PERFECT BEEF BURGERS

- Sprinkle the ground beef evenly with 1/2 teaspoon salt in a large bowl. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
- Preheat a grill to high. Season the patties with salt and pepper. Grill, undisturbed, until marked on the bottom, 3 to 5 minutes. Turn and grill until the other side is marked and the patties feel firm, 3 to 5 more minutes; if desired, top each burger with 2 slices cheese during the last 2 minutes of cooking and cover with a disposable aluminum pan to melt.
- Serve the patties on the buns; top with lettuce and tomato.

- Tip 500g beef mince into a bowl with 1 small diced onion and 1 egg, then mix.
- Divide the mixture into four. Lightly wet your hands. Carefully roll the mixture into balls, each about the size of a tennis ball.
- Set in the palm of your hand and gently squeeze down to flatten into patties about 3cm thick. Make sure all the burgers are the same thickness so that they will cook evenly.
- Put on a plate, cover with cling film and leave in the fridge to firm up for at least 30 mins.
- Heat the barbecue to medium hot (there will be white ash over the red hot coals - about 40 mins after lighting). Lightly brush one side of each burger with vegetable oil.
- Place the burgers, oil-side down, on the barbecue. Cook for 5 mins until the meat is lightly charred. Don't move them around or they may stick.
- Oil the other side, then turn over using tongs. Don't press down on the meat, as that will squeeze out the juices.
- Cook for 5 mins more for medium. If you like your burgers pink in the middle, cook 1 min less each side. For well done, cook 1 min more.
- Take the burgers off the barbecue. Leave to rest on a plate so that all the juices can settle inside.
- Slice four burger buns in half. Place, cut-side down, on the barbecue rack and toast for 1 min until they are lightly charred. Place a burger inside each bun, then top with your choice of accompaniment.

- In a large stock pot over medium/high heat, heat the oil and add the beef pieces. Sprinkle the flour over the beef. Brown the meat on all sides.
- Pour in broth and red wine. Sprinkle in salt, marjoram, thyme and black pepper.
- Bring to a boil. Cover, and reduce heat. Simmer for 1 1/2 hours or until beef is tender, stirring occasionally.
- Add mushrooms and onions to the pot. Liquid should just cover everything. If necessary, add some more wine to cover. Cook until onions are limp.

HOMEMADE BRIE BURGERS

- Remove the mince from the fridge 30 mins before cooking to reach room temperature. Put the mince in a bowl and mix in 1 tsp sea salt, pepper, the grated onion and Worcestershire sauce. Mix well with your (clean) hands, then divide into 4 equal-size balls. Wrap a basil leaf around each slice of brie and press into the middle along with the tomato and re-shape the meat to a flat patty, 11⁄2cm thick.
- Heat the grill for 5 mins. Fit the grill rack to its highest level. Lay the burgers evenly over the rack so they are under the hottest parts of the grill. Brush with oil from the sundried tomatoes and season.
- Grill the first side 3 mins for medium-rare or 5 mins for well done. Brush the other side with oil, season and grill for the same length of time. Allow to stand for 3 mins before serving. Pack into a crusty bun with salad leaves, cornichons, tomatoes and relish.

BURGUNDIAN BEEF AND BEANS

- Trim the beef and cut into 2cm (3/4 inch) cubes.
- Heat half the oil in a heavy saucepan and brown the meat quickly in batches. Remove to a plate.
- Add the remaining oil with the onion, garlic and bacon and cook gently until the onion is soft.
- Add the carrot, celery, wine and tomato paste.
- Return the beef to the pan along with the bouquet garni.
- Season with a little salt and pepper to taste, cover and cook for 1 1/4 hours or until the meat is just tender.
- Drain the beans and add to the pan.
- Cover and simmer for 20 minutes.
- Serve with a nice crusty bread.

- Heat 1 tbsp of the oil in a large frying pan over a low heat. Add the onion and garlic and cook for 5 minutes to soften, then transfer to a large bowl using a slotted spoon. Increase the heat, add the bacon and fry until starting to crisp. Add to the onion and allow to cool.
- Add the beef mince to the bowl, together with the parsley, mustard, some seasoning and enough egg to bind. With damp hands, form the mixture into 4 burgers, place on a plate lined with baking paper, then chill in the fridge for 15 minutes.
