I have been making this for years as a variation on the way my folks taught me how to make white rice.

Number Of Ingredients 6

1 cup uncooked brown rice
2 tablespoons butter or 2 tablespoons olive oil (or a combination)
1/4 cup toasted sesame seeds
1 small onion, chopped
2 cups chicken broth (preferred) or 2 cups very hot tap water
1 teaspoon salt (decrease or delete if chicken broth is salted, required with water)

Steps:

  • Saute rice in butter just until translucent and very lightly browned.
  • Add onion and sesame seeds, and continue browning until onion is translucent, stirring frequently to prevent onion from burning.
  • Drain any excess butter or olive oil.
  • Add stock or water carefully to prevent steam burns; it WILL blow steam!
  • Adjust heat for a slow simmer, cover, and cook about 45-50 minutes, stirring gently every 15 minutes.
  • If all liquid is not absorbed, remove cover and continue cooking for up to another 15 minutes.
  • Fluff with a fork before serving.

We've lightened our version up by giving the chicken a quick marinade in soy and honey instead of coating and deep-frying it as most restaurants do. Steamed snow peas and brown rice round out the meal.

5 tablespoons low-sodium soy sauce
4 teaspoons toasted sesame oil
2 teaspoons honey
1 1/4 pounds skinless, boneless chicken breasts, cut into 3/4-inch chunks
6 teaspoons canola oil
2 scallions, thinly sliced
1 tablespoon grated peeled ginger
3 cloves garlic, minced
1 1/4 cups low-sodium chicken broth
3 tablespoons sugar
3 to 4 teaspoons cornstarch
1 tablespoon rice vinegar
1 teaspoon chili paste
4 cups snow peas, trimmed
Cooked brown rice, for serving (optional)
2 tablespoons toasted sesame seeds

Steps:

  • Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey together in a medium bowl. Add the chicken, toss and marinate 20 minutes.
  • Remove the chicken from the marinade using a slotted spoon. Heat 2 teaspoons canola oil in a nonstick skillet over medium-high heat. Cook the chicken in 2 batches, turning once or twice, until browned, 3 to 5 minutes (add 2 more teaspoons canola oil between batches). Transfer the chicken to a plate and wipe out the skillet.
  • Heat the remaining 2 teaspoons canola oil in the skillet. Add the scallions, reserving some of the green parts for topping. Add the ginger and garlic and cook, stirring, 1 minute. Whisk the broth, sugar, cornstarch, vinegar, chili paste and the remaining 2 tablespoons soy sauce in a bowl; add to the skillet and cook, stirring, until thickened, 3 to 4 minutes. Stir in the remaining 2 teaspoons sesame oil.
  • Meanwhile, cook the snow peas in a steamer basket set over a few inches of boiling water until crisp-tender, 2 to 3 minutes.
  • Return the chicken to the skillet with the sauce and heat through. Serve the chicken and snow peas over brown rice, if desired. Top with the sesame seeds and reserved scallion greens.

3 cups frozen cooked brown rice
1 pound skin-on salmon fillets
Kosher salt and freshly ground pepper
1/4 cup plus 1 tablespoon ponzu sauce
2 tablespoons toasted sesame oil
2 tablespoons finely chopped pickled ginger, plus 1 tablespoon brine
1/2 teaspoon wasabi paste
3 Persian cucumbers, thinly sliced
4 cups baby kale salad mix
8 strips salted seaweed snacks, torn into small pieces
2 teaspoons toasted sesame seeds

Steps:

  • Heat the brown rice as the label directs; let cool slightly. Meanwhile, preheat the broiler and line a baking sheet with foil. Place the salmon skin-side down on the baking sheet and season with salt and pepper. Brush with 1 tablespoon ponzu sauce. Let sit at room temperature, 10 minutes.
  • Whisk the remaining 1/4 cup ponzu sauce with the sesame oil, pickled ginger and brine and wasabi paste in a large bowl. Set aside 3 tablespoons of the dressing for topping. Toss the rice with the remaining dressing; season with salt and pepper.
  • Broil the salmon until just cooked through and lightly charred on top, 5 to 8 minutes, depending on the thickness. Flake the salmon into large pieces, discarding the skin.
  • Divide the rice mixture among bowls. Top with the salmon, cucumbers and salad mix. Drizzle with the reserved 3 tablespoons dressing. Season with salt and pepper. Top with the seaweed and sesame seeds.

1/2 cup uncooked long grain rice

1 cup chopped onion
1 tablespoon extra virgin olive oil
1 1/2 cups brown basmati rice (or other long grain brown rice)
4 garlic cloves, crushed through a press
3 cups water
1 teaspoon salt
1 cup broccoli floret
1 cup cut green beans
1 cup diced yellow squash
1/2 cup coarsely shredded carrot
1/3 cup diced red bell pepper
1 tablespoon hulled sesame seeds, toasted in a dry skillet
1 teaspoon dark sesame oil

Steps:

  • Combine the onion and oil in a large shallow saucepan (with a tight fitting lid).
  • Cook over low heat, stirring frequently, for 10 minutes or until onion is golden.
  • Stir in the rice and cook 1 minute.
  • Add in the garlic; cook, stirring, for 1 minute.
  • Add the water; bring to a boil; add in the salt, stir thoroughly, cover and cook 35-40 minutes or until almost all the liquid is absorbed (do not stir).
  • Uncover the pot and while it is still on the heat, sprinkle the broccoli, green beans, squash, carrot, and red bell pepper evenly over the surface of the rice.
  • Cover and cook for 6-8 minutes or until the vegetables are crisp-tender and the rice is cooked.
  • Sprinkle with the sesame seeds and drizzle with the sesame oil.
  • Spoon into a serving dish and serve immediately.

Yes, I have been in the kitchen making fried rice again! Fried rice is one of my favorites. The sesame seeds in this version offer a delicious nutty taste that makes this perfect to accompany Chinese stir-fries, Japanese teppanyaki, and Korean bulgoki. The use of brown rice should gain approval from those trying to cut carbs. Of course, they want it to be delicious, and I assure you that this is every bit as tasty as my fried rice (Recipe #38748).

8 ounces diced cooked pork loin (or other meat, shrimp or tofu, etc.)
1 tablespoon dark sesame oil
2 eggs, lightly beaten
1 cup chopped onion
1/3 cup chopped carrot
1 cup bean sprouts
3 scallions or 3 green onions, chopped
1/2 cup frozen peas, thawed
4 cups cooked short grain brown rice (or may use any rice you like)
2 tablespoons toasted sesame seeds
4 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup soy sauce (however much you like)
coconut oil or wok oil, as needed

Steps:

  • Use small cereal bowls to assemble ingredients.
  • Place chopped pork in a small bowl and toss with the sesame oil and set aside.
  • Whisk two eggs in a small bowl and set aside.
  • Place chopped onion and carrots in a small bowl together and set aside.
  • Place bean sprouts, peas, and scallions in a small bowl together and set aside.
  • Heat 2 tablespoons coconut oil in a wok until hot and cook egg, swivelling wok to keep the runny portion in motion until it sets, then flip the omelet and cook briefly on the other side. Remove to platter and chop into small pieces.
  • Add 2 more tablespoons wok oil to wok and add the contents of the bowl with onions and carrots. Cook until carrots soften, then add pork, and cook and stir until all are hot and sizzling. Remove to the platter with eggs.
  • Heat 4 tablespoons butter in the wok with 2 tablespoons coconut or wok oil. Add rice, and season with salt and pepper, adding sesame seeds at this time as well, cooking and stirring until rice is hot and sizzling.
  • Add ingredients from the platter along with soy sauce, and stir until well mixed.
  • Place on a large platter and serve hot.

1 1/2 teaspoons dark toasted sesame oil
1 1/2 cups water
1/3 cup minced scallion
2 tablespoons toasted sesame seeds
2 -3 teaspoons soy sauce, to taste

Steps:

  • In a saucepan with a tight-fitting lid, toss the rice with 1/2 teaspoons of the sesame oil to coat the grains.
  • Add the water, cover, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 to 45 minutes.
  • Stir in the scallions, sesame seeds, the remaining sesame oil, and soy sauce to taste.
  • Enjoy!
  • Note:.
  • Toast sesame seeds in a single layer on an unoiled baking tray at 350*F for 2 to 3 minutes, until fragrant and golden.
  • Watch carefully, so as not to burn!
