Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter, brown sugar, and white sugar together with an electric mixer in a large bowl until smooth. Add egg and vanilla extract and beat until smooth.
  • Mix flour, salt, and baking soda together in a separate bowl; add to butter mixture and blend until just incorporated into a dough.
  • Beat brownie mix, milk, water, and vegetable oil together in a separate bowl; add to dough and stir gently to keep the two batters distinct but somewhat evenly mixed.
  • Drop dough onto ungreased baking sheets by heaping tablespoonful.
  • Bake in preheated oven until set in the middle and crackling on top, 10 to 12 minutes. Cool cookies on sheets for 5 minutes before moving to a wire rack to cool completely.

1 stick (8 tablespoons) unsalted butter, melted
1 large egg
1 cup semisweet chocolate chunks

Steps:

  • Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Stir together the brownie mix, butter and egg in a large bowl until smooth and combined, then fold in the chocolate chunks.
  • Scoop 24 balls of dough (about 2 tablespoons each) onto the prepared baking sheets. Use the palm of your hand to gently press each ball into a thick disk. Bake until the cookies spread and the edges are just set, rotating the trays halfway through, 10 to 12 minutes. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

1/2 cup butter, cut into pieces
4 oz unsweetened baking chocolate, chopped

Steps:

  • Heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Set aside.
  • In 3-quart heavy saucepan, cook butter, baking chocolate and 1 1/2 cups of the chocolate chips over low heat, stirring constantly, until butter and chocolate are melted. Remove from heat; cool.
  • In medium bowl, mix flour, baking powder and salt; set aside. In large bowl, beat eggs, sugar and vanilla with electric mixer on medium speed until well blended. On low speed, gradually beat in flour mixture. Add chocolate mixture; beat well. Stir in toasted pecans and remaining 1 1/2 cups chocolate chips.
  • Line cookie sheets with cooking parchment paper. Onto cookie sheets, drop dough by 2 tablespoonfuls 1 inch apart. Bake 10 minutes. Cool 2 minutes; remove from cookie sheets to cooling racks.

These taste just like the edge of a brownie! So easy and sooo yummy! I came up with this idea after trying to find a brownie cookie recipe that would give me that chewiness. Not being able to find one, I came up with this. Perfect for when you need a chocolate fix since it's so quick. Also great for those watching their weight but want a bit of an indulgence, since the portions are a lot smaller but just as yummy. Will keep in fridge for several days if covered well with plastic wrap. Update: Just made these using a heaping tablespoon and added chocolate chips and pecans to the mix, and they were great!

1/3 cup oil (for an even chewier cookie, increase oil to 1/2 cup)

  • Preheat oven to 375 degrees F.
  • Mix all the ingredients together. Depending on the humidity, you may need to add a little more or less water. The batter should be the consistency of a very thick brownie batter. Refridgerate for about a 1/2 hour or longer, for best results.
  • On a non stick cookie sheet or even beter one lined with nonstick foil, drop a heaping teaspoon of batter on the foil. Continue, making sure to leave a good amount of room, since the batter tends to spread.
