BROWN SUGAR ROASTED PINEAPPLE
We love this roasted pineapple with brown sugar, butter and a hint of cinnamon. It is a quick side dish that is as good as grilled pineapple any day! Roasting concentrates the sweet pineapple flavor for delicious results.

Steps:
- Preheat the oven to 450 F.
- Cut fresh pineapple into chunks or thaw the frozen pineapple in the microwave until it is mostly thawed. If you are using frozen and thawed pineapple include any juice from the thawing process.
- In a medium bowl combine all of the ingredients. Stir by tossing gently until all the pineapple is well coated.
- Pour the pineapple mixture into a large, rectangular baking dish.
- Bake in a preheated oven for 20-25 minutes, stirring about half way through.
- The pineapple is done when it turns a rich golden and begins to brown but before it starts to blacken.

BROWN SUGAR RIBS WITH PINEAPPLE RELISH

- For the ribs: Preheat the oven to 325 degrees F.
- Mix together the brown sugar, paprika, salt, cayenne, pepper, garlic and orange juice in a large bowl. Add the ribs and toss until coated evenly.
- Cut an aluminum foil sheet that is 18 inches wide and 24 inches long and place on top of a baking sheet. Tip the ribs mixture onto the foil along with any extra juices from the mixing bowl. Fold the foil ends over the ribs, followed by the sides, and then seal the foil tightly to completely enclose. Bake until very tender, about 2 hours.
- For the relish: Meanwhile, add the pineapple, cilantro, honey, chili powder, salt, jalapeño, red onion and lime zest and juice to a medium bowl and mix everything together. Set aside.
- Remove the ribs from the oven and preheat the broiler.
- Carefully open the foil pack to expose the ribs. Arrange the ribs so that the meaty top sides of the ribs are upright and place them under the broiler to caramelize, about 5 minutes.
- Transfer the ribs to a platter or board, top with the cold pineapple relish and serve.

BROWN SUGAR GLAZED PINEAPPLE
Steps:
- Preheat the broiler. Remove skin and "eyes" from pineapples and slice into 3/4-inch rounds; remove core if you wish or just thickly coat each slice with a layer of brown sugar. Set slices on a broiler pan.
- Place the pan under the broiler as close to the heat as possible and broil until the sugar is caramelized, about 3 minutes keep your eye on the pineapple to make sure it does not burn.

- Slice the top and bottom off the pineapple, cut off the prickly brown skin, and cut out the core. Cut the flesh crosswise into six 1-inch slices.
- Place the pineapple on the baking sheet, brush with the melted butter, and sprinkle with the salt and brown sugar.
