Baked Apples with Brown Sugar image

Great comfort food. Best to make fresh but you can prepare the apples well ahead of time and just refrigerate until ready to bake. They'll brown up a little bit from exposure to air but that won't matter once they're cooked, all bubbly, brown and delicious.

2 Golden Delicious apples
2 to 3 tablespoons butter
4 tablespoons light brown sugar
Ground cinnamon, for sprinkling
Creamy Custard Sauce, recipe follows
1/2 pint light vanilla ice cream, melted (recommended: Ben and Jerry's)
2 egg yolks

Steps:

  • Preheat oven to 350 degrees F.
  • Wash and dry apples. Cut the apples in half and remove the core but leave any stems intact. Place apples in baking dish. Divide butter among each core cavity. Top each apple half with a tablespoon of sugar and dash with cinnamon.
  • Bake apples until the flesh is tender and they're bubbly and perfect looking, about 30 minutes. Serve with Creamy Custard Sauce.
  • Heat the melted ice cream in a small saucepan over low heat until hot. Meanwhile, put the yolks in a mixing bowl and whisk until smooth. While whisking, slowly drizzle about 1 or 2 tablespoons hot melted ice cream into the yolks until blended. While whisking constantly, slowly add the rest of the hot liquid to the yolk mixture. Pour the mixture back into the saucepan and return to low heat.

1/2 lemon

3/4 cup whole-grain cereal with dried fruit (recommended: Mueslix)

1 pint vanilla ice cream

Steps:

  • Heat the oven to 425 degrees F.
  • Trim the tops and scoop out the center and the seeds of each apple and rub the edges of the trimmed fruit with the lemon. In a medium bowl, combine the butter, cereal, sugar, and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.

1/2 cup (packed) dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
6 tablespoons pure maple syrup
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
1 cup water
Chilled whipping cream (optional)

Steps:

  • Peel skin off top quarter of each apple. Using melon baller, scoop out core, leaving bottom intact. Stand apples in 13x9x2-inch baking pan. Mix sugar and spices in bowl. Reserve 2 tablespoons mixture. Fill apple cavities with remaining sugar mixture. Spoon 1/2 tablespoon maple syrup into each cavity. Scatter 3 tablespoons butter pieces over apples. (Can be made 4 hours ahead. Cover; chill.)
  • Preheat oven to 350°F. Pour 1/2 cup water into pan with apples. Bake apples 35 minutes. Add reserved 2 tablespoons sugar mixture, 2 tablespoons maple syrup, 1 tablespoon butter, and 1/2 cup water to pan. Bake until apples are tender when pierced with skewer, about 25 minutes longer. Transfer apples to 8 bowls. Place baking pan atop 2 burners; boil over medium-high heat until syrupy, about 2 minutes. Spoon sauce over apples. Serve with whipping cream, if desired.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.

1/4 cup brown sugar
6 -8 medium baking apples, cored, but left whole, and unpeeled
1 teaspoon ground cinnamon
2 tablespoons butter
1/2 cup water

Steps:

  • Mix raisins and brown sugar together in a small bowl.
  • Stand apples upright on bottom of slow cooker, and spoon raisin-brown sugar mixture into centers of apples, dividing evenly.
  • Sprinkle stuffed apples with cinnamon, and dot with butter.
  • Add water along edge of slow cooker.
  • Cover and cook on low 3-5 hours, or on high 2 1/2 - 3 1/2 hours, or until apples are tender, but not collapsing.
  • Serve warm as is, or with ice cream, or frozen yogurt.

4 good-quality red apples such as Fuji, Braeburn, McIntosh, or Rome Beauty
1/4 cup packed brown sugar
2 tablespoon unsalted butter, at room temperature
1/2 teaspoon ground cinnamon
1/4 cup honey
1/2 cup apple juice

Steps:

  • Preheat an oven to 350 degrees. Spread the walnuts on a baking sheet and toast in the oven until lightly browned and fragrant, about 7 minutes. Remove from the oven and let cool. Working from the stem end, use a melon baller to remove the core from each apple, scooping out the stem and seeds making a deep hole for filling: work to within about 1/2-inch of the bottom of the apple. (Alternatively, remove the core with an apple corer and widen the hole with a small spoon.) Peel the skin from the top half of each apple. In a small bowl, blend together the brown sugar, butter, and cinnamon. Mix in the walnuts. Spoon equal amounts of the filling into the centers of the apples. 2 oranges, zested and juiced
1 teaspoon finely grated lemon zest
1/2 cup raisins, chopped
1/4 cup Cognac or other brandy
1/3 cup coarsely chopped pecans
1/2 cup coarsely chopped walnuts
1/4 cup coarsely chopped shelled pistachios
1/2 cup packed light brown sugar
Pinch of ground cinnamon
Pinch of ground mace
8 apples (about 3 pounds), preferably Northern Spy
Swiss Meringue
Creme Angalise, with chocolate variation

Steps:

  • In a bowl, stir together both zests, orange juice, raisins, and Cognac; cover, and let stand at room temperature 8 hours, or up to 1 day.
  • Preheat oven to 325 degrees, with a rack in the center. Stir nuts, brown sugar, cinnamon, and mace into raisin mixture. With a small melon baller, core apples, starting at stem end and leaving blossom end intact. Stand cored apples on a baking sheet lined with a nonstick baking mat, and fill each one with raisin mixture, dividing evenly. Bake until base of an apple is tender when pierced with the tip of a sharp knife, 25 to 45 minutes, depending on size and variety. Cool apples on baking sheet on a wire rack.
  • Fit a large pastry bag with an open-star tip (such as #18) and fill with Swiss meringue. Pipe a rosette on top of each apple. Using a small kitchen torch, carefully brown edges of the meringue. (Alternatively, place meringue-topped apples under the broiler until golden, 1 to 2 minutes, watching carefully to avoid burning.)
  • Spoon about 3 tablespoons creme anglaise onto each of 8 dessert plates. Transfer chocolate creme anglaise to a small pastry bag fitted with a plain fine tip (or place in a small sturdy plastic bag and snip off corner). Starting at the outside and working toward the center of the plate, pipe a spiral pattern, leaving about 1/4 inch between each curved line. To create the spider-web design, drag the tip of a sharp knife in radiating lines through the chocolate spiral, working from the center of the plate out, and spacing about 1/2 inch apart. Place a meringue-topped apple in the center of each plate, and serve immediately.
