This is an easy, no-fuss way to enjoy the taste of bulgogi without having to marinate for hours or heat the grill. Served with steamed white rice and cabbage kimchee, it makes a tasty Korean-inspired meal, fast.

1 tablespoon sesame seeds
2 pounds lean ground beef
2 green onions, minced
3 cloves roasted garlic, mashed
¼ cup mirin (Japanese sweet wine)
3 tablespoons soy sauce
2 tablespoons white sugar
1 tablespoon Asian (toasted) sesame oil
1 ½ teaspoons ground black pepper
1 teaspoon salt

Steps:

  • Cook and stir sesame seeds in a small dry skillet over medium-low heat until they are fragrant and toasted, about 2 minutes. Transfer immediately into a small bowl and let cool.
  • Mix ground beef, green onions, roasted garlic, mirin wine, soy sauce, sugar, sesame oil, black pepper, salt, and toasted sesame seeds together in a large bowl until thoroughly combined. Divide the meat mixture into 8 portions and form each portion into a large beef patty about 1/2 inch thick.
  • Pan-fry the burgers in a large skillet over medium-low heat until browned and the meat is no longer pink inside, about 8 minutes per side. An instant-read meat thermometer inserted into the center of the burgers should read at least 145 degrees F (65 degrees F).

1/2 cup light soy sauce
1/4 cup dark soy sauce
1/2 cup water
3 tablespoons finely chopped green onion
3 teaspoons crushed garlic
2 teaspoons finely minced ginger
1/2 teaspoon black pepper
1 tablespoon sugar
2 tablespoons white sesame seeds, toasted and ground
1 tablespoon sesame oil

Steps:

  • MARINADE: Cut meat across the grain into very thin slices and then narrow strips. Combine soy sauce, sesame oil, garlic, ginger, pepper or chili, sesame seeds and green onions. Marinate beef at least 3 hours, refrigerated. Remove beef from the marinade. Cook to desired doneness.

1 teaspoon sugar
3 tablespoons soy sauce
1/2 teaspoon fresh coarse ground black pepper
1 1/2 teaspoons toasted sesame oil
1 tablespoon dry sherry, plus
2 teaspoons dry sherry
2 garlic cloves, minced
4 hamburger buns
slivered scallion

Steps:

  • In a mixing bowl, gently mix the beef, ½ cup of the onion, 1 teaspoon sugar, 1 tablespoon soy sauce, the pepper, 1 teaspoon sesame oil, 1 tablespoon sherry, and half of the garlic.
  • Form mixture into 4 patties, each ¾ inch thick.
  • In a small bowl, mix the remaining onion, 1 tablespoon sugar, 2 tablespoon soy sauce, ½ teaspoon sesame oil, 2 teaspoons sherry, and garlic; set aside for topping.
  • Lightly oil the grill or a skillet over med-high heat.
  • Cook the burgers to the desired degree of doneness, 3-5 minutes per side for medium rare.
  • Serve burgers on toasted and buttered hamburger buns; top with the onion-soy sauce mixture and slivered scallions.

  • In a large bowl, whisk together the soy sauce, grated pear, green onions, garlic, ginger, sesame oil, brown sugar, and red pepper flakes. Stir in the torn bread and allow it to sit for a few minutes to allow the bread to absorb some of the mixture. Add in the ground beef and mix with a spoon or your hands just until well combined (if using your hands, wash them very well before and after handling the meat).
  • When ready to cook, preheat your grill to high. Divide the burger mixture into four equal pieces and form them into patties making sure the centre of the burger is slightly thinner than the outer rim to ensure even cooking.
  • Lightly grease your grill, salt both sides of each patty, and cook the burgers with the lid down until well browned on the first side, about two to four minutes. Give the burgers a flip and cook until grilled all over and fully cooked through to 160ºF.

  • In a large bowl, combine the soy sauce, sesame oil, brown sugar, red pepper flakes, ginger, garlic, and sandwich bread. Stir, then let the mixture sit for a few minutes to allow the bread to soften. Mash the mixture with a fork into a paste (it won't get completely smooth, but try to get it as uniform as possible). Add the beef and scallions. Using your hand, mix until well combined. Divide the mixture into 5 equal portions, shaping each into loose balls. Flatten the balls into 3/4-inch thick patties about 4-1/2 inches around. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
  • Place the patties on a grill rack coated with cooking spray. Grill, covered, until nicely browned on the first side, 2-4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.
