These dinner rolls, slightly sweet and so very flaky, were my mother's recipe. They are simple to prepare because kneading skills are not required and the dough is easy to handle. My grandchildren have renamed them Grandma's Croissants! -Bernice Smith, Sturgeon Lake, Minnesota

- In a large bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, dissolve yeast in warm water; add to crumb mixture. Add milk and egg; mix well. Cover and refrigerate overnight. , Divide dough into 4 equal portions. On a lightly floured surface, roll 1 portion into a 12-in. circle. Brush with 1 tablespoon melted butter; cut into 12 wedges. , Roll up, beginning with the wide end; place on greased baking sheets. Repeat with remaining dough. Cover and let rise in a warm place until nearly doubled, about 1 hour. , Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks.

Steps:
- 1. Mix together the first four ingredients as for pastry and set aside.
- 2. Set yeast in warm water and sugar, set aside for 10 minutes. Scald milk, cool and add egg. Add yeast to egg and milk and mix. Make a well in the pastry mixture, add the liquid all at once and mix thoroughly. Cover tightly in bowl with waxed paper and damp cloth and refrigerate at least 2 hours, no longer than 48 hrs.
- 3. Remove from fridge, flour board well and roll out paste to rectangle. Cut into 1" wide x 12" long strips (I use a pizza cutter). Twist and make into a circular shape. Place on greased or parchment papered cookie sheet and let rise 1 1/2 hours. Bake 12-15 minutes at 400F. Frost and sprinkle with your choice of nuts or coconut. toasted coconut is my personal favorite.
- 4. We used a very thin frosting of icing sugar and milk.

- In a small saucepan, combine shortening and milk. Heat until shortening is melted; set aside to cool. Dissolve the yeast and 1 teaspoon sugar in the warm water. In a large bowl, beat the eggs, 1/2 cup sugar, and salt together. Add the milk mixture and yeast mixture to the egg mixture, stirring to blend. Sift in the flour and baking powder, and mix well. Preheat oven to 400 degrees F (200 degrees C.)
- Bake rolls for 8 to 10 minutes in the preheated oven, or until golden brown.

BUTTERHORN BREAD MACHINE ROLLS
My daughter's number one favorite food I make are these soft, buttery rolls from "Bread Machine Magic." I have made these a million times and could do it in my sleep. The dough is a cinch to work with and they turn out exactly the same every time. Leftovers are great with jam. This bread dough makes a delicious kid-friendly pizza crust, too. Cooking time does not reflect the rising time. Recipe from "Bread Machine Magic."

Steps:
- Place all ingredients except melted butter in pan.
- Select Dough Only setting and press start.
- When dough has risen long enough, the machine will beep.
- Remove dough from pan.
- Divide dough into 3 equal balls.
- Roll out each ball, one at a time, into a 9 inch circle (don't worry if you can't get it exactly 9 inch).
- (Note: I always start rolling my dough and let it rest for awhile and resume rolling. The resting helps relax the dough).
- With pizza cutter (works great!)or sharp knife, divide each circle into 8 wedges, as if cutting a pizza.
- Starting at the wide end, roll up each wedge toward the point.
- Cover and place in a warm oven (turn oven onto warm setting for 2 minutes and turn off, to make a good environment for dough).
- Let rise for 30 to 40 minutes until doubled.
- Remove sheet from oven to preheat oven!
- Preheat oven to 375 degrees.
- Bake for 12-15 minutes until golden.
- Remove from oven.
- Brush rolls lightly with melted butter.

Steps:
- Crumble yeast into a bowl; add sugar, salt, milk, and eggs.
- Mix well; add half of flour and beat well.
- Add melted butter and remainder of flour.
- Knead until smooth, cover and let rise in a warm place until doubled.
- Divide in half, roll each piece into a circle 1/4 inch thick.
- Butter, if you like and cut each piece into 16 pie shaped pieces.
- Roll each piece, beginning at the wide end towards the tip end, so that the tip is kept at an equal distance from each end of the roll.
- Arrange shaped rolls on a well-greased baking sheet, placing the tip underneath the roll to prevent it from popping up and spoiling the shape of the roll.
- Allow rolls to rise until doubled and bake at 375F for 12 to 15 minutes.
- *To make crescent rolls, curve rolls slightly.
- *To make butterleaf rolls, roll dough into a very think rectangular sheet, brush with melted butter; cut into strips 1 inch wide and pile 6 or 7 together. Cut into 1 1/2 inch pieces and place on end in greased muffin pans. Cover and let rise till doubled and bake as above.

BUTTERHORN DINNER ROLLS
Butterhorn dinner rolls date all the way back to colonial times, but I've streamlined the process to make this recipe easier for new and inexperienced bakers. These classic dinner rolls are light but rich, and slightly sweet. They're perfect for special occasions or holiday dinners, alongside any main course.

- Sprinkle yeast onto warm water. Stir gently and let sit until foamy and frothy, 15 to 20 minutes.
- While the yeast is proofing, place butter in a saucepan with milk and white sugar. Turn heat to medium and cook, stirring occasionally, until butter melts and sugar dissolves, 3 to 4 minutes.
- Remove from the heat and pour into a large mixing bowl; let cool until just very warm to the touch and about 120 degrees F (49 degrees C), 2 to 3 minutes.
- Add 3 cups flour, kosher salt, yeast mixture, and egg; mix gently with a spatula until it all comes together and forms a very thick and wet batter. Add remaining 3/4 cup flour and mix with your fingers, incorporating just the amount of flour you need, until dough comes together into a soft, sticky ball.
- Cover and let rise until almost doubled in size, about 1 hour.
- Transfer dough to a floured surface and knead until smooth and elastic, about 5 minutes.
- Grease the bowl with butter. Place the dough back into the bowl, cover, and let rise for 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
- Transfer dough back to a work surface and press it into a 1-inch thick circle. Flip over and continue pressing until circle is 1/2-inch thick; use a rolling pin if needed to achieve correct thickness. Use a pizza tool to cut dough into 12 equal wedges.
- Starting at the larger end of one wedge, roll toward the point, stretching the ends of the dough out for the first few inches. Pinch and press the point into the dough to seal and place, seam-side down, on the prepared baking sheet. Repeat with remaining dough.
- Let rolls sit until they puff up a little, 15 to 20 minutes.
- Bake in the center of the preheated oven until cooked through and just starting to turn a light golden brown, 20 to 25 minutes.
- Remove from the oven and immediately brush hot rolls with melted butter. Transfer to a wire rack to cool completely, 15 to 20 minutes.

BUTTERHORN ROLLS
These are very soft, buttery rolls that can be shaped into crescent rolls or rolled into 3 smaller balls and placed into muffin tins like hot rolls. Our family likes to make an extra batch of giant crescent rolls so we can make sandwiches the day after Thanksgiving with all of our leftover turkey.

- Stir milk and 3/4 cup butter in heavy medium saucepan over low heat until butter melts. Cool to 120° F if necessary. Combine water and 1/2 teaspoon sugar in small bowl. Sprinkle yeast over; stir to blend. Let stand until foamy, about 5 minutes.
- In large bowl of heavy duty mixer fitted with whisk attachment, beat eggs and 1/2 cup sugar at low speed until blended. Beat in milk mixture. Gradually add 2 1/2 cups flour, beating until smooth. Replace whisk with dough hook. Add yeast mixture, salt and 2 cups flour and beat 8 minutes. Beat in enough flour by spoonfuls to form sticky dough that just begins to pull away from sides of bowl.
- Pour 1 tablespoon butter into large bowl. Scrape in dough; let stand 5 minutes. Using spatula, turn dough over, coating with butter. Cover bowl with plastic wrap, then kitchen towel. Let rise in warm area until doubled, about 1 1/2 hours.
- Punch dough down. Cover with plastic and towel and let rise again in warm area until doubled, about 1 hour. Punch dough down.
- Divide dough into 3 equal portions. Roll out 1 portion on floured surface to 12-inch round. Brush with some of melted butter. Cut into 12 triangles. Starting at wide end, roll up triangles toward point. Repeat rolling, cutting and shaping with remaining 2 dough portions and melted butter. Arrange rolls point side down on 2 ungreased heavy baking sheets, spacing evenly. Cover rolls with clean kitchen towel; let rolls rise until almost doubled, about 45 minutes.
- Position 1 rack in bottom third and 1 rack in top third of oven and preheat to 375°F Brush rolls with melted butter. Bake 15 minutes. Switch top and bottom baking sheets and bake until rolls are golden, about 10 minutes longer. Cool rolls on racks. (can be made ahead. Wrap in foil; store at room temperature 1 day or freeze up to 2 weeks. Rewarm wrapped rolls in 350 F oven about 15 minutes.).

GERMAN BUTTERHORNS
This is a fabulous old recipe...the pastry has yeast in it yet requires no rising or kneading! This recipe is great for bakers who are not yet experts- These butterhorns are shaped like cresents and are beautiful anytime of the year but are extra special to serve during the holidays. I did see this recipe posted on another sight but not here on zaar. This recipe does take a bit of time but it is sooo worth it!!!! Please note that you need to refrigerate the pastry dough for at least 6hrs (I usually do mine overnight to split the work up:)-I did not include this time in the prep time. Please note that this recipe asks that you roll the dough out on a surface sprinkled with powdered sugar-not flour...please make sure you have enough before hand.

- Sift together flour, sugar, salt and yeast. Cut in shortening until dough resembles pie dough. Add egg yolks, vanilla and sour cream. Mix with hands until dough forms a ball. Divide into 5 even balls and refrigerate for 6 hrs or overnight.
- When ready to roll out the dough make the filling by beating the egg whites until stiff. Add sugar and vanilla; beat well. Fold in walnuts.
- Sprinkle bread board with powdered sugar and roll each ball of dough into a 12 inch circle. Cut each circle into 6 pie shaped pieces. Spread with filling and roll up, starting at the wide end.
- Bake at 375 degrees for 15 minutes. Butter horns will be a light golden color when done.
- At this time in a small sauce pan melt the butter for the glaze, remove from heat and stir in powdered sugar and the almond extract -- add a bit more butter or sugar as needed so that you can dip the tops of the butterhorns in the glaze and place on wax paper to set up.

GERMAN BUTTERHORN ROLLS (QUICK RISE)
This is one of the nicest, easy to work with doughs that I use in bread baking. It is extremely forgiving and elastic. The rise time of these quick-rise rolls is about half that of most yeast rolls, making them perfect for last minute needs. As long as you have nice, fresh yeast, they will rise like crazy. Perfect for those just entering bread baking. You can't mess these up.

Steps:
- Place warm water in a glass measuring cup. Add sugar and yeast. Stir well to combine. Set aside for 5-10 minutes until nice and foamy. (See photo)
- While you are waiting for your yeast, add 3 3/4 cups of the flour, 2 TB softened butter and 1 tsp salt to stand mixer mixer bowl. Stir to combine.
- When yeast is foamy, add to flour mixture. Turn on stand mixer, fitted with a dough hook, and mix until combined, scraping sides. Slowly add the remaining 1/4 cup of flour just until the dough pulls away from the sides of the bowl and cleans the sides. I usually use the full 4 cups, but humidity, flour etc. can vary. (See photo)
- Once the dough is in a ball, is cleaning the sides of the mixer bowl and isn't excessively climbing the dough hook, let the mixer knead the dough gently for 4-5 minutes until smooth and elastic. Transfer to buttered bowl, turning over once to coat. Cover with buttered Saran Wrap and allow to rise for approximately 30 minutes in a warm, draft-free place.
- Gently punch the dough down and place on a very lightly floured baking mat. Cut the dough in half. Each half of dough will produce 12 rolls total.Take one half of the dough and gently stretch into a circle, as if you were making pizza dough. When round, using a lightly floured rolling pin, roll gently to produce a uniform thickness.Then cut to form 12 triangles. Roll triangles from large side to small, tucking tip under and bending ends slightly forward. Place on parchment lined baking sheet, allowing enough room to rise and bake. Repeat with rest of dough. When all dough is formed, you will have 24 rolls.
- Once all of the triangles are formed, cover the rolls with buttered Saran Wrap and allow to rise again for 30 minutes. Preheat oven to 375 degrees.
- Remove Saran Wrap and bake for 11-14 minutes until golden. (In my electric oven, they take 13 minutes exactly.) Remove from oven and brush lightly with melted butter. Cool on metal racks.
