RASPBERRY STREUSEL BARS
Here are my simple raspberry streusel bars with four incredible flavors: a buttery shortbread crust, thick raspberry filling, brown sugar streusel, and a drizzle of sweet vanilla icing.

- Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper, leaving enough overhang on all sides. Set aside.
- Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.
- Remove the crust from the oven, and turn the oven up to 350°F (177°C).
- Spread preserves over warm crust. Dot the preserves with raspberries on top.
- Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Sprinkle the filling with streusel and bake for 30-35 minutes or until the streusel is golden brown. The raspberry filling should be bubbling on the edges.
- Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Drizzle the bars with vanilla icing, if using. These raspberry bars can be enjoyed at room temperature or cold. I personally like them cold.
RASPBERRY ICEBOX CAKE

- Preheat oven to 350 degrees F (175 degrees C).
- Mix graham cracker wafer crumbs, butter and brown sugar until well combined. Set aside 1/4 cup of this mixture for a topping and press the remainder into one 9x13 inch pan.
- Bake at 350 degrees F (175 degrees C) for 10 minutes. Set aside to cool.
- Dissolve raspberry gelatin in the boiling water and add the frozen raspberries, stirring until melted. Chill until partially set and spread on wafer base.
- Melt marshmallows with the milk. When cool, fold in whipped cream and spread on top of raspberry mixture. Sprinkle with remaining crumbs. Chill for 3-4 hours before serving.

- Preheat oven to 350°. In a small bowl, toss raspberries with brown sugar., In a large bowl, whisk flour, sugar, baking powder, baking soda and salt. In another bowl, whisk egg, sour cream, melted butter and vanilla until blended. This is a moist and sweet cake, and is a crowd pleaser. It has a somewhat fudgey flavour, and is ideal served with icecream (or frozen fruit yoghurt) and fresh raspberries. It has somewhat healthy ingredients, and may also be made into muffins.

- Preheat oven to 175°C (350F).
- Grease cake tin. (I use the cake tin with a hole in the centre. Cooking time will need to be increased if the cake tin does not have a hole in the centre.).
- Mix wet ingredients in a large bowl.
- Combine dry ingredients together in a medium bowl.
- Place dry ingredients into the large bowl, and stir together thoroughly. (Don't worry about being gentle with the raspberries. The intention is for the raspberries to spread through the cake evenly.).
- Pour the mixture into a cake tin.
- Bake for 30 minutes. (A sewer inserted will not come out clean when cake is finished as this is a very moist cake. Instead, tap the surface of the cake and examine colour to determine if it is cooked.).

I can remember my mom making this cake more than 30 years ago. It's still a great dessert for special occasions today.

- In a bowl, cream shortening and sugars. Beat in the egg, egg yolk and vanilla. Combine the flour, baking powder, salt and baking soda. Add to creamed mixture alternately with milk. Beat well. Stir in chocolate chips. Pour into a greased and waxed paper-lined 9-in. round baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from the pan to a wire rack to cool completely., Meanwhile, for filling, combine brown sugar and flour in a small saucepan; stir in milk. - Combine raspberries and brown sugar in a bowl.
- Set aside.
- In a large bowl, combine flour, sugar, baking soda, baking powder, and salt.
- Make a well in the flour mixture and add sour cream, butter or margarine, 1 teaspoon vanilla, and egg.
- Stir just until moist.
- Spoon 2/3 of the batter into the prepared 8 inch round cake pan with cooking spray.

- Heat the oven to 180C/160C fan/ gas 4. Oil a deep, 20cm loose-bottomed cake tin and line with baking parchment. Combine the flour and sugar in a bowl. Set aside.

- Butter and flour a 9- x 13-inch baking pan.
- Roughly chop the almonds.
- Set aside.
