This is a recipe for basic muffins. You can make them as is or add any combination of fruit or even cocoa to make chocolate muffins. You could also just try grating in some orange or lemon zest. The possibilities are endless.

2 cups sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg
1 cup milk
1 teaspoon vanilla
4 tablespoons melted butter or 4 tablespoons margarine

Steps:

  • Melt the butter in a small saucepan or in the microwave on low heat.
  • Sift, measure and then place the flour in a large bowl.
  • Add the baking powder, salt and sugar.
  • Beat the egg well in a small bowl.
  • Add the milk, vanilla and melted butter and mix thoroughly.
  • Put the above wet ingredients into the large bowl of dry ingredients.
  • Stir just until the flour mixture is moistened.
  • Fill greased muffin tins 1/2 to 2/3 full.
  • Bake at 400 F or 200 C for 20-25 minutes.
  • The muffins should be golden brown in colour and spring back when touched.

1/2 cup sugar
1/4 cup baking powder
1-1/2 teaspoons salt
3/4 cup cold butter

2 tablespoons sugar
1 egg
3/4 cup plus 1 tablespoon milk
1/4 teaspoon almond extract
1/4 cup chopped dried apricots
1/4 cup chopped slivered almonds, toasted
ADDITIONAL INGREDIENTS FOR BEEF AND ONION MUFFINS:
1 egg
3/4 cup plus 1 tablespoon milk
1 package (2-1/2 ounces) thinly sliced roast beef, finely chopped
1/4 cup chopped green onions

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in butter until the mixture resembles coarse crumbs. Store in an airtight container in the refrigerator for up to 3 months. Yield: 3 batches (about 7 cups mix). , To prepare Apricot Muffins: Contents of muffin mix may settle during storage. When preparing recipe, spoon mix into measuring cup. 2 medium, ripe bananas
1 large egg
1/2 cup refined coconut oil, warmed and cooled slightly
3/4 cup coconut sugar
1/2 cup creamy unsweetened peanut butter
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1 cup blanched almond flour
1/2 cup oat flour
2 teaspoons baking soda
1/4 cup unsweetened almond milk
1/2 cup semisweet chocolate chips
2 tablespoons creamy unsweetened peanut butter
1 teaspoon refined coconut oil

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners and set aside.
  • For the cupcakes: Place the bananas on a rimmed baking sheet and pierce each banana 3 times with the tip of a knife. Roast, unpeeled, until the skin is completely black and the flesh is soft, about 25 minutes. Allow to cool for 15 minutes.
  • Peel the bananas and place them in a medium bowl. Discard the peels. Mash the bananas with the back of a fork until smooth. Using the fork, stir in the egg, coconut oil, sugar, peanut butter, vanilla and salt. Mix well until smooth and fully incorporated. Add the almond flour, oat flour, baking soda and almond milk. Continue to stir with the fork until the mixture is smooth and all of the ingredients are fully incorporated.
  • Using an ice cream scoop, divide the batter evenly among the 12 muffin cups. Bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool in the tin for 15 minutes before removing the cupcakes to a wire cooling rack to cool completely.
  • For the glaze: In a medium bowl combine the chocolate chips, peanut butter and coconut oil. Place over a double boiler and stir until just a few chocolate chips remain. Remove the bowl from the heat and continue to stir until fully melted. Drizzle the chocolate mixture over the cooled cupcakes. Allow to cool for 1 hour before serving.

1/2 cup dried cranberries
1 1/4 cups whole wheat pastry flour
1/2 cup old-fashioned rolled oats

2/3 cup packed light brown sugar
1/2 cup sunflower butter
3/4 cup milk
2 tablespoons vegetable oil

Steps:

  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Line a 12-cup muffin tin with paper liners, then spray the liners with cooking spray. Put the cranberries in a small bowl, and add hot water to cover (if the cranberries are very moist, you can skip this step).
  • Whisk together the flour, oats, baking powder, salt and baking soda in a medium bowl; whisk in the chocolate chips. Whisk together the brown sugar and sunflower butter in a second medium bowl, then whisk in the milk, oil and egg. Stir the sunflower butter mixture into the flour mixture to combine well (the batter will be pretty loose). Strain the cranberries, pat them dry and stir them into the batter.
  • Ladle 1/3 cup batter into each muffin cup liner. Bake, rotating the pan about halfway through, until a cake tester inserted in a few muffins comes out clean, 16 to 18 minutes.
  • Let cool briefly in the tin on a rack, then transfer the muffins to the rack to cool completely. The muffins can be stored overnight in an airtight container, or individually wrapped in plastic and frozen in an airtight container for up to 4 days.

1 large egg, slightly beaten

Steps:

  • Preheat oven to 400°F.
  • Combine all dry ingredients in a medium bowl.
  • In a second medium bowl, mix together milk, egg, oil, and 1/2 cup pumpkin butter.
  • Make a well in the center of your dry ingredients and pour in milk mixture. Stir together till just moistened. Batter will be slightly lumpy.
  • Fill greased or paper lined muffin tin with half the batter-a little over a tablespoon in each cup. Then top that with a teaspoon of pumpkin butter, then spoon the rest of the batter on top of that, so that the pumpkin butter is in the center.
  • Stir together topping ingredients and sprinkle heavily over muffins.
  • Bake them for 15-18 minutes or until a toothpick through the center comes out clean.
  • Allow to cool for a few minute before removing from pan and place on a wire rack to cool.

2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
250g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
  • Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
  • Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
  • Stir in 100g chocolate chips or dried fruit if using.
  • Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  • Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

1 very ripe banana, mashed
3/4 cup milk
1 egg
1/2 teaspoon cinnamon
1/4 cup packed light brown sugar
2 tablespoons butter
1 cup unsalted dry roasted peanuts, chopped

Steps:

  • Preheat oven to 400°F
  • For the muffins, stir the flour with the baking powder, cinnamon and salt until well blended and set aside.
  • In a separate bowl, beat the peanut butter with the oil, sugar and banana. Add in the milk and egg and beat until smooth.
  • Pour this mixture into the center of the dry ingredients in the first bowl and stir with a large spoon until just moistened. Don't overmix!
  • Line muffin tins with paper or foil liners and fill the cups 2/3rds full with batter. (Or just spray the muffin tins very well with cooking spray so the muffins don't stick).
  • For the topping, stir the cinnamon into the sugar. Using a pastry blender or two knives, cut the butter into the sugar until the mixture is crumbly. Lightly stir in the peanuts; set aside.
  • Sprinkle the topping evenly over each batter-filled cup.
  • Bake for 18 to 20 minutes or until the muffins spring back lightly if pressed in center.

2 teaspoons baking powder
1/2 teaspoon salt

2 tablespoons sanding sugar (optional)

Steps:

  • Preheat oven to 375 degrees, with rack in lower third. Butter and flour a standard 12-cup muffin pan, tapping out excess. Set aside.
  • In a small bowl, whisk together butter, eggs, milk, and vanilla; set aside. In a large bowl, whisk together dry ingredients; make a well in the center. Add egg mixture to well. A real kid pleaser and a healthy snack, this moist muffin is perfect for peanut butter fans. I made this for my friend who is a diabetic. Instead of 2 cups all purpose flour, I used 2 cups whole wheat pastry flour and for the brown sugar I used 1/2 cup brown splenda (sugar replacement).

2 cups all-purpose flour
1/2 cup lightly packed brown sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup peanut butter
2 tablespoons vegetable oil
2 eggs
3/4 cup milk
2 ripe bananas, mashed

Steps:

  • Preheat the oven to 375°F.
  • In a large bowl, mix together the flour, brown sugar, baking powder and salt.
  • In a separate bowl, beat together the peanut butter, oil, eggs, milk and bananas.
  • Stir the wet ingredients into the dry ingredients just until moistened.
  • Spoon the batter into 12 well greased muffin cups. Bake for 20 to 25 minutes, or until a toothpick inserted in the centre of a muffin comes out clean. Makes 12 muffins.
