1/2 cup cold butter, cubed
1 cup all-purpose flour
3/4 cup chopped pecans, divided
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed, divided
3-1/2 cups cold 2% milk
2 packages (3.4 or 3.5 ounces each) instant butterscotch or vanilla pudding mix

Steps:

  • Preheat oven to 350°. In a small bowl, cut the butter into the flour until crumbly; stir in 1/2 cup pecans. Press into an ungreased 13x9-in. baking dish. Bake until lightly browned, 20 minutes. Cool., In a small bowl, beat cream cheese and sugar until fluffy. Fold in 1 cup whipped topping; spread over crust. , In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; pour over cream cheese layer. Refrigerate until set, 15-20 minutes. Top with remaining whipped topping and pecans. Refrigerate for 1-2 hours.

I'm a registered nurse who managed to juggle my profession with raising our five children. Number Of Ingredients 9

2 teaspoons plus 1/2 cup butter, softened, divided
3-3/4 cups confectioners' sugar
1/2 cup nonfat dry milk powder
1/2 cup sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 package (14 ounces) caramels
1 tablespoon milk or half-and-half cream
2 cups chopped pecans

Steps:

  • Butter an 8-in. square pan with 2 teaspoons butter; set aside. Combine confectioners sugar and milk powder; set aside. In a heavy saucepan, combine 1/2 cup butter, sugar and corn syrup; cook and stir until sugar is dissolved and mixture comes to a boil. Stir in confectioners' sugar mixture, about a third at a time, until blended. , Remove from the heat; stir in vanilla. Continue stirring until the mixture mounds slightly when dropped from a spoon. Spread into prepared pan. Cool. , Cut candy into four strips; cut each strip in half. Shape each into a log; wrap in waxed paper and twist ends. Freeze or refrigerate until firm. , Meanwhile, in a microwave, melt caramels with milk, stirring often. Roll logs in caramel mixture, then in pecans. Wrap in waxed paper. Store at room temperature in airtight containers. Cut into slices with a serrated knife.

1 c butterscotch chips
1/3 c sweetened condensed milk
1/2 tsp vanilla extract
1/2 c chopped pecans
1 egg white, lightly beaten
1 can(s) (4 ounces) pecan halves

Steps:

  • 1. In the top of a double boiler,melt the butterscotch chips over hot water until smooth. Stir in sweetened condensed milk and vanilla. Stir in chopped pecans,mixing well and chill until firm enough to handle. Form into a 10-inch-long roll on wax paper. Roll tightly in the wax paper to shape evenly.
  • 2. Unwrap and mark the surface lengthwise with the tines of a fork, and brush with the egg white. Press the pecan halves into the roll to completely cover the surface. Rewrap in wax paper. Chill 2 hours or overnight. Cut into 1/2-inch slices with a sharp knife.

1-3/4 cups pecans, toasted
1-1/2 teaspoons kosher salt
1 can (14 ounces) sweetened condensed milk
1-1/2 cups unsweetened finely shredded coconut
1 package (3.4 ounces) instant butterscotch pudding mix
1/2 cup sugar
48 pecan halves, toasted

Steps:

  • Place 1-3/4 cups pecans and salt in a food processor; pulse until pecans are finely ground. Transfer to a large bowl. Stir in milk, coconut and pudding mix until blended. Refrigerate, covered, 30 minutes or until mixture is firm enough to roll., Shape mixture into forty-eight 1-in. balls; roll in sugar. Top each with a pecan half, flattening slightly. Store in airtight containers in the refrigerator.

1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup firmly packed light brown sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon double-acting baking powder
1/2 teaspoon salt
about 48 pecan halves

Steps:

  • In a bowl with an electric mixer cream the butter with the brown sugar until the mixture is light and fluffy and beat in the egg and the vanilla. Into the bowl sift together the flour, the baking powder, and the salt, beat the dough until it is firm enough to handle. Halve the dough and on a piece of wax paper form each half into a 6-inch log, using the wax paper as a guide. Chill the logs, wrapped in the wax paper, for at least 4 hours or overnight.
  • Preheat the oven to 350°F. Cut the logs into 1/4-inch-thick slices with a sharp knife, arrange the slices 3 inches apart on lightly buttered baking sheets, and press a pecan half onto each cookie. Bake the cookies in batches in the middle of the oven for 10 to 12 minutes, or until they are golden, and let them cool on the baking sheets for 1 minute. Transfer the cookies to racks and let them cool completely.

1/8 teaspoon salt
1 teaspoon vanilla
1 cup light brown sugar, packed
2 tablespoons margarine or 2 tablespoons butter, melted
1 cup pecan halves
1 9-inch pie shell
whipped cream

Steps:

  • Preheat oven to 400* In medium bowl, beat eggs slightly.
  • Add corn syrup, salt, vanilla, brown sugar and butter; mix well.
  • Stir in nuts.
  • Pour into unbaked pie shell.
  • Bake 15 minutes.
  • Reduce heat to 350* and bake additional 30-35 minutes or until edge of filling seems set.
  • Let cool completely on wire rack.
  • Just before serving, decorate around edge with rosettes of whipped cream.

6 oz butterscotch chips
1/3 c sweetened condensed milk
1/2 tsp vanilla extract
1/2 c pecans, chopped
additional pecans to roll yule log in

Steps:

  • 1. Melt butterscotch chips in the microwave in 10-20 seconds at a time.
  • 2. Stir in milk and vanilla. Stir in pecans.
  • 3. Chill until firm enough to handle. Put butterscotch mixture onto a piece of wax paper (large enough to roll up). Form into a 12" roll on the wax paper.
  • 4. Unroll wax paper. Sprinkle additional pecans on wax paper and roll yule log to embed pecans. Reroll wax paper and refrigerate until well chilled. Cut into 1/4" slices
