Number Of Ingredients 15

1/2 cup butter, softened
1-3/4 cups packed brown sugar
2 eggs
1-1/3 cups buttermilk
2-2/3 cups all-purpose flour
1-3/4 teaspoons ground cinnamon
1 teaspoon baking soda
1/8 teaspoon salt
2 cups chopped peeled apples
1 medium apple, peeled and cut into 24 slices
TOPPING:
1/3 cup all-purpose flour
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in the buttermilk. Combine the flour, cinnamon, baking soda and salt; add to butter mixture just until moistened. Fold in chopped apples. , Fill paper-lined muffin cups three-fourths full. Place sliced apples over batter. For topping, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over tops., Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

2 cups all-purpose flour
1 cup sugar
1 package (3.4 ounces) instant butterscotch pudding mix
1 package (3.4 ounces) instant vanilla pudding mix
2 teaspoons baking powder
1 teaspoon salt
1 cup water
4 eggs
3/4 cup canola oil
1 teaspoon vanilla extract
TOPPING:
2/3 cup packed brown sugar
1/2 cup chopped pecans
2 teaspoons ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, pudding mixes, baking powder and salt. Combine the water, eggs, oil and vanilla; stir into the dry ingredients just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Combine the topping ingredients; sprinkle over batter. , Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Adding butterscotch pudding to the mix makes these muffins sweet and tender. Just right for birthday parties, summer picnics, or winter potlucks. I got this out of a library book and want to save it here for use later.

Number Of Ingredients 11

nonstick cooking spray or paper baking cup
2 cups all-purpose flour
2/3 cup sugar
1 (3 ounce) package butterscotch pudding mix (not instant)
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg, at room temperature
1 cup milk (whole, lowfat or nonfat)
4 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla
1 cup butterscotch chips

Steps:

  • Position the rack in the center of the oven and preheat oven to 400°F To prepare the muffin tins, spray the indentions and the rims around them with nonstick spray or line the indentations with paper muffin cups. If using silicon muffin tins, spray as directed, then place them on a baking sheet.
  • Whisk the flour, sugar, pudding mix, baking powder, and salt in a medium bowl until uniform. Set aside.
  • In a large bowl, whisk the egg, milk, melted butter, and vanilla until light and smooth. Stir in the butterscotch chips with a wooden spoon, then quickly stir in the flour mixture until moistened.
  • Fill the prepared tins three quarters full. Use additional greased tins or small, ovensafe, greased ramekins for any leftover batter, or reserve the batter for a second baking. Bake for 20 minutes, or until muffins are well browned with smooth round tops. A toothpick inserted in the center of one muffin should come out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes . Gently tip each muffin to the side to make sure it isn't stuck. If it is, gently rock it back and forth to release it. Remove the muffins from the pan an cool them for 5 minutes more on the rack before serving. If storing or freezing, cool them completely before sealing in an airtight container or freezer safe plastic bags. The muffins will stay fresh for up to 2 days at room temperature or up to 2 months in the freezer.

2 cups old-fashioned oatmeal
1 1/3 cups buttermilk
3/4 cup brown sugar
1/2 cup melted butter, cooled (1/4 pound)
2 eggs, slightly beaten
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butterscotch chips

Steps:

  • In a large bowl, combine oats, buttermilk, and brown sugar. Set aside and let stand for 1 hour.(See note at bottom).
  • Preheat oven to 400 degrees.
  • Spray muffin tins with nonstick cooking spray.
  • Combine melted, cooled butter and eggs. Add to oat mixture.
  • Sift flour,baking powder,salt,and baking soda.
  • Add dry ingredients to oat/egg mixture.
  • Stir to combine.
  • Stir in butterscotch chips.
  • Pour batter into prepared pans.
  • Bake for 15-20 minutes or until tops spring back when touched.
  • Remove from pan and cool a bit before serving.
  • NOTE: I used quick oats in place of the old fashioned. I let it sit for maybe 5 minutes while I sifted the dry ingredients together. The muffins turned out good!

1 teaspoon baking soda
½ teaspoon salt
1 egg
1 cup buttermilk
½ cup butter, melted
1 teaspoon vanilla extract
1 ½ cups packed brown sugar
2 cups diced apples
½ cup packed brown sugar
⅓ cup all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin tin or line with paper muffin cups.
  • In a large bowl, stir together 2 1/4 cups flour, baking soda and salt. In a separate smaller bowl, mix together the egg, buttermilk, 1/2 cup melted butter, vanilla and 1 1/2 cups of brown sugar until sugar has dissolved. Pour into the flour mixture and sprinkle the diced apple into the bowl as well. Stir just until everything is blended. Spoon into the prepared muffin tin, filling the cups to the top.
  • In a small bowl, stir together 1/2 cup of brown sugar, 1/3 cup flour and cinnamon. Drizzle in 2 tablespoons of melted butter while tossing with a fork until well blended. Sprinkle this over the tops of the muffins.
  • Bake for 25 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.
