BUñUELOS (AN AUTHENTIC MEXICAN RECIPE)

Mexican Buñuelos are made of thin fried dough sprinkled with cinnamon and sugar. Serve with a cup of warm syrup for dipping for a fun treat the entire family will enjoy!

2 cups all purpose flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¾ cup warm water
2 tablespoon avocado oil (or vegetable oil)
½ cup all purpose flour ((for rolling out dough))
vegetable oil (for frying)
½ cup sugar
1 tablespoon ground cinnamon
3 cups warm water
1 piloncillo cone (dark brown)
1 cinnamon stick
1 clove
1 teaspoon vanilla

Steps:

  • In the bowl of a stand mixer, with a dough hook attachment, add the flour, sugar, baking powder, salt, and cinnamon. Mix together.
  • Pour the oil into the warm water, then pour this into the dry ingredients.
  • Mix together with the dough hook for 3-4 minutes until the dough has formed into a ball.
  • Prepare a clean work surface, sprinkle with a small amount of flour, remove the dough from the bowl, and place in the flour. Continue to knead the dough for 1-2 minutes until dough is soft and no longer sticky. Add flour as needed in small amounts to achieve this.
  • Cover the dough and let sit 30 mins. (I always just place a small bowl over the dough while it's on the counter.)
  • Divide dough into smaller portions about 40-45 grams each, then pinch and roll the dough into small ball shapes. This will make about 13 dough balls. Cover with a clean towel, let sit for 20 minutes.
  • Preheat oil to 350-375℉ while dough is resting.
  • Prepare the Piloncillo Syrup (instructions below).
  • Pour the extra 1/2 cup of flour for rolling dough into a small bowl and set aside.
  • Prepare Cinnamon Sugar by combining the cinnamon and sugar in a small bowl. Set aside.
  • After letting the dough rest, working one dough ball at a time, dip the dough into the flour, coating all over. Using your fingers, flatten the dough ball out and gently press the dough out into a circle shape. Then roll into a 6 inch circle using a rolling pin. It should be fairly thin, this will help it fry easier without puffing up.
  • Place one dough circle into the oil, and gently press down into the oil using a metal spatula, or tongs, to help prevent large bubbles from forming in the bunuelos. Small bubbles are expected, but don't allow the entire top to bubble up in one bubble. Continue frying for about 1-2 minutes, once the bottom is crisp and golden, flip and continue to fry the other side. Will be crisp and golden when done.
  • Remove the Bunuelos from the oil, place on a large baking sheet lined with a wire cooling rack. Sprinkle with cinnamon sugar while still hot. Be careful not to burn your fingers flipping it over to get both sides.
  • Serve warm with a cup of piloncillo syrup on the side for dipping. OR you can pour the piloncillo syrup over the top.

2 teaspoons ground cinnamon
1 four-ounce package 8-inch flour tortillas
4 tablespoons unsalted butter, melted
Vanilla ice cream, for serving

Steps:

  • Heat oven to 350 degrees. In a small bowl, combine sugar and cinnamon; set aside. Cut tortillas into 2 1/2-inch-wide strips. Lay strips in a single layer on a baking sheet, brush with melted butter, and sprinkle with sugar mixture. Bake until golden, 10 to 15 minutes. Repeat with remaining tortillas. Serve with vanilla ice cream.

CAJETA DESSERT SAUCE

This traditional sauce, made from caramelized sugar and milk, can be served by itself or over ice cream or fruit, as we did in our Bunuelos with Vanilla Ice Cream and Cactus Berries.

2 cups sugar
1/2 teaspoon salt
1 tablespoon fresh lemon juice
1/2 cup goat's milk or heavy cream

Steps:

  • Combine sugar, salt, lemon juice, and 1 tablespoon water in wide, heavy-bottomed saucepan over medium-low heat. Cover saucepan and cook, checking occasionally until sugar melts and turns amber, 10 to 12 minutes. Do not overcook or sugar will burn.
  • Remove from heat and slowly whisk in goat's milk. Let cool completely. Drizzle cajeta sauce over ice cream and serve, or store covered in refrigerator up to 1 week.

1 1/4 pounds cactus berries or 1 1/2 pints raspberries
4 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1/4 cup vegetable oil plus 3 quarts for frying
1 cup hot water
1/2 cup sugar
1 tablespoon cinnamon
2 pints vanilla ice cream
Cajeta Sauce

Steps:

  • Cut away skin of cactus berries. Slice half the cactus berries into 1/2-inch pieces (if using raspberries, leave whole); puree remaining berries; toss puree with reserved berries. Cover and set aside.
  • Sift together flour, salt, and baking powder. Add 1/4 cup oil and just enough hot water to bring dough together, kneading until smooth and silky. Cover with plastic wrap.
  • Slowly heat frying oil in heavy saucepan or Dutch oven to 365 degrees. Thoroughly combine sugar and cinnamon.
  • Meanwhile, divide dough into 12 2-inch balls. Roll out each on a lightly floured work surface into a 7-inch round. Keep dough you're not working with covered.
  • Carefully drop rolled dough one piece at a time into oil. Dough should sink to bottom of the pan, then float to surface. Using tongs, gently press down on center of dough, about 20 seconds, to create concave shape; fry until crisp and lightly golden, 2 to 3 minutes. Lift bunuelo from oil with tongs, allowing oil to drip back into saucepan.
  • Transfer bunuelos to a baking sheet lined with several paper towels. Sprinkle liberally with cinnamon sugar.
  • To serve, scoop ice cream on bunuelos. Top with cajeta sauce and cactus berries.

6 (8-inch) flour tortillas, whole or cut into shapes

Steps:

  • On a plate, mix the sugar and cinnamon. In a medium, heavy-bottomed saucepan, add enough oil to come halfway up the sides of the pan. Heat over medium-high heat until a deep frying thermometer, inserted in the oil, reaches 350 degrees F. (If you do not have a thermometer, test the oil with a piece of tortilla, which should sizzle when it touches the oil and should brown in about 2 to 3 minutes.) One by one, fry tortillas until golden brown. With a slotted spoon, transfer the crisps to paper towels to drain. While still warm, transfer to cinnamon-sugar mixture, turn to coat and serve.
