■Fritos (or any other off-brand corn chips, crushed tortilla chips also work as a stand-in)
■Lettuce, shredded or finely chopped
■Tomatoes, chopped (I also sometimes substitute canned tomatoes if I've gotten a great deal on them.)
■Taco Meat (brown ground beef with chopped onions and taco seasoning) mixed with cooked pinto beans
■Shredded cheese (we typically use cheddar)
■Salsa
■Canned black olives (sliced or chopped), optional
■Sour cream, optional
■Guacamole (or chopped avocado), optional

Steps:

  • Set out haystack toppings (we usually keep the taco meat in a crock pot or saucepan on the stove so it stays warm) and let everyone layer their own toppings on their individual plates in the order they prefer. Enjoy!

DELICIOUS! I get requests for the recipe all the time. Good all year. This recipe is different from others because two bags of butterscotch chips are used to give more flavor. My family also enjoys them at Christmas. So, so EASY and QUICK!

2 (11 ounce) bags butterscotch chips
1 (5 ounce) can chow mein noodles
1 1/2 cups peanuts (cocktail)

Steps:

  • Place chow mein noodles in a plastic bag and crush into smaller pieces.
  • Place butterscotch chips in a bowl and microwave for 1 minute and 10 seconds. Remove and stir.
  • Add chow mein noodles and peanuts.
  • Working fast, place a heaping teaspoon of mixture onto wax paper. Let harden and cool. (I use wax paper on a cookie sheet and then place in refrigerator for cooling.) Store in air-tight container.
  • Enjoy!

These are delicious little chocolate treats that are very quick and easy to make. The recipe was given to me many years ago, by a lady friend.

1 (12 ounce) bag of nestle' semi-sweet chocolate chips
1 (12 ounce) bag of nestle' butterscotch chips
1 can la choy chinese noodles
1 can Spanish peanut

Steps:

  • In a non-metallic bowl, combine 1- 12 ounce bag of Nestle' semisweet chocolate chips and 1- 12 ounce bag of Nestle' butterscotch chips.
  • Stir the chips together and microwave on a medium temperature, stopping to mix the chips as they melt together.
  • When completely melted and mixed, add 1 can La Choy Chinese noodles and 1 can Spanish peanuts.
  • Stir together until mixed.
  • Drop spoonfuls of mixture onto a foiled cookie sheet.
  • Let harden.

I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

2 cups butterscotch chips (12 ounces), melted
2 tablespoons peanut butter, plain or crunchy
6 ounces Chinese or chow mein noodles
6 ounces cocktail peanuts

Steps:

  • Melt the butterscotch chips in a double boiler over simmering water.
  • In a medium bowl, combine the melted butterscotch and peanut butter. Add noodles and peanuts and mix well. Drop the batter by the heaped tablespoon onto waxed paper and refrigerate until cool and set, about 20 minutes.

I got this recipe from a message board and thought I would share. Sounds like a neat concept! Preparation time only includes making the matchsticks as other times vary.

4 medium flour tortillas, made into matchsticks to equal 4 cups (see recipe below)
8 cups white rice or 8 cups Spanish rice, cooked
3 cups enchilada sauce
1 (16 ounce) can pinto beans or 1 (16 ounce) can black beans
4 cups chopped cooked chicken or 4 cups ground beef
2 -3 cups grated cheddar cheese
6 cups finely chopped lettuce
6 cups finely chopped mixed vegetables (such as green onion, avocado, tomato, black olives and pepper)

Steps:

  • Place all the ingredients in separate bowls and serve buffet style.
  • Each person assembles their own "haystack" by starting with a layer of matchsticks, and then rice and sauce.
  • Top with remaining ingredients of choice.
  • Tortilla Matchsticks:.
  • With a pizza cutter slice 2 medium flour tortillas into very thin matchstick pieces. Spread on a baking sheet and bake 5 to 6 minutes at 400°F Stir. Return to oven 3 to 5 minutes more. Matchsticks should be crisp and golden brown. Cool. Makes 2 cups.
