Peels from 2 very ripe bananas, stem and very bottom discarded (see note)
1/2 cup unsalted butter, softened, plus more for buttering the pans
1 1/2 cups granulated sugar
2 large eggs, separated
1/2 cup buttermilk
1 2/3 cups cake flour, plus more (any type) for flouring the pans
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon fine-grain sea salt
1/2 cup unsalted butter
1 cup packed light or dark brown sugar
1/4 cup milk, 2 percent or higher
1 3/4 to 2 cups powdered sugar, sifted

Steps:

  • Heat the oven to 350 degrees F.
  • To make the cake: Cut the banana peels into 1-inch pieces and place them in a small saucepan with 1 cup of water. Bring to a boil over medium-high heat, then reduce the heat and simmer for 10 minutes. Remove the pan from the heat and allow the mixture to cool slightly, then drain the banana peels, reserving 1/4 cup of the cooking water.
  • Meanwhile, butter and flour the sides of two 8-inch round cake pans and line the bottoms with parchment paper. Butter and flour the pans again to coat the paper.
  • Transfer the peels and the 1/4 cup of cooking water to a tall, narrow container and puree with an immersion blender until completely smooth (a mini food processor would do the trick, too!).
  • Cream together the butter and sugar in a large bowl using an electric mixer (or a wooden spoon for an arm workout) until pale and fluffy, 3 to 5 minutes. Add the egg yolks one at a time, mixing until incorporated, and scraping down the sides of the bowl after each addition. Mix in the banana peel mixture, then stir in the buttermilk until well-combined.
  • In a medium-size bowl, whisk together the flour, baking soda, baking powder, and salt. Add the dry ingredients to the bowl with the butter mixture and stir gently, just until combined.
  • Put the egg whites in another bowl (make sure it's clean and dry!) and whisk until soft peaks form -- either by hand or with the whisk attachment on an electric mixer. If using an electric mixer, start slowly and gradually increase speed to medium-high. You're done when you pull out the whisk or beater and a soft peak is formed, but immediately collapses. Gently fold the egg whites into the batter and divide the batter evenly between the two prepared pans.
  • Bake, rotating the pans halfway through, until the tops are golden and a toothpick inserted into the center of each cake pulls out with dry crumbs rather than wet batter, about 25 minutes. Let the cakes cool completely in the pans.
  • When the cakes are completely cool and you're ready to assemble, make the frosting: Melt the butter in a medium saucepan over low heat. Stir in the brown sugar and cook, stirring constantly, for 2 minutes. Stir in the milk, raise the heat to medium-high and cook, stirring constantly until the mixture boils. Remove from the heat and let cool to lukewarm. Gradually whisk in 1 3/4 cups powdered sugar, beating until smooth. Add the additional 1/4 cup powdered sugar if the frosting is too loose. Use the frosting immediately, as it will begin to thicken and stiffen as it sits.
  • To remove the cake from the pans, invert one cake pan on a serving plate, lift pan, and peel the parchment. Repeat for the second cake pan. Put one layer of the cake on a serving platter and spread about one-third of the frosting evenly over the top. Set the other layer on top, and spread the remaining frosting over the top and sides of the cake.

1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
10 Tbsp unsalted butter, at room temperature
1 cup light brown sugar
1/2 cup sugar
2 tsp vanilla extract
2 large eggs, at room temperature
1 cup mashed ripe banana
3/4 cup low-fat buttermilk, at room temperature
1 cup unsalted butter, softened
1/2 tsp salt
3/4 cup unsweetened cocoa, sifted
2 tsp vanilla extract
2 1/2 cups powdered sugar
5 Tbsp heavy cream

Steps:

  • Preheat oven to 350°F and spray a 13 x 9-inch baking pan with nonstick spray. Whisk together flour, baking powder, baking soda, cinnamon, and salt in a medium bowl.
  • Beat butter and sugars in a large mixer bowl on medium speed until soft and creamy; beat in vanilla. Add eggs one at a time and beat until combined. Combine banana and buttermilk in a small bowl. Reduce speed to low and add flour mixture in 3 additions, alternating with banana mixture (begin and end with flour mixture).
  • Spoon batter into prepared baking pan and smooth with an offset spatula; tap pan sharply to reduce air bubbles.
  • Bake for 28 to 30 minutes, until cake springs back to the touch and a toothpick inserted in the center comes out clean or with a few crumbs attached. Let cake cool completely in pan on a wire rack.
  • For the frosting, beat butter and salt in a large mixer bowl on medium speed until combined. With the mixer on low speed, gradually add sifted cocoa, beating until incorporated. Mix in vanilla. Add powered sugar 1 cup at a time, alternating with 1 tablespoon of heavy cream. Scrape down the bowl as needed. Add remaining 2 tablespoons of heavy cream and mix on low speed until combined, then beat on medium speed for 1 minute, until light and airy.
  • Dollop frosting over cooled cake and swirl with an offset spatula. Chill cake for 20 minutes in the refrigerator before slicing.

3/4 cup splenda brown sugar substitute
1/2 cup canola oil or 1/2 cup vegetable oil
2 eggs
1/2 cup plain yogurt
3 ripe bananas, mashed (about 1 1/2 cups)
2 teaspoons vanilla
2 cups Robin Hood Nutri Flour Blend
1 teaspoon baking powder
tsp. baking soda
1/4 teaspoon chipits semi-sweet chocolate chips
1 banana, sliced
icing sugar (to garnish)

Steps:

  • Preheat oven to 350°F Grease two 8 or 9-inch cake pans.
  • CAKE:
  • Beat brown sugar blend and oil in an electric mixer. Add eggs, one at a time, beating well after each addition. Add next 6 ingedients. Beat to combine. Fold in chocolate chips. Pour batter into prepared pans.
  • Bake in preheated oven for 30 minutes or until a toothpick inserted in center of cake comes out clean. Cool in pans for 10 minutes. Remove from pans and cool on a wire rack.
  • ASSEMBLY:.
  • Place 1 layer of cake on serving platter. Place sliced banana on top. Place remaining cake on top. Sprinkle with icing sugar if desired.
  • TIPS: for a more decadent version, place 3/4 cup Chipits Semi-sweet chocolate chips in a heat proof bowl. Heat 1/4 cup Carnation fat-free evaporated milk in the microwave for 1 minute and pour over chocolate chips. Let sit 5 minutes, stir until mixture is combined. Drizzle half the mixture over the sliced bananas and bottom half of cake. Place remaining layer on top. Drizzle with remaining chocolate.

I've searched high and low for the *perfect* banana cake; well, I think I've found it! This is moist and delicious, easy to make, and the perfect way to use up the oldest, blackest bananas you can find. The glaze topping is a nice change from the typical cream cheese icing, because it's not overpowering--it really allows the full flavor of the banana cake to shine through. Use your choice of ground walnuts or ground pecans in this cake--I've tried both, and either one works fine. I hope you enjoy this recipe as much as I do !! I think it's just fantastic!! (Chris says it reminds him of Entemann's banana cake, only better! How's that for a compliment!) Number of servings depends on how big you make your slices.
