PARMESAN RICE WITH SPINACH
Spruce up your side dish spread with this unique, veggie-packed twist on classic cheesy rice.

Steps:
- Begin by combining the brown rice and the water in a saucepan and bringing the mixture to a boil.
- Cover the saucepan with a lid, reduce the heat and let simmer for 45 minutes, or until fully cooked.
- Transfer the cooked rice to a serving bowl. Set aside.
- Defrost the spinach by placing it in a bowl and microwaving for 6-7 minutes until thawed.
- Strain the frozen spinach in a sieve to remove all liquid (you can also just ring it out in your hands, but make sure to remove as much liquid as possible.)
- Add two Tablespoons of olive oil to a pan set over low heat. Add the garlic and saute in the oil for 5 minutes until garlic is golden brown.
- Add the drained spinach to the garlic-infused olive oil and saute for an additional 5 minutes.
- Transfer the spinach mixture to the bowl with the cooked rice, folding the ingredients into each other.
- While the mixture is still hot, add Parmesan cheese and salt.
- Fluff with a fork and serve.

- Rinse the rice in a fine-mesh sieve under cold water for 30 seconds. Drain.
- Combine the rice, salt and 2 cups water in a wide, medium saucepan and bring the water to a boil. Reduce the heat to low, cover and simmer until all liquid is absorbed, about 30 minutes. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.
SPINACH AND BROWN RICE CASSEROLE

- Preheat oven to 375 degrees.
- Heat oil in Dutch oven, and saute onion, mushrooms and garlic until tender.
- In a small bowl, mix egg, flour and cottage cheese. Add to sauteed vegetables, along with the spinach. Stir in rice, pepper, thyme and 1 tablespoon Parmesan cheese.
- Turn into a greased 12-by-8-inch baking dish, and top with sunflower seeds and remaining Parmesan cheese.
- Bake for at least 30 minutes.

BAKED RICE WITH SPINACH AND PARMESAN CHEESE
Steps:
- Heat the oven to 400 F.
- Grease a 3-quart baking dish or casserole.
- Peel the onion and chop it finely.
- Heat the olive oil in a medium saucepan or saute pan over medium heat. Add the finely chopped onion and cook until it is softened and translucent, stirring frequently. Add 4 1/2 cups of chicken stock and continue cooking until the stock comes to a simmer.
- Put the rice in a colander or mesh strainer and rinse with cold water.
- Transfer the rice to the prepared baking dish or casserole; add the chicken stock and onion mixture and stir the mixture gently until blended.
- Bake the rice, uncovered, in the preheated oven for 25 minutes, or until the liquid is almost absorbed. Stir the rice occasionally and add more stock, if necessary.
- Meanwhile, give the spinach a rough chop
- De-stem and chop the herbs finely.
- Remove the casserole from the oven and stir in the pepper, spinach, herbs, and Parmesan cheese. Taste the rice and add salt, if necessary. If the mixture seems dry, add more chicken stock.
- Cover the baking dish tightly with foil and return it to the oven. Bake the casserole for about 5 minutes longer, or until the rice is tender and the spinach has wilted.
- Stir the rice mixture with a fork to fluff.

SAUTEED SPINACH WITH PARMESAN CHEESE

- Thoroughly wash and dry spinach and remove stems.
- Using half the ingredients and working in batches, heat olive oil in a large skillet over moderate heat. Saute garlic about one minute. Add spinach leaves, increase heat to high, and stir until evenly wilted, about 2 minutes. Add salt, pepper, and tomatoes. Cook an additional minute. Stir in grated Parmesan, remove from heat, taste, and adjust seasonings. Serve immediately. If spinach releases too much water, you can drain mixture in a colander before serving. Taste and adjust seasonings again after draining.
KITTENCAL'S SPINACH PARMESAN RICE BAKE
This is a wonderful easy side dish to chicken or meat and any leftovers freeze wonderful, it may also be baked in a 10-inch deep-dish pie plate and cut into wedges, this may be doubled but I would still only use one package or spinach or maybe 1-1/2 packages adding in too much spinach will overpower all other ingredients, prep time does not include cooking the rice --- FOR FREEZING prepare recipe as directed but do not bake, wrap pan in plastic wrap then tightly in foil and freeze, to serve thaw over night in refrigerator, remove wrapping bake at 350°F for 25-30 minutes or until hot.

- Set oven to 350°F.
- Generously grease a 11 x 7-inch baking dish.
- In a large bowl, combine all ingredients with a wooden spoon, mixing very well to combine.
- Season with salt, pepper and cayenne to taste.

- Thaw the spinach (microwave "defrost" setting, or in a sieve under cool running water), squeeze out the extra water, set aside in the sieve to finish draining.
- Beat the eggs, shred the cheese, combine, set aside.
- Mince the onions, slice the mushrooms, or use already-sliced criminis (life is too short to slice mushrooms! IMO).
- In a medium saute pan, on med-high heat, heat half of the chicken broth, add the onions and bring to a simmer. Allow the broth to nearly cook away, while the onions become brown. Watch it - don't let it burn. As the broth simmers away, add the remaining broth and the mushrooms. Lower the heat as needed to maintain a low simmer. Give the onion/mushroom/broth mixture a stir, and when just a bit of broth is left, remove the saute pan from the heat.
- Combine all ingredients in a baking pan and put in the oven, at 325 degrees for 35 - 40 minutes.
- VERY IMPORTANT: be sure to use already-cooked rice.
- (About cooking the rice ahead - I make a large-ish batch of it, and freeze it in smaller containers; it reheats pretty well in the microwave or skillet.).

- In a large saucepan, heat the oil over medium heat.
- Add the onion and sautee for about 5 minutes or until just golden.
- Stir in the rice and water.
- Bring to a boil.
- Cover and reduce the heat to a simmer.
- Simmer, covered for about 45 minutes, or until all the water is absorbed.
- Remove from the heat.
- Preheat oven to 350°F Oil a 8x8 baking dish (ceramic or glass would probably be best).
