BROWNED BUTTER M & M COOKIES
Steps:
- Add one stick of butter to a medium skillet over medium heat. Allow it to melt and bubble up for 3 to 4 minutes, swirling the pan to keep the butter moving around. When the butter is a medium golden brown, remove the pan from the heat (it will continue browning in the pan over the next 30 seconds or so!) Pour butter (and any solids in the bottom of the pan) into a heatproof bowl and allow it to cool completely, about 30 minutes. Meanwhile, allow the other stick of butter to soften. Preheat the oven to 375 degrees*.Cream the softened butter together with the brown sugar and regular sugar until it's nice and combined. Add the eggs and vanilla, and beat until smooth, scraping the bowl if necessary to make sure everything is incorporated. With the mixer on medium-low, slowly drizzle in the cooled melted butter, making sure to add all the darker brown solids. Scrape the bowl the mix again for 20-30 seconds, until everything is combined. In a separate bowl, combine the flour, coffee granules, baking soda and salt. Stir together, then add it in 1/3 increments, mixing on low, until it's totally incorporated. Scrape the bowl and beat for a few more seconds. Stir in the M&M's and the chocolate chips, if using. (I think using half chocolate chips, half M&M's would be perfect.) In batches, scoop by heaping teaspoon onto a baking sheet lined with a baking mat, Press 2 to 3 additional M&M's on top if desired. If you have time, refrigerate scooped dough for 10 minutes (if not, it's fine.) Bake for 7 to 8 minutes, or until deep golden brown. Wait a minute or two, then transfer cookies to a cooling rack. Repeat with the rest of the dough. Serve cookies with a big glass of cold milk!*You can bake at 350 for a little longer if you don't want the cookies to be quite so brown. (I like brown cookies!)
THE BEST M&M COOKIES
We took our favorite chocolate chip cookie recipe and increased the brown sugar to make these cookies extra moist and chewy. Then we super-sized them -- the better to get in more of our favorite candy-coated chocolates. Save some extra candy for topping each cookie before baking. The result, cookies that look just as good as they taste!

- Sift the flour, baking powder, baking soda and salt into a large bowl.
- Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Reserve 1/4 cup of the chocolates, then stir in the remaining 1 3/4 cups of chocolates by hand. Press plastic wrap directly onto the surface of the dough and refrigerate until chilled through, about 1 hour.
- Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Roll the dough into 24 balls, each about 3 tablespoons (alternatively, use a #20 large cookie scoop). Place 6 dough balls on each of the prepared baking sheets; stud the top of each dough ball with some of the reserved chocolates. Bake 2 trays at a time until the cookies are golden around the edges but still soft in the middle, rotating the trays halfway through, 15 to 18 minutes. Remove from the oven and let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough and chocolates.

- Preheat oven to 375°.
- Mix brown sugar, butter or margarine, vanilla and eggs in a large bowl until blended.
- Stir in remaining ingredients.
- Drop dough by rounded teaspoonful about 3" apart onto lightly greased cookie sheet. Press additional candies into each cookie if desired.
- Bake until light brown, 6 to 8 minutes.
- Cool slightly; remove to a wire rack.

Steps:
- Cream margarine and sugars, then add eggs and vanilla. Add dry ingredients and finally add 1/2 M&M's.
- Drop by teaspoon onto greased cookie sheet placing remaining M&M's on top of each cookie.
- Bake at 350° for 10 minutes or lightly browned.
- Can make frozen balls of dough to take out and bake as needed.
