Until a week ago, I had never heard of BCD. After tasting it at a Super Bowl party, I not only became addicted, but noticed that there's already a huge BCD craze taking over America. It's delish, but pretty processed and rich!

1 (8-ounce) package cream cheese, softened
1/2 cup blue cheese or ranch salad dressing
1/2 cup hot sauce
1/2 cup crumbled blue cheese
2 ounces mozzarella cheese, shredded
2 (9.75-ounce) cans chicken in water, drained
Crackers, chips, and/or veggies, for dipping

Steps:

  • Preheat the oven to 350 degrees F.
  • In a (9-inch) deep-dish pie plate add the cream cheese and stir with a fork until smooth.
  • Stir in the dressing, hot sauce and cheeses. Mix in the canned chicken and bake for 20 minutes or until the chicken mixture is hot and bubbling.
  • Stir before serving with crackers, chips, and/or veggies.

12 wooden skewers
Vegetable oil cooking spray
1 tablespoon cornstarch
1/3 cup hot sauce, divided
1 pound chicken tenders, cut into strips
1/2 cup crumbled blue cheese
1/2 cup fat-free blue cheese dressing
4 carrots, cut into sticks
4 celery stalks, cut into sticks

Steps:

  • Soak skewers in water 15 minutes. Heat broiler; coat a broiler pan with cooking spray. In a bowl, stir cornstarch into 1 tablespoon hot sauce until smooth; stir in remaining hot sauce. Add chicken; toss to coat. Thread chicken lengthwise on skewers; reserve remaining hot sauce mixture. Place chicken in pan so skewers hang off edge; cover exposed sticks with aluminum foil. Broil 4 minutes. Turn chicken; brush with remaining sauce. Broil until chicken is cooked through, 4 to 5 minutes. In another bowl, combine blue cheese and dressing. Serve chicken with vegetable sticks and blue cheese dipping sauce.

1 1/2 cups cottage cheese
1/2 cup Buffalo-style hot sauce

Rainbow baby carrots, celery sticks and assorted crackers and chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the chicken, cottage cheese, hot sauce, pepper jack and Cheddar in a large bowl and mix well. Transfer to an 8-inch square baking dish, spreading it into an even layer. Sprinkle all over with the blue cheese and bake until hot and bubbly, about 35 minutes.

1/2 cup sour cream
1/2 cup mild hot sauce, such as Frank's
2 tablespoons whole milk
One 8-ounce package cream cheese, at room temperature
1 cup chopped chicken (from about 1/2 rotisserie chicken)
1 tablespoon vegetable oil
8 ounces bacon (about 9 slices)
3 stalks celery, finely diced (about 1 cup)
1 1/2 cups shredded iceberg lettuce (from about 1/4 head)
2 medium carrots, shredded (about 1 cup)
1/2 cup store-bought blue cheese dressing
2 scallions, thinly sliced (about 1/4 cup)
Tortilla chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the sour cream, hot sauce, milk and cream cheese in a food processor and process until smooth. Toss the chicken and hot sauce mixture together in a bowl and spread with a spatula in the bottom of a glass 8-inch square baking dish. Cover the baking dish with foil and bake until warmed through, 25 to 30 minutes.
  • Meanwhile, heat the oil in a large nonstick skillet. Add the bacon and cook over medium heat, turning a few times, until evenly browned, 7 to 8 minutes. Transfer the bacon to a paper towel-lined plate to drain; let cool, then crumble.
  • Let the baking dish sit at room temperature, 10 minutes. Uncover the baking dish and scatter over the celery, then the lettuce, then the carrots. Drizzle with the blue cheese dressing and sprinkle with the bacon and scallions. Serve with the tortilla chips.

1/2 cup hot sauce (recommended: Frank's)
1 rotisserie chicken, shredded

  • Preheat the oven to 425 degrees F.
  • In a medium saucepan over moderate heat, melt the cream cheese until smooth, about 3 minutes. Add the celery, hot sauce and chicken and mix well. 2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup ranch dressing
3/4 cup pepper sauce (such as Frank's Red Hot )
1 1/2 cups shredded cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers

Steps:

  • 1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
  • My Note: I have used Texas Pete Buffalo Style Chicken Wing Sauce, 1/3 less-fat cream cheese (aka Neufchatel), and 1 lb. of fresh chicken that was boiled for 20 minutes (or until done) and then shredded. However, to avoid the strange "orange sherbert" color of the dip, I layered the ingredients in a 8"x11" baking dish as follows: Mix together the softened cream cheese and ranch dressing and spread evenly in the bottom of the dish. Then mix together the shredded chicken and wing sauce (about 2/3 bottle)and layer on top of the cream cheese mixture. Sprinkle just a small amount of shredded cheese (I used Colby/Jack) over the top. Bake at 350 for about 20-25 minutes or until dip is heated through and cheese is melted. I just think people tend to shy away from the dip when it's all mixed together because of the strange color. It's more recognizable (retains a brighter red color) when it's layered and gets gobbled up faster! Great dip for football season!
  • I suggest using more chicken and more hot sauce with this recipe. Also, if you use the chedder cheese, don't use the pre-shredded bags from the grocery store. The cheese in those bags is coated with flour and it seems to make the dip oiler.
  • I have use bleu cheese dressing instead of ranch because thats what some like to eat with buffalo chicken! I also used 2 boneless chicken breasts instead of canned chicken (I cant stand canned meats) grilled it in a pan, cut it into bite sized pieces, put it back in the pan with the hot sauce. When I mixed the the cream cheese and bleu cheese together I added more hotsauce for more of a kick. Baked in an 8x8 pan, 350 for 20 minutes. Dip was gone in minutes!

I got this Buffalo chicken dip recipe from a respiratory therapist at the hospital where I work. He brought it to a party and everyone asked for the recipe. I appreciate all the reviews that have been written about this recipe since I posted it so long ago. I see more and more that people are making it with freshly cooked chicken - great idea. I also like the idea of using rotisserie chicken. The original recipe used canned chicken for convenience, but I agree with all of you that the fresher meat tastes better. Barb P.S. I first tried this buffalo chicken wing dip at my neighbor's picnic. A friend of theirs brought it and we munched on it all night til it was gone! I love this recipe for picnics, potlucks and tailgate parties. It's a much less messy way of enjoying chicken wings. My oldest son loves it. You can make it as spicy hot as you want...or leave it mild. It's best served warm, but you can also eat it cool.

1 1/2 lbs chicken breasts, cooked and shredded
1 (12 ounce) bottle hot sauce (use whole bottle or just half, if desired)
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) bottle bleu cheese salad dressing (or can use ranch or 8 oz blue cheese and ranch)
2/3 cup chopped celery
3 cups shredded cheddar cheese or 3 cups monterey jack and cheddar cheese blend

Steps:

  • Preaheat oven top 350.
