DAIRY FREE BUTTERCREAM FROSTING
This is a simple frosting that works well on cake , cookies and bars and is free of the top 8 allergens.

Steps:
- In a mixing bowl, beat the margarine until it is smooth and creamy. Gradually add 2 cups of the powdered sugar, scraping the sides of the bowl periodically. Add the milk and vanilla and beat well.
- Gradually add the remaining powdered sugar. Add a small amount of additional milk if needed to get to the right spreading consistency. This will frost 24 cupcakes or two 8 inch layers.
- Variation: to make chocolate frosting, reduce the powdered sugar to 4 1/4 cups and add 3/4 cup unsweetened cocoa powder.

This recipe I adapted because my niece is allergic to milk and whey and this is great for people with all sorts of allergies. Who wouldnt want a princess cake for their birthday and now with this recipe and the one bowl gluten free chocolate cake recipe. She can have her cake and eat it too.

- until well blended.
- Add sugar 1c at a time and beat well; add water at the 2nd and 4th cup.
- Refrigerate for up to 2 weeks or freeze for up to a month.
- This recipe goes good with One bowl Gluten free chocolate cake in a character pan.

- In a stand mixer or a large bowl with a hand mixer, cream the vegan butter until light and fluffy. This should be about 2-3 minutes.
- Sift in 1 cup of powdered sugar at a time, creaming the mixture together between every cup. Start with the lower speed, and increase as the powdered sugar becomes incorporated into the vegan butter. The mixture should be smooth yet thick at this point. You can add in a tablespoon of dairy free milk here to help if the powdered sugar isn’t integrating.
- Add in the remaining tablespoons of dairy free milk, along with the vanilla extract, and cream together again until fluffy and light.
- Apply to your cake, cupcakes, or macarons! This amount of frosting will frost an 8″ cake, or generously frost a 6″ cake, with extra for decorating.
