a small saucepan until the milk solids are deep golden brown and the butter smells toasted, 15 to 20 minutes.
- Whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon and salt in a medium bowl.
- Stir the brown butter so that any milk solids that have fallen to the bottom are distributed equally throughout the butter. Reserve 4 tablespoons of the brown butter for the glaze. Let the glaze sit at room temperature until it stiffens up a little but is still pourable, about 5 minutes. Pour and spread the brown butter over the bread. Let set. The bread can be stored at room temperature in an airtight container for up to 3 days.

- Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder and salt.
- In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
- In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. - Preheat an oven to 350 degrees F (175 degrees C). Grease 2 9x5-inch loaf pans. Set aside. Sift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. Set aside.

- Cream together softened butter and sugar in a mixer at medium speed until lightly fluffy.

- Preheat oven to 350°F Lightly grease loaf pan or put liners in muffin pan.
- In medium bowl, combine flour, baking soda and salt; set aside.

BROWN BUTTER BANANA BREAD
From Fat Girl Trapped in a Skinny Body... Browning brings out the richness of the butter. Go ahead and try a little spoonful from the pan, see, now you know what I'm talking about. The nutty, salty, sweet, milky flavors are all enhance. The brown butter and the brown sugar really give the loaf a depth of flavor that can't be achieved form just using regular butter or white sugar. It is worth the effort of using 1 extra pan to make the brown butter, it is TOTALLY worth it! The 'crust' has a perfect slight crunch, and the inside, wow, I literally can't stop eating it. It isn't overly sweet either. It is sweet yes, but not like a cake. But it is buttery like a cake, PERFECT!

- Preheat the oven to 350 degrees and grease an 8 inch loaf pan.
- In a medium saucepan over high melt the butter. Once it is melted lower the heat to medium and swirl the butter around the pan instead of stirring it. It will take about 5 minutes for it to brown. Occasionally swirl it. You will notice when it turns brown because it literally, turns brown. Remove the pan from the heat and allow to cool while getting everything else ready.
- In a large bowl sift the flour, sugar, baking powder, baking soda and salt.
- In another bowl whisk the eggs then add the mashed bananas, vanilla and the semi-cooled butter.
- Add the liquid to the dry mixture. Mix just until incorporated, don't over mix. I only used maybe less then 15-20 stirs. Pour the batter into the greased loaf pan.
- Bake at 350 degrees for 60-70 minutes, until it is browned on top and a fork inserted comes out clean. Cool for at least 15 minute sin the pan before cutting and serving.
- Cut loaf into 10 slices and serve, warm, with extra butter?!
APPLE-BUTTER BANANA BREAD
This recipe is a bit unusual because there is apple butter added to the batter which replaces the fat that would come from butter (which a lot of quick bread recipes use) and there is also canola oil added instead of vegetable so It's a little healthier. - Preheat oven to 350°.
- Grease and flour bottom and sides of a 9x5 pan only about 1/2 inch up sides of pan and set aside.
