Toffee bars with a shortbread base will melt in your mouth like candy.

Number Of Ingredients 6

1 cup firmly packed brown sugar
1 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg (yolk only)
2 cups all-purpose flour
1/2 cup semi-sweet chocolate chips
1/2 cup milk chocolate English toffee bits *

Steps:

  • Heat oven to 325°F.
  • Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg yolk; continue beating until well mixed. Add flour; beat at low speed until well mixed.
  • Press evenly onto bottom of ungreased 15x10x1-inch baking pan. Bake 22- 25 minutes or until lightly browned. (Bars will be soft.)
  • Sprinkle immediately with chocolate chips; let stand 3 minutes. Swirl chips slightly with table knife or back of spoon. Sprinkle with toffee bits.
  • Cool 1 hour; cut into bars with sharp knife while slightly warm.

I don't live in the country, but I love everything about it-especially good old-fashioned home cooking! Every year, you'll find me at our county fair, entering a different contest. This easy toffee recipe is a family favorite. -Kathy Dorman, Snover, Michigan

2 cups unblanched whole almonds
11 ounces milk chocolate, chopped
1 cup butter, cubed
1 cup sugar
3 tablespoons cold water

Steps:

  • Preheat oven to 350°. In a shallow baking pan, toast almonds until golden brown, 5-10 minutes, stirring occasionally. Cool. Pulse chocolate in a food processor until finely ground (do not overprocess); transfer to a bowl. Pulse almonds in food processor until coarsely chopped. Sprinkle 1 cup almonds over bottom of a greased 15x10x1-in. pan. Sprinkle with 1 cup chocolate., In a heavy saucepan, combine butter, sugar and water. Cook over medium heat until a candy thermometer reads 290° (soft-crack stage), stirring occasionally., Immediately pour mixture over almonds and chocolate in pan. Sprinkle with remaining chocolate and almonds. Refrigerate until set; break into pieces.

My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

1 cup unsalted butter
1 cup light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
8 ounces white chocolate or milk chocolate, chopped into 1-inch squares
3/4 cup walnuts, coarsely chopped
3/4 cup dried cranberries, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
  • Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

1 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1/2 cup english toffee-flavored candy chips or 1 (1 1/2 ounce) english toffee-flavored candy bars, crushed

Steps:

  • Preheat oven to 325 degrees F.
  • Beat sugar and butter in large mixer bowl until creamy; add egg yolk; beat well.
  • Beat in flour.
  • Press evenly on to bottom of un-greased 15 x 10-inch jelly-roll pan.
  • Bake for 22 to 25 minutes or until lightly browned and center is still slightly soft and sprinkle with morsels.
  • Let stand for 3 minutes or until morsels are shiny; spread evenly.
  • Sprinkle with toffee chips.
  • Cool for 1 hour; cut into bars with sharp knife while slightly warm.

24 unsalted saltine crackers
1 cup butter
1 cup firmly packed light brown sugar
1/2 teaspoon vanilla extract
1 (6 ounce) package semisweet chocolate morsels
pecan halves

Steps:

  • Preheat oven to 375°.
  • Butter a 13x9 baking pan.
  • Arrange saltines right side up in a single layer in pan.
  • Melt butter and sugar over medium heat.
  • Bring to boil, boil 3 minutes stirring occasionally.
  • Remove from heat.
  • Stir in vanilla.
  • Pour over crackers, spread evenly with spatula.
  • Bake for 5 minutes, if crackers move, rearrange with a fork.
  • Cool for about 10 minutes.
  • Sprinkle chocolate morsels over top.
  • Let stand about 5 minutes the evenly spread over top.
  • Cool completely, then cut in 2x1 inch bars.
  • Place a pecan half over each piece.
  • Store in refrigerator.

1/3 cup honey
1 1/2 cups toasted blanched almonds
1 1/2 cups toasted skinned hazelnuts
2 1/2 tablespoons whipping cream

Steps:

  • Preheat oven to 370F (175C); line 9"x13" pyrex baking dish with foil.
  • For pastry: In mixer, cream butter; add sugar and lemon peel and beat until light and fluffy; combine flour, salt and cornstarch in small bowl; mix to blend; add to butter and mix just until dough starts coming together; press dough into baking dish, forming 1 inch high edges; pierce all over with fork.
  • Bake until starting to colour, piercing with fork if pastry begins to puff during baking, about 40 minutes; remove from oven, maintaining oven temperature.
  • For topping: Combine butter, brown sugar and honey in saucepan; whisk over medium-high heat until mixture comes to boil; boil without stirring until mixture thickens and bubbles enlarge, about 1 minute; mix in almonds and hazelnuts; remove from heat and stir in cream; spread topping in crust; bake until caramel bubbles, about 20 minutes.
  • Cool in pan, on rack; remove from pan, using foil as aid; cut into 1 1/2 inch squares; keep in an air-tight container.

Steps:

  • Preheat oven to 350°F.
  • Cream butter and sugar until light and fluffy.
  • Mix in egg yolk.
  • Ad flour gradually, stirring only to blend.
  • Add vanilla.
  • Spread about 1/4 inch thick in lightly buttered 10 x 15" jelly-roll pan.
  • Bake for 20 minutes or until golden brown.
  • Remove from oven and while still hot distribute chocolate on top.
  • When chocolate is soft, spread smoothly over surface.
  • Sprinkle with nuts.

1 (18 ounce) box yellow cake mix
3 eggs
1 cup butter, melted
8 ounces cream cheese, softened
16 ounces powdered sugar

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 13 pan.
  • Mix together cake mix, 1 egg and butter. Mixture should be stiff like a dough.
  • Press into greased pan.
  • Mix together cream cheese, 2 eggs and powdered sugar and poured over the dough.
  • Bake at 350 degrees for 40 - 45 minutes.

3/4 cup light brown sugar, firmly packed

1 cup toffee pieces (Heath toffee bits are found in the baking section of supermarkets)

Steps:

  • Preheat oven to 350 degrees. Grease a 13x 9 inch baking pan with cooking spray; set aside.
  • In a large bowl, with electric mixer, beat peanut butter and softened margarine till creamy. Add brown sugar, granulated sugar and vanilla and mix till thick and creamy. Beat in eggs and then flour. Stir in 1°C of chocolate chips. Put dough into prepared pan and press dough evenly throughout pan. ( I found its easier using my hands to press the dough evenly ).
  • Bake 20-25 minutes or until lightly browned. Remove from oven and immediately sprinkle with remaining 1°C of chocolate chips. Let stand 5 minutes . Evenly spread melted chocolate completely over dough, then sprinkle with toffee bits. Cool completely. To serve cut into bars or squares.
