QUICK AND EASY CHICKEN NOODLE SOUP



Quick and Easy Chicken Noodle Soup image

When you don't have time to make your soup totally from scratch, this is a very easy, very good substitute.

1 tablespoon butter
½ cup chopped onion
½ cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
½ pound chopped cooked chicken breast
1 ½ cups egg noodles
1 cup sliced carrots
½ teaspoon dried basil
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

Thought the idea of using chicken drumsticks rather than a whole chicken was great, since they are cheap. Plus, the ingredients are usually items I already have in my pantry. It's my budget-friendly, easy to make chicken noodle soup :-)

Number Of Ingredients 11

2 tablespoons olive oil
1 teaspoon garlic (crushed)
1 medium onion (chopped)
4 carrots (peeled & sliced)
4 celery ribs (sliced)
5 -6 chicken drumsticks
1 bay leaf
8 ounces spaghetti (cut in half)
salt
pepper
1 -2 chicken bouillon cube (optional)

Steps:

  • Saute onion, garlic, carrots and celery in olive oil for about 10 minutes. Add some salt and pepper.
  • Add 6-8 cups of water (more or less depending on if you want a thick soup or not).
  • Add drumsticks and bay leaf. Bring to boil, then cook on low for 1 1/2 hours.
  • Remove drumsticks and shred meat. Place back into pot and bring to boil.
  • Add pasta of choice - cook until done. If broth isn't strong enough for you, add bullion cubes. Salt and pepper to taste.
  • Enjoy :-).
  • (Need to run? Skip the sauteing, skip the defrosting, and just throw everything but the pasta into a slow cooker. Cook on high for 3 hours. Take chicken out, shred, add chicken & pasta, cook on high 15 more minutes and enjoy).

  • Dice the onion and mince the garlic. Add the onion, garlic, and olive oil to a large pot and sauté over medium heat for about 5 minutes, or until the onions are soft and transparent.
  • While the onion and garlic are sautéing, wash and slice the carrots and celery. Add them to the pot and continue to sauté for a few minutes more.
  • Pull the skin and any excess fat from the chicken breasts. Add the breasts to the pot along with the bay leaf, basil, parsley, thyme, some freshly cracked pepper, and eight cups of water. Cover the pot, bring it to a boil over high heat, then reduce the heat to low and simmer for one hour. Make sure the pot continues to simmer for the whole hour. If the heat is turned down too low and it is not bubbling away, the chicken will not shred easily.
  • After an hour of simmering, remove the chicken from the pot. Using two forks, pull the meat from the bone and shred it slightly. Season the broth with salt. Begin with one teaspoon and add more to your liking. I used 2-3 teaspoons. The flavor of the broth will really pop once the salt is added.
