RASPBERRY STREUSEL BARS

Raspberry Streusel Bars image

Here are my simple raspberry streusel bars with four incredible flavors: a buttery shortbread crust, thick raspberry filling, brown sugar streusel, and a drizzle of sweet vanilla icing.

Provided by Sally

Categories     Bars

Time 3h20m

Number Of Ingredients 13

1/2 cup (115g) unsalted butter, melted
1/4 cup (50g) granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup (125g) all-purpose flour (spoon & leveled)
3/4 cup (240g) raspberry preserves*
12-16 fresh raspberries*
1/2 cup (40g) old-fashioned oats
1/3 cup (70g) packed light or dark brown sugar
1/4 teaspoon ground cinnamon
1/4 cup (31g) all-purpose flour (spoon & leveled)
1/4 cup (60g) unsalted butter, cold and cubed
optional (but encouraged!): vanilla icing for topping

Steps:

  • Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper, leaving enough overhang on all sides. Set aside.
  • Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.
  • Remove the crust from the oven, and turn the oven up to 350°F (177°C).
  • Spread preserves over warm crust. Dot the preserves with raspberries on top.
  • Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Sprinkle the filling with streusel and bake for 30-35 minutes or until the streusel is golden brown. The raspberry filling should be bubbling on the edges.
  • Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Drizzle the bars with vanilla icing, if using. These raspberry bars can be enjoyed at room temperature or cold. I personally like them cold.

BROWN SUGAR RASPBERRY CAKE

Brown Sugar Raspberry Cake image

This is a moist and sweet cake, and is a crowd pleaser. It has a somewhat fudgey flavour, and is ideal served with icecream (or frozen fruit yoghurt) and fresh raspberries. It has somewhat healthy ingredients, and may also be made into muffins.

Categories     Dessert

Time 45m

Yield 1 cake, 8 serving(s)

Number Of Ingredients 12

1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup white sugar
1 cup brown sugar
3 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 (8 ounce) container berry yogurt (I use mixed berry variety from ski.)
1 egg
1 teaspoon vanilla extract
4 tablespoons light olive oil (Peanut, vegetable, canola or sunflower oils may be substituted.)
1 cup apple (grated)
1 cup frozen raspberries

Steps:

  • Preheat oven to 175°C (350F).
  • Grease cake tin. (I use the cake tin with a hole in the centre. Cooking time will need to be increased if the cake tin does not have a hole in the centre.).
  • Mix wet ingredients in a large bowl.
  • Combine dry ingredients together in a medium bowl.
  • Place dry ingredients into the large bowl, and stir together thoroughly. (Don't worry about being gentle with the raspberries. The intention is for the raspberries to spread through the cake evenly.).
  • Pour the mixture into a cake tin.
  • Bake for 30 minutes. (A sewer inserted will not come out clean when cake is finished as this is a very moist cake. Instead, tap the surface of the cake and examine colour to determine if it is cooked.).

  • Top with the chopped almonds.
  • Bake for approximately 1 hour, or until a toothpick inserted in the center comes out clean and the cake springs back to the touch.
  • Remove from the oven and cool completely before serving.
  • The cake also makes a delicious dessert.
  • You can substitute other berries, such as blueberries or blackberries, for the raspberries.
