1 cup butter, melted
2 cups packed light brown sugar
3 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
½ teaspoon salt
1 ½ teaspoons baking powder
1 cup chopped walnuts
2 teaspoons instant coffee granules
2 tablespoons water
½ cup butter, softened
3 cups sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease an 11x7x2-inch pan.
  • Melt 1 cup butter in a large saucepan. Add 2 cups light brown sugar and beat well to mix. Cool the mixture slightly, then beat in eggs and vanilla.
  • Sift together all-purpose flour, salt and baking powder. Stir it into the wet ingredients, then add the walnuts or pecans (see Cook's Note). Mix well.
  • Spread batter into prepared pan and bake for 30-35 minutes or until a light gold. Cool in the pan for 10 minutes, then turn out of pan and let brownies finish cooling on a rack.
  • To Make Frosting: Dissolve coffee in the water. Cream 1/2 cup butter with confectioner's sugar. Beat it until light. Blend the coffee into sugar mixture and spread frosting over the brownies. When frosting has set, cut brownies into squares. Enjoy!

3 cups firmly packed golden brown sugar
4 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
2 cups chopped pecans, toasted
1 cup unsalted butter
2 cups firmly packed golden brown sugar
4 cups powdered brown sugar
1/3 cup half-and-half
1 tablespoon vanilla extract

Steps:

  • Make the brownies: preheat oven to 350°; line a 13 x 18 inch pan with aluminum foil and grease with butter or cooking spray.
  • Using an electric mixer fitted with paddle attachment, beat 1 cup butter and the 3 cups brown sugar on med-high speed until fluffy, about 2 minutes.
  • Add in the eggs and 1 tablespoon vanilla and continue beating for another minute.
  • In a bowl, stir together the flour, baking powder, and salt.
  • Beat the flour mixture into the butter mixture on low speed until incorporated.
  • Stir in the pecans.
  • Pour into the prepared pan, smoothing the top.
  • Bake until the bars are set and slightly puffed, 25-30 minutes; cool completely before icing.
  • Make the icing: in a saucepan set over medium heat, melt 1 cup butter and 2 cups brown sugar.
  • Once the mixture is lightly bubbling, decrease heat to medium-low and cook, stirring occasionally, for 2 more minutes; set aside.
  • Using an electric mixer fitted with paddle attachment, beat the powdered sugar, half-and-half, and vanilla on medium speed until creamy, about 1 minute.
  • Add the melted butter mixture and beat until combined.
  • Pour over the cooled brownies and spread evenly.
  • Let the brownies sit for about 30 minutes to allow the icing to firm up before cutting into squares.
  • **Left uncut in the pan, the bars will keep at room temperature, covered, for up to 3 days.
  • Cut them the day you'll serve them; once cut, they can be wrapped and frozen for up to 3 weeks.

1/4 cup butter or 1/2 cup margarine
1 cup packed brown sugar
1 teaspoon vanilla
2 tablespoons milk
1 large egg
1 cup all-purpose flour
1/2 cup chopped nuts, if desired
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 350³F.
  • Grease bottom and sides of square pan, 8x8x2 inches, with shortening.
  • Melt butter in 1 1/2 quart saucepan over low heat; remove from heat.
  • Stir in brown sugar, vanilla, milk and egg.
  • Stir in remaining ingredients.
  • Spread in pan.
  • Bake about 25 minutes or until golden brown.
  • Cool 5 minutes in pan on wire rack.
  • For brownies, cut into 4 rows by 4 rows while warm.

1 1/2 cups packed brown sugar
2 large eggs
2 1/2 cups flour
1/2 teaspoon baking powder

1 cup sour cream
1 teaspoon vanilla
2/3 cup walnuts, chopped
4 tablespoons butter
1 cup confectioners' sugar, sifted
1/2 teaspoon vanilla
1 -2 tablespoon hot water

Steps:

  • Cookies.
  • Cream butter.
  • Add sugar and eggs, cream together.
  • Sift flour, baking powder, baking soda, and salt together.
  • Add to sugar mixture with sour cream and vanilla.
  • Blend in nuts.
  • Chill until firm enough to drop onto cookie sheet.
  • Bake 10-15 minutes at 400°.
  • When cool, ice with.
  • Burnt Butter Icing.
  • Melt butter until golden brown.
  • Blend in confedtioner's sugar and vanilla.
  • Stir in 1-2 T hot water until icing spreads smoothly.
  • This amount of icing is enough to frost about 30 cookies.

3/4 cup butter (equals 1 1/2 sticks butter)

Steps:

  • Preheat oven to 350 degrees, or 325 degrees if using pyrex or glass.
  • Melt brown sugar and butter together. Cool mixture for about 5 minutes.
  • Add eggs.
  • Mix flour, baking powder, salt, vanilla and nuts together.
  • Add to other mixture.
  • Mix well.

Remove from heat, cool and beat in the confectioners' sugar. Adjust the milk or confectioners' sugar if necessary to achieve a good spreading consistency. Spread over cooled bars and let set before cutting into squares.
