BRUSSELS SPROUTS AND BACON RECIPE
This Brussels sprouts and bacon recipe is a super delicious 2-ingredient side dish that the whole family will love. It's easy and fast.

Steps:
- Fry the bacon in a skillet over medium-high heat until crispy.
- Take the bacon out of the pan (set aside until needed) and leave the grease in there.
- Add the Brussels sprouts to the pan, stir them until they're nicely coated in the bacon grease, and cover the pan with a lid. Reduce the heat to medium-low. Cook for 5 minutes.
- Add the bacon back into the pan. Cook, uncovered, for a few more minutes or until the Brussels sprouts are as tender and/or browned as you want. You can cover the pan again if you wish (especially if you want the Brussels to be super soft); just keep an eye on them so they don't scorch.
- Season with salt & pepper if needed. Serve immediately.

- Bring a large pot of water to a boil and salt it generously. Trim the bottom end of the Brussels sprouts, leaving the core intact, and pull off the outer dark leaves. Halve through the core. Add the Brussels sprouts and cook, uncovered, until tender, about 6 minutes. Drain and rinse under cold running water. (This can be done a day ahead.)
- Meanwhile, put the oil and bacon in a very large skillet or stewpot, and cook over medium heat, stirring occasionally, until the bacon is crispy. Remove the bacon with a slotted spoon and set aside. Increase the heat to medium-high, add the Brussels sprouts and cook, stirring occasionally, until they brown and the edges get crisp, about 10 minutes. Stir in the vinegar, salt, pepper, and bacon. Serve warm.

- Brown bacon in a medium skillet over medium high heat. Remove bacon to a paper towel lined plate. Add extra-virgin olive oil to the pan, 1 turn. Add shallots to the pan and saute 1 to 2 minutes. - Preheat the oven to 400 degrees F. Line a baking sheet with foil.
- Slice the Brussels sprouts lengthwise into thirds. If some of the outer leaves fall off, that's okay; don't discard them--they'll crisp up nicely in the oven. Transfer the sprouts to a bowl, add the bacon fat, 3/4 teaspoon salt and 1/2 teaspoon pepper and toss to combine. Spread them out on the prepared baking sheet.
- Bake until the smaller sprouts are crispy, about 20 minutes. Remove the baking sheet from the oven and transfer the crispy sprouts to a serving plate. With tongs, flip over the remaining sprouts (flipping them individually makes for the crispiest results). Return to the oven and bake until deeply browned and crisp all over, 5 to 10 more minutes.

- 1. Cut Brussels sprouts length wise & bring a pot of water to a boil. Boil Brussels sprouts cut side down for about 2 minutes remove from water let them cool this will help when coring them out. Once cooled, core out the middle of the sprout using a pairing knife, once all are cored, chop up the cored out pieces of brussel sprout very tiny and saute with garlic in fry pan w/olive oil on Med high heat (if making w Bacon I add bacon pieces at this time also)~ saute until brussel sprout is tender & bacon crisp-
- 2. In a separate bowl Mix all other ingredients together~once all mixed~ then combine cooked Brussels sprout pieces, garlic (bacon) mixture to the bowl of cheese & breadcrumb mixture ~ toss and mix all well to create your stuffing. You may need to add more Panko use your judgement.
- 3. With a spoon stuff the Brussels Sprout 1/2's w/stuffing mixture~ Bake at 400 degrees for about 20 minutes or so (I like them crispier so I cook a little longer) or put on broil last 2-3 minutes to crisp up the tops. (just watch carefully) Serve & Enjoy (I love watching my family eat Brussels sprouts)
