Vegetable oil, for brushing
1 cup sour cream
3/4 cup panko breadcrumbs
1 large egg
3 carrots
3 stalks celery plus 1 tablespoon chopped celery leaves
1 pound ground bison or beef
4 scallions, finely chopped
1 tablespoon chopped fresh parsley
1 clove garlic, grated
1/4 teaspoon cayenne pepper
Kosher salt
1 tablespoon unsalted butter
1 cup low-sodium chicken broth
3/4 cup Buffalo hot sauce
1/2 cup ketchup
1/2 cup crumbled blue cheese (2 ounces)

Steps:

  • Preheat the oven to 400 degrees F and lightly brush a baking sheet with vegetable oil. Mix 2 tablespoons sour cream, the panko and egg in a large bowl; let sit 5 minutes.
  • Grate 1 carrot and 1 celery stalk into the bowl with the panko mixture. Add the meat, celery leaves, half of the scallions, the parsley, garlic, cayenne and 1/2 teaspoon salt and mix with your hands until combined. Dampen your hands and shape the mixture into 36 mini meatballs (about 1 inch each); arrange on the prepared baking sheet. Bake until browned and cooked through, about 12 minutes.
  • Meanwhile, melt the butter in a Dutch oven or large pot over medium-high heat. Add the remaining scallions and cook until wilted, 1 minute. Add the chicken broth, hot sauce and ketchup; bring to a boil, then reduce the heat to medium low. Simmer until the sauce thickens slightly, about 8 minutes. Add the meatballs; simmer until tender, about 8 more minutes.
  • Mix the blue cheese and the remaining 3/4 cup plus 2 tablespoons sour cream in a medium bowl. Cut the remaining 2 carrots and 2 celery stalks into sticks. Transfer the meatballs to a bowl and serve with the vegetable sticks and blue cheese dip.

1/3 cup breadcrumbs
2 tablespoons finely diced celery
1 tablespoon hot sauce, such as Frank's Red Hot
1 large egg
1 scallion, finely chopped

Kosher salt and freshly ground black pepper
Crumbled gorgonzola, for serving
5 to 6 stalks celery, cut into sticks, plus celery leaves, for serving
1/2 stick (4 tablespoons) salted butter
3/4 cup hot sauce, such as Frank's Red Hot

Steps:

  • For the meatballs: Preheat the oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper covered with cooking spray.
  • Combine the chicken, breadcrumbs, celery, hot sauce, egg, scallion, garlic and some salt and pepper in a bowl. Gently mix until well combined, being careful not to overmix. Using a tablespoon measure, remove scoops of the mixture, roll into balls and put onto the prepared baking sheet. Bake until cooked through and browned, about 15 minutes.
  • For the sauce. Meanwhile, in a saute pan over medium-low heat, melt the butter with the hot sauce, stirring to combine. Once the meatballs are cooked, add to the sauce and toss to coat well.
  • Transfer the meatballs to a platter. Sprinkle over the gorgonzola and celery leaves. Serve with the celery stalks and leaves on the side, as well as some toothpicks to skewer the meatballs as they are devoured.

6 tablespoons unsalted butter
1/2 cup hot sauce
1 pound ground chicken
3/4 cup breadcrumbs
1/3 cup minced celery
1 egg
1/2 small onion, grated
Kosher salt
Sauce:
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup crumbled blue cheese
2 teaspoons red wine vinegar
Kosher salt and freshly ground black pepper
Celery sticks, for serving

Steps:

  • For the meatballs: Preheat the oven to 400 degrees F. Spray a rimmed baking sheet with cooking spray.
  • Melt the butter in a small saucepan over medium heat. Whisk in the hot sauce, remove from the heat and let cool to room temperature.
  • Combine the chicken, breadcrumbs, celery, egg, onions and 1 teaspoon salt in a large bowl. Add 2/3 cup of the cooled hot sauce mixture (reserve the rest) and mix to combine. Form the chicken mixture into 2-inch meatballs (about 18 total) and place them on the prepared baking sheet.
  • Bake until cooked through, about 20 minutes, brushing the meatballs with the reserved hot sauce mixture during the last 8 minutes.
  • For the sauce: Combine the sour cream, mayonnaise, blue cheese and vinegar in a small bowl. Season with salt and pepper.
  • Serve the meatballs with the sauce and celery sticks.

1 pound ground chicken, preferably dark meat (thighs)
1 medium celery stalk, finely diced (about 1/4 cup)
1/2 medium carrot, finely diced (about 1/4 cup)
2 cloves garlic, minced
2 scallions, 1 finely diced, 1 sliced on the bias for garnish
1/3 cup crumbled blue cheese, plus more for garnish
1/2 cup panko breadcrumbs
1 large egg, beaten
One 12-ounce bottle Buffalo-style wing sauce (not hot sauce)
Kosher salt and freshly ground black pepper
1 tablespoon safflower oil

Steps:

  • Combine the chicken, celery, carrot, garlic, finely diced scallion, blue cheese, panko, egg and 1/3 cup of the wing sauce in a large bowl. Season with salt and pepper. Using your hands, lightly mix everything together, taking care not to overmix.
  • Using a light touch, form the mixture into balls, each about 1 inch in diameter.
  • Heat oil in a large Dutch oven over medium heat. Working in batches, put the meatballs in the Dutch oven in a single layer (don't crowd the pan) and cook until lightly seared and just browned, about 2 minutes per side. (The meatballs will not be cooked through at this point, they will finish cooking in the sauce.) Transfer meatballs to a plate as they cook.
  • Wipe out the Dutch oven, then return the meatballs to the pot. Add the remainder of the bottle of wing sauce (about 9 ounces) to the pot. Simmer over low heat, covered, until the meatballs are cooked through, about 30 to 60 minutes.
  • Spoon the meatballs into a serving dish, top with warm sauce and garnish with blue cheese and the sliced scallions. Serve immediately.

1 pound ground turkey
1 cup panko
1 large egg
1/4 cup grated onion (from about 1/2 medium onion)
3/4 cup Buffalo sauce, such as Frank's RedHot
1/4 cup crumbled blue cheese
1 teaspoon garlic powder
Kosher salt and freshly ground pepper
2 tablespoons hot honey
2 tablespoons unsalted butter
2 scallions, thinly sliced
2 stalks celery, cut into small sticks

Steps:

  • Preheat the broiler. Lightly coat a baking sheet with cooking spray and set aside. In a large bowl, combine the turkey, panko, egg, grated onion, 1/4 cup Buffalo sauce, the blue cheese, garlic powder, 3/4 teaspoon salt and a few grinds of pepper. Mix with your hands until just evenly combined, being careful not to overwork the meat. Roll the mixture into 1 1/2-inch balls (28 to 30 meatballs). Place on the baking sheet and broil until browned in spots and cooked through, about 10 minutes.
  • Meanwhile, combine the remaining 1/2 cup Buffalo sauce, the hot honey and butter in a small saucepan over medium heat. Bring to a simmer, swirling the pot, until the butter is melted and combined. Continue cooking until slightly thickened and glossy, 2 to 3 more minutes.
  • Transfer the meatballs and sauce to a large bowl and toss to coat. Remove the meatballs to a platter and spoon any remaining sauce on top. Top with the scallions and serve with the celery.

2 ounces blue cheese, coarsely crumbled
1 cup whole buttermilk
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons lemon juice
1 teaspoon garlic powder

2 stalks celery
1/2 small onion
1/2 green bell pepper
2 pounds ground chicken (not chicken breast)
1 cup dry breadcrumbs
2 large eggs
2 teaspoons Miss Brown's House Seasoning (see recipe below)
1/2 cup (1 stick) unsalted butter
1/4 cup hot sauce
2 teaspoons Worcestershire sauce
Celery sticks
Chopped fresh flat-leaf parsley, for garnish
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon freshly ground black pepper
1 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F. Coat two large, rimmed baking sheets with nonstick cooking spray.
  • For the Blue Cheese Sauce: Stir together the blue cheese, buttermilk, sour cream, mayonnaise, lemon juice and garlic powder in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
  • For the meatballs: Pulse the celery, onion and bell pepper in a food processor until finely minced. Combine the minced vegetables with the ground chicken, breadcrumbs, egg and House Seasoning (see recipe below) in a large bowl. Shape the mixture into 48 1-inch meatballs and place 1 inch apart on the prepared baking sheets. Bake until the meatballs begin to brown, about 10 minutes. Turn the meatballs. Cook until the meatballs are browned and cooked through, about 10 more minutes.
  • While the meatballs bake, combine the butter, hot sauce and Worcestershire sauce in a medium saucepan over medium heat. Cook until the butter is melted. Add the cooked meatballs to the saucepan and turn to coat. Cover and keep warm until ready to serve. Serve the meatballs with the blue cheese sauce, celery sticks and sprinkle with parsley.
  • Stir together the garlic powder, onion powder, sweet paprika, pepper and salt in a small bowl. Store in an airtight container.

  • Sauté the onion in a small pan in the vegetable oil until soft. Remove and allow to cool. Preheat the oven to 425°F.
  • Heat the hot sauce in the same pan, over medium-low heat. Add the honey, if you are using it. Whisk in the butter little by little, about 1 tablespoon at a time, until incorporated. Keep warm, but do not let this simmer or it will break.
