BUTTER TOFFEE BARS
Steps:
- Heat oven to 325°F.
- Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg yolk; continue beating until well mixed. Add flour; beat at low speed until well mixed.
- Press evenly onto bottom of ungreased 15x10x1-inch baking pan. Bake 22- 25 minutes or until lightly browned. (Bars will be soft.)
- Sprinkle immediately with chocolate chips; let stand 3 minutes. Swirl chips slightly with table knife or back of spoon. Sprinkle with toffee bits.
- Cool 1 hour; cut into bars with sharp knife while slightly warm.

- Preheat oven to 350°. In a shallow baking pan, toast almonds until golden brown, 5-10 minutes, stirring occasionally. Cool. Pulse chocolate in a food processor until finely ground (do not overprocess); transfer to a bowl. Pulse almonds in food processor until coarsely chopped. Sprinkle 1 cup almonds over bottom of a greased 15x10x1-in. pan. Sprinkle with 1 cup chocolate., In a heavy saucepan, combine butter, sugar and water. Cook over medium heat until a candy thermometer reads 290° (soft-crack stage), stirring occasionally., Immediately pour mixture over almonds and chocolate in pan. Sprinkle with remaining chocolate and almonds. Refrigerate until set; break into pieces.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

Steps:
- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

- Preheat oven to 375°.
- Butter a 13x9 baking pan.
- Arrange saltines right side up in a single layer in pan.
- Melt butter and sugar over medium heat.
- Bring to boil, boil 3 minutes stirring occasionally.
- Remove from heat.
- Stir in vanilla.
- Pour over crackers, spread evenly with spatula.
- Bake for 5 minutes, if crackers move, rearrange with a fork.
- Cool for about 10 minutes.
- Sprinkle chocolate morsels over top.
- Let stand about 5 minutes the evenly spread over top.
- Cool completely, then cut in 2x1 inch bars.
- Place a pecan half over each piece.
- Store in refrigerator.

- Preheat oven to 370F (175C); line 9"x13" pyrex baking dish with foil.
- For pastry: In mixer, cream butter; add sugar and lemon peel and beat until light and fluffy; combine flour, salt and cornstarch in small bowl; mix to blend; add to butter and mix just until dough starts coming together; press dough into baking dish, forming 1 inch high edges; pierce all over with fork.
- Bake until starting to colour, piercing with fork if pastry begins to puff during baking, about 40 minutes; remove from oven, maintaining oven temperature.
- For topping: Combine butter, brown sugar and honey in saucepan; whisk over medium-high heat until mixture comes to boil; boil without stirring until mixture thickens and bubbles enlarge, about 1 minute; mix in almonds and hazelnuts; remove from heat and stir in cream; spread topping in crust; bake until caramel bubbles, about 20 minutes.
- Cool in pan, on rack; remove from pan, using foil as aid; cut into 1 1/2 inch squares; keep in an air-tight container.

- Ad flour gradually, stirring only to blend.

I got this recipe from a very dear friend, a lady who prepared meals for their farm hands every day. Quick and easy desserts were a necessity. This is also very good with a lemon cake mix.

- Preheat oven to 350 degrees. Grease a 13x 9 inch baking pan with cooking spray; set aside.
- In a large bowl, with electric mixer, beat peanut butter and softened margarine till creamy. Add brown sugar, granulated sugar and vanilla and mix till thick and creamy. Beat in eggs and then flour. Stir in 1°C of chocolate chips. Put dough into prepared pan and press dough evenly throughout pan. ( I found its easier using my hands to press the dough evenly ).
- Bake 20-25 minutes or until lightly browned. Remove from oven and immediately sprinkle with remaining 1°C of chocolate chips. Let stand 5 minutes . Evenly spread melted chocolate completely over dough, then sprinkle with toffee bits. Cool completely. To serve cut into bars or squares.
