SPICY ASIAN SESAME MIXED NUTS WITH CORN NUTS



Spicy Asian Sesame Mixed Nuts with Corn Nuts image

A mix of corn nuts, cashews, macadamia, pecans and walnuts is tossed with a sesame, soy and ginger glaze and baked until toasted.

2 tablespoons white sesame seeds
1 tablespoon toasted sesame oil
2 teaspoons low-sodium soy sauce
1 1/2 teaspoons peeled and finely grated fresh ginger
1 teaspoon five-spice powder
1 teaspoon crushed red pepper flakes
Kosher salt
Vegetable oil, for oiling the baking sheet
1 large egg white
1 1/2 cups corn nuts
1 cup unsalted raw cashews
1 cup unsalted raw macadamia nuts
1 cup unsalted raw pecans
1 cup unsalted raw walnuts

Steps:

  • For the Asian Sesame Spice Blend: Mix together the sesame seeds, sesame oil, soy sauce, ginger, five-spice powder, red pepper flakes and 1 1/2 teaspoons salt in a small bowl and set aside.
  • For the nuts: Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
  • Put the egg white in a large bowl and whisk until frothy. Add the corn nuts, cashews, macadamias, pecans and walnuts and toss to coat in the egg white. Add the spice blend and toss to coat again.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.

1/2 cup pecans* (See Cook's Note)
1/2 cup almonds* (See Cook's Note)
1/3 cup pistachios* (See Cook's Note)
1/3 cup cashews* (See Cook's Note)
1/3 cup pumpkin seeds* (See Cook's Note)
1 tablespoon maple syrup
1/2 teaspoon curry powder
1/8 teaspoon cayenne (or more to taste)
1/2 teaspoon dried rosemary
1/4 teaspoon salt
Nonstick cooking spray

Steps:

  • Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

1 cup peeled whole almonds, available in bulk foods section of market
1 cup whole hazelnuts, available in bulk foods sections of market
2 tablespoons sesame seeds
2 tablespoons butter
2 teaspoons five- spice powder (ground star anise, Szechuan peppercorn, cinnamon, cloves, fennel seed), available on spice aisle
1 tablespoon hot sauce
1 cup smoked almonds, such as Diamond brand, available on snack aisle

Steps:

  • Preheat oven or toaster oven to 400 degrees F. Roast peeled almonds and hazelnuts about 7 to 8 minutes; your nose will know when they're done.
  • Toast sesame seeds over medium heat in a small skillet 2 minutes, remove and reserve. Add butter and melt it. Add the five-spice powder, hot sauce. Add roasted nuts, smoked nuts and toss to coat in butter. Add sesame seeds and toss with nuts, transfer to a small bowl and serve warm.

1 1/2 tablespoons peanut oil
3 tablespoons honey
1 teaspoon cayenne
1/4 teaspoon ground cumin
1/4 teaspoon curry powder
2 cups unsalted almonds or 2 cups unsalted cashews
1 cup unsweetened coconut, shredded, toasted
coarse sea salt

Steps:

  • Heat a large frying pan to medium and add the oil.
  • Stir in the honey and cayenne, cumin and curry powder.
  • Once the oil and honey are combined, add the nuts and stir until all the nuts are evenly coated.
  • Add the toasted coconut and gently stir until the nuts are evenly coated with coconut.
  • Season with coarse sea salt to taste. Immediately transfer nuts to a large non-stick baking sheet and spread them out to cool.
  • Transfer to a bowl and serve.

3/4 cup sugar
3 tablespoons water
1 egg white, lightly beaten
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon allspice
1/4 teaspoon nutmeg
2 cups pecan halves
1 1/2 cups whole almonds

Steps:

  • Preheat oven to 250 degrees.
  • In a large bowl, mix together everything but nuts.
  • Add the nuts and stir until coated well.
  • Spread evenly onto a greased cookie sheet or baking pan.
  • Bake for 45 minutes, stirring every 15 minutes or so.
  • Spread out on waxed paper to cool.

2 tbsp honey

Steps:

  • Heat oven to 140C/120C fan/gas 1. Mix the oil with the spices, then stir in the nuts and drizzle over half the honey. Spread over a baking sheet and cook for 10 mins.
  • Remove from the oven and drizzle over the remaining honey, then return to the oven and cook for a further 10 mins. Allow to cool completely.
