While the recipe consists of only a few ingredients that need just 15 minutes to come together, this dish has an impressive, rich flavor. Steps:

  • In a medium pot over medium heat, combine butter, water and garlic. Season with salt and pepper. bring to a simmer and melt butter.
  • Add shrimp and cook for about 15 minutes, or until shrimp turn pink. Add scallions. Season with salt and pepper.
  • Serve with grilled bread or over pasta.

12 large Shrimp (Peeled and Cleaned)
0.5 cup Water
3 tablespoons Butter
3 tablespoons Fresh Basil
0.5 teaspoon Cayenne Pepper
0.5 teaspoon Paprika
0.5 teaspoon Garlic Powder
1 pinch of Salt and pepper

Steps:

  • In a sauce pan on medium heat add water and butter. Allow the butter to completely melt (about 2 minutes). Add basil, cayenne pepper, salt, pepper, paprika and garlic powder. Cook on medium heat for about 2-3 minutes stirring slowly so that the butter is infused with the flavors. Lower the heat to low. Add shrimp and stir slowly until shrimp turns a nice coral color and the tails curl. (3 minutes with extra large shrimp, max 4-5 minutes.) Be careful not to over cook the shrimp or it will become rubbery.

2 pounds fresh shrimp, peeled and deveined (tails left on)
2 tablespoons hot sauce
1 teaspoon kosher salt, divided
½ teaspoon ground black pepper
3 tablespoons water
2 cups unsalted butter, cubed
1 lemon, zested
2 bay leaves
1 clove garlic, smashed
¼ cup chopped fresh chives
¼ teaspoon crushed red pepper
Garnish: chopped fresh chives, crushed red pepper

Steps:

  • In a large bowl, stir together shrimp, hot sauce, ½ teaspoon salt, and pepper. Cover and refrigerate for at least 30 minutes or up to 1 hour.
  • In a large saucepan, bring 3 tablespoons water to a boil over medium-high heat. Reduce heat to low; whisk in butter until smooth. Add zest, bay leaves, garlic, chives, red pepper, and remaining ½ teaspoon salt, stirring until combined. Add shrimp; cook, stirring occasionally, until heated through, about 15 minutes. Discard bay leaves before serving. Garnish with chives and red pepper, if desired.

3 bay leaves
1 handful fresh thyme leaves
1 handful fresh flat-leaf parsley
1/4 cup seafood seasoning (recommended: Old Bay or Zatarains shrimp boil)
2 pounds jumbo shrimp, with shells, heads, and tails on
Bloody Mary Cocktail Sauce, recipe follows
4 ripe tomatoes, coarsely chopped
2 celery stalks, coarsely chopped
1 medium onion, coarsely chopped
1/2 cup ketchup
2 tablespoons grated fresh or prepared horseradish
1 lemon, juiced
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
1 shot pepper vodka
1 teaspoon celery seed
Sea salt and freshly ground black pepper

Steps:

  • Fill a large pot with about a 1/2 gallon of water, add the salt and squeeze in the lemon juice; toss the halves in there too for extra flavor. Add the herbs and seafood seasoning. Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
  • Reduce heat to medium-low and add shrimp. Simmer, uncovered, for 5 minutes or until the shrimp are bright pink and the tails curl. Using a slotted spoon, remove the shrimp from the poaching liquid and chill thoroughly before peeling. Serve with lemon wedges and Bloody Mary Cocktail Sauce as part of a raw shellfish bar.
  • Combine the tomatoes, celery, and onion in a blender and puree to break the vegetables down. Add the remaining ingredients and puree until smooth. Chill before serving with a raw bar.

½ lb shrimp

1 shallot
1 cup orzo
2 cups chicken stock

4 cups spinach
fresh parsley, for garnish

Steps:

  • Over low heat, add water to your saucepan and slowly incorporate the butter, a few tablespoons at a time. Whisk together to make sure the water and butter combine and doesn't separate.
  • Add the lemon zest and sprig of thyme and give it a stir. Add the shrimp and poach for eight to 10 minutes. Remove shrimp and set aside. Discard the sprig of thyme.
  • In the same saucepan and over low heat, add garlic, shallots and the orzo. Salt and pepper to taste. Stir until all the liquid has been absorbed.
  • Pour in the chicken stock and cook until the orzo is al dente. Stir occasionally to make sure nothing is sticking to the bottom of the saucepan.
  • Once the orzo is al dente, add the spinach. Stir in until just wilted. Remove from heat.
  • Serve the spinach and orzo, place a few shrimps on top and garnish with chopped parsley.

1 (12 ounce) bottle beer
2 teaspoons kosher salt
2 lemons, halved
3 bay leaves
fresh thyme sprig
1 head garlic, split horizontally
1 tablespoon Old Bay Seasoning
2 lbs large shrimp, uncooked, with shells and tails
lemon wedge, for serving

Steps:

  • Fill a large pot with about 2 qts. water.
  • Crack open the beer and pour it in the pot.
  • Add salt and squeeze in lemon juice; toss the halves in, too.
  • Add herbs, garlic and Old Bay.
  • Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
  • Now reduce heat to medium-low and put shrimp in the mixture.
  • Simmer, uncovered, for 2 to 3 minutes or until shrimp are bright pink.
  • Drain and transfer to a bowl.
  • Chill thoroughly, then peel.
  • Serve with lemon wedges and coctail sauce.
  • NOTE: I used peeled, uncooked shrimp for this and it turned out just fine.
  • Cocktail Sauce:.
  • Mix 1/2 cup ketchup, 1/4 cup grated fresh or prepared horseradish, 1 teaspoon minced garlic and a few drops of hot pepper sauce.
