BUTTERMILK BRINED PORK CHOPS

Buttermilk Brined Pork Chops image

This simple, easy brine recipe uses buttermilk for the most tender, juicy pork chops. Buttermilk helps tenderize the pork, keep the pork chops moist, and gives them a zesty, flavorful taste.

Provided by Renae

Categories     Main Course     Dinner

Time 25m

Number Of Ingredients 9

1.5 cups buttermilk
2 Tbsp brown sugar, packed
4 Tbsp olive oil, divided
4 cloves garlic, smashed
2 dried bay leaves
2 tsp hot sauce ( (or 1 tsp red pepper flakes + 1 tsp vinegar))
4 bone in, center cut pork chops
Kosher salt (or all purpose seasoning)
ground pepper ((or peppercorns))

Steps:

  • Make the buttermilk brine: Mix buttermilk, brown sugar, 2 Tablespoons olive oil, garlic, bay leaves, and hot sauce together in a large shallow bowl or ziplock bag.
  • Add the pork chops to the brine, ensuring they are completely submerged. If using a bowl, cover it. Refrigerate pork chops in brine for at least 8 hours and up to 24 hours.
  • Remove the pork chops from the brine. Discard the brine. Rinse the pork chops and dry with paper towels.
  • Rub or brush pork chops with 2 tablespoons of olive oil. Season with salt and pepper or all purpose seasoning. Let meat sit at room temperature for 30 minutes.
  • Preheat your skillet (cast iron is perfect for this!) on medium high heat and add 1/4" of cooking oil. Gently add pork chops to the skillet without overcrowding them. If your skillet is too small, fry them in batches.
  • Cook for 4-5 minutes per side. Use a meat thermometer to measure the internal temperature of the meat. Pork chops are done when they reach an internal temperature of 145º
  • Preheat your air fryer to 400º for 5 minutes. Cook pork chops in air fryer at 400 degrees for 5 minutes, then flip and cook for another 5 minutes.
  • Use a meat thermometer to measure the internal temperature of the meat. Pork chops are done when they reach an internal temperature of 145º
  • Preheat the oven to 375º. Place the pork chops in an oven safe dish and bake for 15 minutes.
  • Use a meat thermometer, take the internal temperature of the largest pork chop. Pork is done when it reaches an internal temperature of 145º.To give the pork chops a golden, seared look, place them under a broiler for 2-3 minutes.
  • Preheat grill to medium high heat (about 375º) and lightly brush the grates with vegetable oil. Grill pork chops for 7 minutes per side over direct heat.
  • Use a meat thermometer to take the internal temperature of the largest pork chop. Pork is done when it reaches an internal temperature of 145º.
  • Let pork rest for 5 minutes before serving. Garnish with parsley, if desired.

GRANNY'S BUTTERMILK FRIED PORK CHOPS

Granny's Buttermilk Fried Pork Chops image

These are the tender, slow cooked, melt in your mouth pork chops that your southern grandma used to make. I cut the fattening factor by using "Enova" oil. This is comfort food at its best. I like to cut out the bone of my cooked pork chop then put it between two slices of plain soft white bread..mmmm.. heaven! This isn't actually my grandma's recipe--her recipes died with her, but this is pretty darned close!

Provided by BETHANY T.

Categories     Pork

Time 1h

Yield 4 porkchops, 4 serving(s)

Number Of Ingredients 6

4 center-cut pork chops (standard cut approx 1/2 inch thick)
1/2 cup buttermilk
1 1/2 cups flour
cooking oil
seasoning salt
black pepper

Steps:

  • Sprinkle both sides of pork chops lightly with seasoning salt. I like Garlic & Pepper Seasoning salt, but Lawry's is good, so is Old Bay.
  • Place chops into a ziplock bag and pour in the buttermilk. Squeeze air out of the bag before you close it, and mush it around a little to make sure that all chops are coated with the buttermilk. LeT stand in the fridge for several hours.
  • In a pie plate, mix together flour, 1/8 tsp black pepper, and 1/2 tsp seasoning salt. more or less to your taste.
  • Heat oil in a large heavy frying pan to medium high heat. Oil should reach slightly less than 1/2 inch deep in the pan.
  • Dip buttermilk coated chops in flour mixture making sure that it is completely coated. Repeat with all chops.
  • When oil is hot, add chops and let cook uncovered for about 2 minutes. Turn down heat to medium low and let cook uncovered until bottoms are browned and red juices start to accumulate over the bones.
  • Turn over with tongs, cover pan with a lid, then turn down heat slightly and let cook until browned on the bottoms.
  • Transfer to a sheet of crinkled foil. Wrap foil loosely around chops and let rest for about 5 minutes.

PORK CHOPS IN MILK MARINADE

Pork Chops in Milk Marinade image

Easy recipe for pork chops in milk marinade with lots of garlic and seared in the skillet. Served with vegetable rice.

Provided by Adina

Categories     Meat Recipes

Time 1h

Number Of Ingredients 6

4 pork chops (about 175-200 g/ 6-7 oz each)
5 garlic cloves
3 cups full-fat milk (750 ml/ 25 fl.oz, Note 1)
sweet paprika powder
1 tablespoon all-purpose flour
2 tablespoons vegetable oil

Steps:

  • Generously sprinkle the pork chops with salt. Place them in a shallow, glass casserole dish (like Pyrex, Note 2).
  • Stir marinade: Grate the garlic and mix it with about one cup of milk.
  • Marinade pork: Pour this milk carefully over the pork chops. Pour more milk until the pork chops are completely covered with milk. Cover the dish with plastic foil and place it in the fridge for several hours or overnight.
  • Remove the dish from the refrigerator about one hour before cooking the meat.
  • Prepare chops for cooking: Take them out of the brine and dry them very well with kitchen paper. Coat them lightly with the flour, sprinkle generously with salt, pepper, and sweet paprika powder on both sides.
  • Heat the oil in a skillet or another pan. You should have a thin oil film on the entire bottom of the skillet; two tablespoons were enough for my 12-inch skillet.
  • Cook pork: Add the pork and cook for 3 minutes on one side until golden; turn and continue cooking for another 2 minutes until golden. You might add one minute or so if the chops are on the larger side.
  • Check internal temperature; it should be 145°F/ 63 °C.
  • Rest meat: Transfer pork chops to a warm plate, cover loosely with foil and rest for a few minutes.
  • Serve: Place the meat on serving plates and pour some of the meat juices collected in the platter over the rice and the meat. Serve immediately.

BUTTERMILK PORK CHOPS WITH CORN RELISH

Buttermilk Pork Chops with Corn Relish image

If you're seeking a super-juicy pork chop recipe for the grill, look no further. Tender chops are bathed in a zesty, flavorful buttermilk brine infused with garlic, herbs and spices. Buttermilk tenderizes the pork and keeps it moist on the grill. A simple corn relish adds a summery flourish.

Provided by Food Network Kitchen

Categories     main-dish

Time 4h45m

Yield 6 servings

Number Of Ingredients 14

2 cups buttermilk
3 tablespoons packed light brown sugar
4 tablespoons extra-virgin olive oil
Kosher salt
6 cloves garlic, smashed
6 bay leaves
2 teaspoons hot sauce
12 black peppercorns
1 lemon
6 bone-in center-cut pork loin chops (1 inch thick; about 3 pounds total; see Cook's Note)
Vegetable oil, for brushing
6 ears of corn, husked
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives

Steps:

  • Make the brine: Combine the buttermilk, brown sugar, 2 tablespoons olive oil, 3 tablespoons salt, the garlic, bay leaves, hot sauce and peppercorns in a large bowl. Remove 4 wide strips of lemon zest with a vegetable peeler and add to the brine; squeeze in the juice of half of the lemon. Pierce both sides of the pork chops a few times with a paring knife. Add the pork to the brine, turning to coat. Cover and refrigerate at least 4 hours and up to overnight.
  • Remove the pork chops from the refrigerator 30 minutes before grilling. Preheat a grill to medium high and lightly brush the grates with vegetable oil. Remove the pork from the brine, letting the excess drip off, and transfer to the grill. Cover and cook until marked, about 7 minutes. Flip and continue cooking, uncovered, until the other side is marked, about 7 more minutes.
  • Meanwhile, rub the corn with 1 tablespoon olive oil and season with salt. Wrap each ear in foil and place on the grill. Grill, turning occasionally, until charred, about 10 minutes.
  • Remove the pork from the grill; let rest 5 minutes. Cut the corn kernels from the cobs. Combine the corn, the juice of the remaining 1/2 lemon, the remaining 1 tablespoon olive oil, the parsley and chives in a bowl and toss; season with salt. Serve with the pork chops.

  • Add the buttermilk and Louisiana hot sauce to a zip lock bag. Add the thawed pork chops to the brine and refrigerate for at least 4 hours. An option is to place frozen pork chops in the bag with the buttermilk and hot sauce and place in the refrigerator overnight. They should thaw overnight.
  • Add the beaten eggs to a flat container or large bowl. In a separate flat container or bowl add the flour with salt and pepper.
  • Heat your the oil to medium high in a large skillet. While your oil is heating remove a pork chop at a time and place in the seasoned flour turning to coat both sides pressing down a little for the flour to adhere. Then place in the eggs, letting the excess drip off, then back into the flour pressing down again on both sides. Pressing down helps you form a good coating for frying. Place on a sheet pan and continue until all the pork chops have been battered.
  • When your skillet has heated to about 325 degrees add the number of pork chops that will fit in your skillet without crowding. You want to leave a space between each pork chop. Try to not disturb as much as possible as you will knock the batter off before it can set. When that side has browned, turn and brown the other side. If your pork chops are frying too hot or browning too fast, lower your heat a little. Brown the other side and continue to flip from side to side to insure doneness and the internal temperature reaches 155-160 degrees. Remove from the heat, drain on paper towels. If you have more to fry, place the cooked pork chops in the oven on warm. Serve immediately! Enjoy!
