This is one of those wonderful recipes to have on hand when you want to do a little something extra for breakfast or brunch. Given to Sheryl by her good friend Karen Reedy back in the 80's.

Number Of Ingredients 7

12 slices Canadian bacon, quartered
12 ounces swiss cheese, sliced
12 eggs
1 cup whipping cream
1/2 cup parmesan cheese, grated
pepper, to taste
paprika, to taste

Steps:

  • Preheat oven to 450o.
  • Lightly grease 12 x 9 x 2" baking dish.
  • Layer Canadian bacon in bottom of dish.
  • Add a layer of the Swiss cheese on top of Canadian Bacon.
  • Beat eggs. Add whipping cream to eggs and whip together.
  • Pour egg and cream mixture over Swiss cheese.
  • Bake in oven for 10 minutes.
  • Sprinkle Parmesan cheese, pepper and paprika on top.
  • Bake an additional 8 to 10 minutes. Let stand 10 minutes and serve.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
1 pound bacon strips, cooked and crumbled
1 medium onion, chopped
1 medium green pepper, chopped
1-1/2 cups shredded cheddar cheese
12 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a greased 5-qt. slow cooker, layer a third of each of the following: potatoes, bacon, onion, green pepper and cheese. Repeat layers twice. In a large bowl, whisk eggs, milk, salt and pepper; pour over layers., Cook, covered, on high 30 minutes. Reduce heat to low; cook, covered, until a thermometer reads160°, 3-1/2 to 4 hours.

This recipe is special enough to consider when company comes, and it's a convenient way to serve eggs to a group. 12 slices Canadian bacon
12 slices Swiss cheese
12 eggs
1 cup heavy whipping cream
1/3 cup grated Parmesan cheese
12 slices toast, optional

Steps:

  • Place Canadian bacon in a greased 13-in. x 9-in. baking dish; top with Swiss cheese. Carefully break an egg over each piece of cheese. Pour cream over eggs and sprinkle with Parmesan cheese. , Bake, uncovered, at 375° for 20-25 minutes or until eggs reach desired doneness. Let stand for 5 minutes. Cut between each egg; serve on toast if desired.
