- Preheat oven to 400 degrees.
- In a medium bowl add tomatoes, basil, garlic, olive oil, vinegar, and salt. Stir to combine. Place in fridge until ready to use.
- Oil an oven safe baking dish. Unwrap brie wheel and place on top of dish, in the center. Place into oven and cook for 15 minutes. Carefully remove, dish will be hot.
- Allow to cool for 5 minutes. Using a slotted spoon, scoop the bruschetta topping onto the center of the brie. Spread over the top. Serve immediately with scoopers such as a sliced toasted baguette, crackers, or veggies!

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 tablespoon oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Meanwhile, in a large skillet over medium heat, cook and stir the onion, sugar, vinegar, salt and pepper in remaining oil for 15-20 minutes or until very tender and browned., Place bread on ungreased baking sheets. STRAWBERRY-BRIE BRUSCHETTA

- Heat oven to 375-degrees.
- Spread 1 side of each bread slice with butter; arrange, butter side up, on large baking sheet.
- In small bowl, combine sugar and cinnamon; sprinkle 1 teaspoon over each slice of bread.
- Reserve remaining sugar mixture.
- Toast bread in oven for 5 minutes and remove.
- Top each slice with one slice of Brie; return to oven.
- Bake an additional 4-6 minutes or until cheese is melted.
- Meanwhile, in large bowl, combine strawberries, vanilla and remaining sugar mixture; toss lightly.
- Place two bruschetta on each serving plate.
- Spoon 1/3 cup strawberry mixture over each; sprinkle with almonds.
- Serve immediately.
- Note: to toast almonds, spread on even layer on baking sheet.
- Bake in a 350-degree oven for 5-10 minutes or until light golden brown, stirring once or twice for even browning.
CARAMELIZED APPLE AND ONION BRUSCHETTA WITH MELTED BRIE
I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

Steps:
- Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
- Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
- In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
- Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
- Idea! - This appetizer is great for a dinner party where pork is the main dish.
BRIE BRUSCHETTA WITH TOMATO, HERBS & SERRANO HAM

- Heat 1 tsp olive oil in a saucepan and gently cook the chopped shallots for 2 mins until soft but not coloured. Pour in the cream, bring it to a simmer, then reduce by about half. The cream will look like a thick sauce at this point. Stir in the chives.
- Heat grill to high. Brush the remaining olive oil over the bread and grill on both sides until toasted. Top each slice with some tomato, then cheese, then Serrano ham, and finally spread over about 1 tbsp of the thickened cream to cover the ham. Place back under the hot grill until the cream starts to colour and glaze and the cheese has begun to melt. Serve with rocket leaves scattered over the top.

BAKED BRIE CROSTATA

- Preheat the oven to 400 degrees F.
- On a clean, lightly floured surface, roll the puff pastry out to an even thickness, about a 13-to-14-inch square. Place the Brie wheel in the center of the pastry and cut the pastry into a round 4 inches wider than the cheese on all sides. Remove the cheese and brush the pastry with a thin layer of beaten egg.
- Spoon the cranberry chutney into the center of the rolled pastry and spread with the back of a spoon so it is the same size as the circle traced for the Brie. Place the cheese on top of the chutney.
- Working from the bottom of the circle, begin folding the pastry over the cheese. It will not cover the cheese completely; rather the pastry should just come 1 to 2 inches over the edge of the cheese. Work all the way around the cheese until all the pastry is folded, forming a neat packet around the cheese. (If the pastry is too soft at this point, place in the refrigerator for 15 minutes to firm up.)
- Cut a 2-by-2-inch 'x' in the center of the exposed cheese.
- Brush the folded pastry with more beaten egg and sprinkle with the bagel spice or sesame seeds if using. Transfer to a baking pan and place in the oven. Cook until golden brown, 20 to 25 minutes. Cool 10 minutes before serving. To serve, cut into wedges. Serve with crackers if desired.
