BEEF AND BULGUR PATTIES



Beef and Bulgur Patties image

These clever patties are bulked up with cracked bulgur wheat so you only have to buy half a pound of ground beef. Don't forget to save room for the cucumber and pomegranate side salad.

1/3 cup cracked, medium grain bulgur
Kosher salt
1 1/2 cups boiling water
1/4 cup olive oil
1/2 medium onion, finely diced
Freshly ground black pepper
1/2 English cucumber, sliced into half-moons
Warm pita, for serving
1/2 teaspoon ground cumin
Large pinch ground allspice
1/4 cup prepared hummus
1/4 cup plain whole-milk yogurt
1 tablespoon plus 1 teaspoon lemon juice
8 ounces ground beef
6 cups baby spring greens
1/2 cup pomegranate seeds

Steps:

  • Place the bulgur and 1/2 teaspoon salt in a medium bowl and add the boiling water. Soak until tender but slightly chewy, 20 minutes. Strain to remove any excess moisture.
  • Heat a large nonstick skillet with 2 tablespoons of the olive oil over medium heat. Add the onions, 1/4 teaspoon salt and a pinch of black pepper. Cook, stirring, until soft and starting to brown, about 4 minutes. Add the cumin and allspice, and stir until very fragrant and the onions are evenly coated in the spices, about 1 minute. Transfer the onions to a large bowl to cool. Carefully wipe out the skillet to use again later.
  • Mix together the hummus, yogurt, 1 teaspoon of the lemon juice and 1/2 teaspoon salt.
  • Add the bulgur, ground beef, 1 1/4 teaspoons salt and 1/4 teaspoon pepper to the onions. Gently mix together and form 4 patties, each just under 1/2-inch thick.
  • Heat the reserved skillet with 1 tablespoon of the olive oil over medium heat. When the oil starts to shimmer, add the patties, making sure to leave some space between them. Cook until the patties are cooked through, 5 to 6 minutes per side.
  • Toss together the greens, pomegranate seeds, cucumber, the remaining 1 tablespoon lemon juice, the remaining 1 tablespoon olive oil and salt and pepper to taste in a large bowl. Divide the patties and salad among four plates. Serve each with pita and a dollop of the yogurt sauce.

1 small green cabbage
1 cup finely chopped parsley
2 onions, chopped
4 celery ribs, chopped
1/4 teaspoon italian seasoning
1/2 teaspoon minced garlic
2 teaspoons olive oil
tomato sauce
4 cups water
2 cups dry bulgur
1 (8 ounce) can tomato sauce
1/2 cup water

Steps:

  • Remove core from cabbage, place cabbage head in steamer and steam until all leaves are soft and separate easily.
  • Saute parsley, onions, celery, seasoning, and garlic in olive oil until onions are soft.
  • Add 2 15-ounce cans of tomato sauce, 4 cups water and bulgur.
  • Cook about 1/2 hour over medium heat, stirring occasionally, until bulgur is tender.
  • Remove from heat.
  • To stuff cabbage leaves, place a spoonful of mixture in center of each leaf.
  • Starting at one side, roll leaf up and fold ends under.
  • Place in a deep baking pan.
  • Mix the 8-ounce can of tomato sauce with 1/2 cup water and pour over stuffed cabbage leaves so they remain moist during baking.
  • Bake at 375°F for about 30 minutes until cabbage is hot.

Even those who say they HATE cabbage will eat this and like it! I have even made this without the meat- using bulgur and veggie broth. Here is how: Just replace the meat with the same amount of bulgur- (for 1 lb of meat sub 1 cup bulgur) you will want to soak the bulgur according to the instructions on the package- if you bought it in bulk here is how... Bring 2 cups of veggie broth ( can use bouillon and water) per 1 cup bulgur When broth is boiling stir in bulgur. Cover and simmer about 15 minutes or until bulgur is soft. All the broth should be absorbed. Fluff the bulgur with a fork as you would rice and add to your recipe. I have used beef, pork, turkey and chicken with great results too. *See NOTE for freezing, make ahead and left over tips*

1 medium onion
1 garlic clove, minced, more if desired
2 cups cheddar cheese, shredded

Steps:

  • Brown meat, onion and garlic until meat is no longer pink and onion has turned clear.
  • Drain grease from pan and discard.
  • Add cabbage and cover.
  • Cook until cabbage is clear.
  • Add cheese and sour cream mixing well.
  • Pour all into greased casserole and top with bread crumbs.
  • Bake at 375 for 40 minutes.
  • *NOTE: to freeze- make ahead or re-heat left overs: compliments of Chef Marie Alice:* I froze half of this when I originally made it. This freezes excellently and if anything tastes even better after! I reheated it by melting a little butter in a skillet and then crumbling the partially thawed casserole into it, cooking and stirring until it was heated through.

1 large onion, chopped
1 ½ pounds ground beef
1 teaspoon garlic powder
½ teaspoon red pepper flakes
½ teaspoon Italian seasoning
salt and pepper to taste
1 small head cabbage, chopped
2 (14.5 ounce) cans diced tomatoes
1 (14.5 ounce) can tomato sauce

Steps:

  • Heat olive oil in a large heavy pot or a 6-quart Dutch oven over medium heat. Cook and stir onion in hot oil until translucent, about 5 minutes.
  • Break ground beef into small chunks and add to the pot; cook and stir, continuing to break the beef into smaller pieces, until the beef is completely browned, 5 to 7 minutes.
  • Season beef mixture with garlic powder, red pepper flakes, Italian seasoning, and a dash of salt. Stir cabbage, diced tomatoes, and tomato sauce with the beef mixture; bring to a boil, reduce heat to low, and cook mixture at a simmer until cabbage is fork-tender, about 25 minutes. 1 cup bulgur
1 1/2 cups cold water
1 lb lean ground beef
2 medium onions, chopped
1/2 cup fresh cilantro or 1/2 cup parsley, finely chopped
1 tablespoon fresh dill weed, chopped
1/4 teaspoon salt
pepper
4 medium tomatoes, chopped
1/2 cup canned low-sodium V8 juice
2 tablespoons fresh lemon juice

Steps:

  • In a medium bowl, soak bulgur in cold water for 15 to 30 minutes, or until soft. Set aside.
  • meanwhile, heat a heavy non-stick skillet over medium-high heat. Add beef and saute for 4 to 5 minutes or until meat is no longer pink. Drain fat from pan.
  • Add onions to skillet and cook until tender, 3 to 4 minutes.
  • Drain bulgur and add to meat mixture with cilantro, dill weed, salt, pepper, chipped tomatoes, vegetable juice and lemon juice. Stir gently.
  • Place mixture in a 10 x 10 x 2 inch baking dish or oven proof casserole dish.
  • Bake at 350 uncovered for 15 to 20 minutes or until heated thoroughly.
