Oven Roasted Squab with Piquillo-Black Pepper Sauce with Chickpea Polenta image

3 tablespoons olive oil
1 large onion, coarsely chopped
1 large carrot, peeled and coarsely chopped
2 stalks celery, coarsely chopped
2 cloves garlic, chopped
1 cup red wine
1 cup port
6 cups chicken stock
2 piquillo peppers, diced
1 1/2 teaspoons coarsely cracked black pepper
Salt
2 tablespoons unsalted butter
2 tablespoons olive oil
4 squab (about 1 pound each)
Salt and freshly ground pepper
2 tablespoons olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
1 tablespoon cumin seeds, ground
3 cups water
1 tablespoon salt
1 cup finely ground yellow cornmeal
2 cups cooked chickpeas, drained and pureed
2 tablespoons butter
Salt and freshly ground pepper
1/4 cup chopped parsley

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion, carrot and celery and cook until soft. Add the garlic and cook 1 minute. Increase the heat to high. Add the red wine and port and cook until reduced by three-quarters. Add the stock and cook until reduced to 2 cups. Strain the sauce into a bowl and add the piquillo peppers and, cracked pepper and season with salt.
  • Preheat oven to 450 degrees F. Heat butter and oil in a large saute pan over medium high heat. Season the squab with salt and pepper to taste and place in the pan, breast side down and cook until golden brown. Turn the squab over, place in the oven and roast for 10 to 12 minutes. Remove from the oven and let rest 5 minutes.
  • Heat olive oil in a medium saucepan over medium heat. Add the onions and garlic and cook until soft. Add the cumin and cook for 2 minutes. Increase the heat to high, add the water and 1 tablespoon of salt and bring to a boil. Whisk in the yellow cornmeal, reduce the heat to low and cook for 20 to 25 minutes, stirring with a wooden spoon occasionally until the mixture pulls away from the pan. Add the chickpea puree and cook for 5 minutes. Place the mixture into a buttered 8 by 10 baking dish and refrigerate until firm, about 2 hours. When ready to serve, heat the butter in a large skillet over medium heat. Cut the polenta into 2-inch squares or circles, season with salt and pepper and saute on both sides until golden brown. Garnish with parsley and serve with the squab and pepper sauce.

BRANDADE FRITTERS WITH OVEN ROASTED TOMATO AND PIQUILLO PEPPER SAUCE



Brandade Fritters with Oven Roasted Tomato and Piquillo Pepper Sauce image

1 pound salt cod
1/4 cup olive oil
6 cloves garlic, coarsely chopped
2 shallots, finely sliced
1 cup heavy cream
2 baking potatoes, cooked, riced
Salt and freshly ground pepper
3 cups canola oil
2 cups seasoned all-purpose flour
2 eggs, lightly beaten and seasoned
2 cups Japanese bread crumbs mixed with 1 cup finely chopped almonds
8 plum tomatoes, sliced in half, seeds removed
4 tablespoons olive oil, divided
2 shallots, coarsely chopped
1 cup dry red wine
2 cups clam broth
10 piquillo peppers
2 teaspoons harissa
Salt and freshly ground pepper
1 tablespoon parsley, chopped, plus extra for garnish
1 tablespoon cilantro

Steps:

  • In a large bowl cover the dried cod with cold water and let soak in the refrigerator for 12 to 48 hours (depending on the saltiness of the cod) changing the water frequently. Bring a medium pot of water to a simmer. Remove the salt cod from the soaking water and place in the simmering water. Poach for 8 to10 minutes, let cool in liquid for another 10 to 15 minutes. Remove from poaching liquid, remove any bones and coarsely chop. Heat 2 tablespoons of the olive oil in a medium saute pan over medium-high heat. Add the garlic and shallots to the pan and cook until soft. Remove the garlic and shallots to a plate. Place cream in a small saucepan and bring to a simmer. Place the poached and chopped cod in a food processor, add shallot-garlic mixture and half of the warm cream and process until smooth. Add the riced potatoes, remaining cream and process until just combined. With motor running add the oil. Season with salt and pepper to taste. Assemble: Ladle some of the tomato sauce (see below) into a medium shallow bowl. Place 3 of the fritters (see below) on top and garnish with chopped parsley.
  • Heat oil in a medium saucepan to 360 degrees F. Place a heaping saucespoon of brandade in flour. Coat and place in egg, then in bread crumbs. Fry fritters until the coating is lightly golden brown.
  • Preheat oven to 375 degrees F. Rub tomatoes with 2 tablespoons of oil, place in a baking dish and roast until soft, about 20 to 25 minutes. Heat the remaining oil in a medium saucepan, add the shallots and cook until soft. Add the wine and cook until reduced. Add the clam broth, tomatoes and their juices and peppers. Bring to a simmer and cook for 20 minutes. Place in a food processor or use a burr mixer and puree until smooth. Add the harissa and season with salt and pepper to taste. Finish with herbs.

SOUVLAKI WITH MERGUEZ SAUSAGE AND PIQUILLO PEPPER YOGURT SAUCE

1 cup Greek olive oil
6 cloves garlic, chopped
1 large yellow onion, coarsely chopped
1 tablespoon chopped fresh oregano leaves
3 pounds lamb tenderloin, cut into 1 by 1-inch strips
1 pound merguez sausage
Wooden skewers, soaked in water for 30 minutes
Salt and freshly ground pepper
8 pocket pita breads
Grilled onion, sliced
Grilled red pepper, sliced
Piquillo Pepper Yogurt Sauce, recipe follows
2 cups thick Greek yogurt
4 piquillo peppers, or 2 roasted red peppers
6 cloves garlic, coarsely chopped
2 teaspoons grated lemon zest
2 teaspoons chopped fresh oregano leaves
Salt and freshly ground pepper

Steps:

  • Whisk together the oil, garlic, onion, and oregano in a large bowl. Add the lamb and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or up to 4 hours.
  • Preheat the grill to medium-high. Grill the sausage until golden brown on all sides and just cooked through. Remove the sausage from the grill, let rest for 5 minutes, and then cut into 1-inch pieces.
  • Skewer the lamb and sausage onto the presoaked wooden skewers, and season with salt and pepper. Grill for 2 minutes on each side, or until the lamb is golden brown and cooked to medium-rare doneness. Remove from the grill and let rest until cool enough to touch.
  • Meanwhile, grill the pita on both sides for about 20 seconds to warm through. Slice off 1- inch from the top of each pita. Remove the lamb and sausage from the skewers into the pitas. Add sliced grilled onions and peppers to pitas, and drizzle with the yogurt sauce.
  • Put all ingredients, except salt and pepper, in a blender and blend until smooth. Season, to taste, with salt and pepper. Transfer to a small serving bowl.

GRILLED CORN WITH PIQUILLO PEPPER BUTTER AND GRATED MANCHEGO

2 sticks unsalted butter, slightly softened
4 piquillo peppers, patted dry and chopped
4 cloves garlic, chopped
2 teaspoons chopped fresh thyme
1 teaspoon Spanish paprika
1 teaspoon kosher salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
12 corn ears
1 cup grated Manchego cheese
1/4 cup chopped fresh thyme, for garnish

Steps:

  • For the grilled corn: Pull the husks of the corn enough to remove the silks, without removing the husks from the stem. Re-wrap the corn in the husks and soak in cold water for 15 minutes.
  • For the piquillo pepper butter: Blend the butter, piquillo peppers, garlic, thyme, paprika, salt and pepper in a food processor until smooth. Scrape the butter into a bowl, cover and refrigerate for at least 1 hour and up to 24 hours before using. Soften the butter slightly before using.
  • Heat the grill for direct grilling. Remove the corn from the water, shake and place on the grates of the grill. Cover the grill and cook the corn until tender, about 10 minutes. Remove the corn from the grill, pull the husks back and brush the corn with the piquillo pepper butter. Sprinkle the corn with salt and pepper, Manchego and thyme.

4 (7 ounce) Chilean sea bass fillets
Salt and freshly ground pepper
Olive oil, for sauteing
Potato-Parsnip Brandade, recipe follows
Piquillo Pepper Saffron Sauce, recipe follows
4 cloves garlic, coarsely chopped
1/2 cup olive oil, divided
8 ounces dried salt cod, rehydrated and flaked
3 large potatoes, peeled, cubed and boiled in salted water until soft
3 parsnips, peeled, cubed and boiled in salted water until soft
1/2 cup warm milk
2 tablespoons unsalted butter
Salt and freshly ground black pepper
2 shallots, finely chopped
1 cup white wine
1/2 cup white wine vinegar
Large pinch saffron
2 sticks cold unsalted butter, cut into small pieces
2 piquillo peppers (or 1 roasted red pepper), finely diced
Salt and freshly ground white pepper

Steps:

  • Brush oil on both sides of fish and season with salt and pepper. Heat saute pan over medium high heat. Place the fish skin-side down and saute until golden brown, about 2 to 3 minutes. Turn over and continue cooking for 2 to 3 minutes.
  • Place a large spoonful of brandade onto a warmed dinner plate. Balance one Sauteed sea bass fillet on one side of the brandade. Drizzle the whole plate with the Piquillo Pepper Saffron Sauce.
  • Place garlic and 1/4 cup oil in a small saucepan and slowly heat over medium heat until the garlic turns a light golden brown. Place the garlic and a few tablespoons of the oil in a food processor with the salt cod and process until smooth. Pass the potatoes and parsnips through a food mill into a large bowl. Add the salt cod puree, milk and remaining olive oil and stir until combined. Stir in the butter and season with salt and pepper to taste. Keep warm.
  • Place shallots, wine, vinegar and saffron in a medium non-reactive pot and cook until the liquid is reduced to 1 tablespoon. Slowly begin whisking in the butter until the sauce emulsifies. Season with salt and pepper, to taste, and fold in the piquillo peppers.

EGG AND HAM EMPANADAS WITH PIQUILLO PEPPER SAUCE

4 tablespoons olive oil
1/2 small red onion, chopped
2 cloves garlic, chopped
8 ounces canned or jarred piquillo peppers, drained
Salt and freshly ground black pepper
1 tablespoon red wine vinegar
2 tablespoons creme fraiche or sour cream
Honey, to taste
1/4 cup chopped fresh cilantro leaves
Nonstick spray
4 tablespoons very cold unsalted butter, finely diced
1 cup finely diced leftover baked ham
8 large eggs, whisked until light and fluffy, plus 2 beaten with 2 tablespoons water, for egg wash
2 green onions, green and pale green parts halved lengthwise and thinly sliced crosswise
1/4 cup crumbled soft goat cheese
Kosher salt and freshly ground black pepper
8 prepared empanada wrappers, preferably Goya, thawed if frozen
Flour, for rolling

Steps:

  • For the piquillo pepper sauce: Heat 1 tablespoon of the olive oil in a small skillet over medium-high heat. Add the onions and cook until soft, about 4 minutes. Add the garlic and cook for 30 seconds. Stir in the piquillo peppers, season with salt and pepper and cook for 5 minutes.
  • Transfer the mixture to a blender, and with the blender running, add the remaining 3 tablespoons olive oil and the vinegar and blend until smooth and silky. Add the creme fraiche and a touch of honey and pulse a few times just to incorporate; taste, pulse in a bit more honey if necessary. Transfer to a bowl.
  • For the empanadas: Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper and spray with nonstick spray.
  • Melt 2 tablespoons of the butter in a large nonstick skillet over high heat. Add the ham and cook, stirring occasionally, until golden brown, about 3 minutes; remove to a plate lined with paper towels.
  • Reduce the heat to low. Add the remaining 2 tablespoons butter and melt. Add the 8 whisked eggs and cook, stirring until soft curds barely form, then transfer to a bowl and quickly and gently stir in the green onion, goat cheese, ham and a generous amount of salt and pepper. Transfer to a baking sheet.
  • Roll each empanada wrapper on a lightly floured surface into a 7-inch round. Divide the filling among the wrappers, mounding it in the centers. Brush the edges with some of the egg wash. Fold each wrapper over the filling to create half-moon shapes and seal by pressing the edges together firmly with a fork.
  • Transfer the empanadas to the prepared baking sheet and brush with egg wash. Cut a few small slits in the top of each empanada to create steam vents. Bake until golden, about 10 minutes. Let cool for 10 minutes and serve with the piquillo pepper sauce.
