For the Cake:
2 cups (9 ounces) all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
1/3 cup unsweetened cocoa powder (not Dutch process)
1 cup water
2 large eggs
1/2 cup buttermilk
1 1/2 teaspoons vanilla extract
For the Chocolate Frosting:
1/4 cup (1/2 stick) butter
3 tablespoons unsweetened cocoa powder
1/3 cup buttermilk, or as needed
1 pound (about 3 1/2 cups) confectioners' sugar
1/2 teaspoon vanilla extract
Optional : 1/2 cup chopped pecans

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Grease and flour a 10 x 15-inch rimmed baking sheet ( jelly roll pan ); set aside. In a large mixing bowl, combine flour, granulated sugar, baking soda, and salt; set aside.
  • In a medium saucepan, combine butter, cocoa powder, and water. Bring mixture to a boil, stirring constantly. Remove from the heat.
  • With an electric mixer on medium speed, beat chocolate mixture into dry mixture until thoroughly blended. Add eggs, buttermilk, and vanilla. Beat for 1 minute (batter will be thin). Pour batter into prepared pan.
  • Bake for 22 to 25 minutes or until a wooden pick inserted into center of cake comes out clean.
  • Gather the ingredients.
  • In a medium saucepan over medium heat, combine butter, unsweetened cocoa powder, and buttermilk. Blend well and bring to a boil, stirring constantly. Remove from heat.
  • Sift confectioners' sugar and add to cocoa and buttermilk mixture along with vanilla. Beat until smooth, adding more buttermilk or confectioners' sugar, as needed.
  • If desired, stir coarsely chopped pecans into warm frosting.
  • Pour warm chocolate frosting over warm cake, spreading evenly. Top frosted cake with chopped pecans, if desired.
  • Place cake in pan on a wire rack; cool thoroughly before cutting.

  • Beat in eggs, vanilla, cinnamon, baking soda and buttermilk.
  • Pour into prepared baking pan.
  • Bake for about 20 minutes or until cake tests done.

Buttermilk Texas sheet cake is a vanilla version of the chocolate cake everyone loves! Made tender with the addition of buttermilk, it's an easy dessert for a crowd.

For the Cake:
1 cup unsalted butter
1 cup water
2 cups all-purpose flour
2 cups granulated sugar
1/2 tsp salt
1 tsp ground cinnamon
1 1/2 tsp baking soda
2 eggs
2 tsp vanilla extract
1/2 cup buttermilk
For the Brown Sugar Frosting:
1/2 cup butter
1 cup brown sugar, packed
1/2 cup milk
4-5 cups powdered sugar

Steps:

  • Preheat oven to 350F and grease a 10x15" jellyroll pan.
  • In a small saucepan over medium-high heat, combine butter and water. Bring to a boil, then remove from heat.
  • In the bowl of a stand mixer, whisk together flour, sugar, salt, cinnamon, and baking soda. Add the melted butter mixture and use the paddle attachment to mix just until incorporated.
  • In a separate small mixing bowl, whisk together eggs, vanilla extract, and buttermilk.
  • With the mixer on low speed, add the buttermilk mixture to the bowl of the stand mixer, mixing batter until smooth.
  • Pour batter into prepared pan and bake for 22-27 minutes, until a toothpick inserted in the center comes out clean.
  • Once the cake has cooled for at least an hour, prepare the frosting by combining butter and brown sugar in a saucepan over medium-high heat. Let the mixture boil, stirring frequently, until the sugar dissolves. Remove from heat.
  • Gradually stir in the milk, a little bit at a time, until incorporated.
  • Add 4 cups of powdered sugar to the bowl of a stand mixer fitted with the whisk attachment. With the mixer on low speed, gradually add in the hot mixture of butter, sugar, and milk.
  • Increase speed, mixing until frosting is smooth. If needed, add more powdered sugar, 1/4 cup at a time, until desired consistency is achieved.
  • Pour over cooled cake and let frosting set for a few minutes before cutting and serving.

2 dried guajillo chile peppers, stems removed
2 cups all-purpose flour
1 cup granulated sugar
2/3 cup packed dark brown sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 cup unsweetened cocoa powder
1/2 cup buttermilk
2 large eggs
2 teaspoons pure vanilla extract
1 teaspoon baking soda
1 1/2 cups chopped pecans
1 1/2 sticks (12 tablespoons) unsalted butter
1/2 teaspoon cayenne pepper
Pinch of salt
2 tablespoons unsweetened cocoa powder
3 cups confectioners' sugar
1/3 cup milk

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with foil; butter the foil.
  • Toast the chiles in a dry medium saucepan over medium heat until darkened and pliable, about 5 minutes. Remove from the heat, add 1 cup water and soak until the chiles soften, about 5 more minutes. Transfer the chiles and soaking liquid to a blender and puree. Strain through a fine-mesh sieve back into the saucepan. Finely chop any chile pieces left in the sieve and add to the saucepan.

Stir the cocoa powder into the saucepan and remove from the heat. Whisk in the confectioners' sugar in two batches, alternating with the milk, mixing well after each addition.

This is from "Better Homes and Gardens Complete Book of Baking". There is another BH&G recipe posted but it is different. I haven't made that one but LOVE this one. It's very light & moist. I'd prefer it to brownies or chocolate cake any day. I very strongly recommend that you add the cinnamon. I think that is what makes it so special. This also freezes well, unfrosted. Then thaw several hours at room temperature and frost it.
