BROWN SUGAR OAT MUFFINS
With Kansas being one of the top wheat-producing states, it seems only fitting to share a recipe containing whole wheat flour. These are great muffins to have for breakfast or a late night snack with a cup of hot cocoa. -Regina Stock, Topeka, Kansas

- Preheat oven to 400°. Mix first 6 ingredients. In another bowl, whisk together eggs, milk, oil and vanilla. Add to oat mixture; stir just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 15-17 minutes., Cool 5 minutes before removing muffins to a wire rack. Serve warm. If desired, spread with peanut butter and honey.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
- Combine 3 tablespoons flour, brown sugar, and cinnamon in a small bowl. Use a pastry blender or two knives to cut in the butter until the mixture resembles coarse crumbs. Reserve.
- Combine 1 3/4 cup flour, white sugar, baking powder, salt, and the instant oatmeal in a large bowl. Make a well in the center of the flour mixture; pour in the egg, milk, and oil. Stir just until moistened. Spoon batter into prepared muffin cups, filling each 2/3 full. Evenly sprinkle streusel topping over muffins.
- Bake in preheated oven until toothpick inserted in center of muffin comes out clean, about 15 minutes. Cool on wire rack for 5 minutes before serving.

This is my favorite recipe because it adapts so well to variations. To make these delicious muffins even more hearty, I sometimes add chopped apple, raisins or shredded carrots.

- In a large bowl, combine oats and buttermilk; let stand 5 minutes. Stir in eggs. Combine flour, brown sugar, baking powder, cinnamon and baking soda; stir into oatmeal mixture just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

- Preheat the oven to 400 degrees F. and grease 14 to 18 muffin cups well. (I grease a whole set of 12 on one pan and then grease the middle 6 on a second pan. This recipes makes 14 to 18 muffins depending on size OR you can do 12 regular sized muffins and about 24 mini muffins.)
- In a medium bowl, add the oatmeal and the milk, stir to combine, and set aside.
- In a second medium bowl, add the oil and brown sugar, and mix to combine until the sugar looks smooth, about 1 minute.
- Add the eggs and mix well to combine.
- Add the flour, baking powder, baking soda, ground cinnamon, cloves, and salt to the egg mixture, and fold to combine.
- Add the oat and milk mixture to the flour and egg mixture, and fold until just combined, careful to not over-stir.
- Place the batter into the prepared pans, filling the cups 1/2 full.
- Bake for 20 to 25 minutes or until the centers are cooked through and nothing comes out on a toothpick when you insert it into the center. (Mini muffins will bake in 14 to 16 minutes.)
- Remove from the oven and allow to cool for 10 minutes before removing the muffins from the pan to finish cooling on a wire rack (if you leave them in the muffin tin they sweat and the bottoms get soggy).
- Enjoy warm or at room temperature.
- This recipes freezes well.

- Combine oats, flour, salt, baking powder, and cinnamon.
- In a seperate bowl, beat eggs well.
- Melt the butter and add the brown sugar and vanilla.
- Then mix the butter, 1 cup of milk, oil, and eggs into the oat mixture.
- Spoon into greased or sprayed muffin tins and bake 18-20 minutes.
- In a bowl, mix powdered sugar and 2 tablespoons of milk until it forms a glaze.
- Add more milk little by little if needed to get best consistency.
- When the muffins are baked and cooled, drizzle the glaze over top.

OATMEAL CINNAMON-SUGAR MUFFINS
These muffins have an excellent taste and texture. They are wonderfully moist and soft inside. They are perfect for breakfast: a couple of them keeps me going the whole morning. They can be frozen and come out of the freezer just as fresh as from the oven. I found this recipe in Internet several months ago and I made little changes on it until I got the perfect muffins for me. I hope you will enjoy them as well! In the preparation time I don't include the time while the oats and the sour milk are standing in the bowl (1 hour).

Steps:
- Combine oats and buttermilk or sour milk in a bowl, mix and let stand 1 hour.
- Sift together flour, baking soda, baking powder and salt.
- Cream together butter and sugar with an electric mixer.
- Add the egg and beat until light and fluffy.
- Add to the flour mix and stir.
- Add the oat and sour milk mix and stir until just combined.
- Fill a greased muffin tin (mine is for 12 small muffins, 2 and 3/4 inches in diameter in the widest part).
- Top with a little cinnamon sugar if desired.
- Bake at 400o Farenheit for 20 minutes.
- The muffins are ready when a stick inside them comes out clean.

These muffins taste like or are a cross between Tim Hortons Old Fashioned Glazed and Cinnamon Spice Timbits. SO YUMMY ...and so Canadian eh?! :) These muffins taste better once they have cooled or even the next day as the flavours have had a chance to meld together. They also freeze well too.

- In a mixing bowl combine flour, the 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the dry ingredients.
- In another bowl, beat egg slightly; stir in milk and 1/3 cup melted butter or margarine. Add egg mixture to flour mixture. Stir just until moistened (the batter may be lumpy). Lightly grease 12 muffin cups. Fill cups about two-thirds full with batter. Bake in 350 f oven for 20 to 25 minutes or until muffins are golden.
- Meanwhile, in a shallow bowl combine the 1/4 cup sugar and cinnamon. Immediately dip tops of hot muffins into the 1/4 cup melted butter or margarine, then into the cinnamon-sugar mixture until coated. You need to work quickly as the muffins are hot.
- Baked muffins can be placed into freezer containers or bags and frozen up to 1 month.
- NOTE: You might find that you don't get all 12 muffins from this recipe. It really depends on how much you fill each muffin cup. I was able to get all 12 muffins from this recipe.
