CHEESY PEPPERONI BUTTER TOAST
I have two words that will change your world: pepperoni butter. Just blitz up some soft butter with a chunk of pepperoni. Of course, using good-quality pepperoni makes a difference, and I recommend buying it from a deli as a whole piece rather than presliced, since the latter can get dry ( 'nduja, a soft spiced-meat mixture, or mortadella are both fantastic too). With fresh mozzarella melted over the top until molten, this toast is like pizza bread 2.0. If you have leftover pepperoni butter, try melting a knob into warmed pasta sauce-it transforms even the plainest red sauce into a nuanced and spectacularly spiced ragu.

- 1. Make the pepperoni butter: In a food processor, combine the butter, pepperoni, smoked paprika, and red pepper flakes and process until well combined. The final mixture should be semi-smooth.
- 2. Make the toast: Spread a generous amount of the pepperoni butter over each slice of bread. Position an oven rack in the top third of the oven, 3-5 inches (7.5-10 cm) from the broiler (grill) element, and preheat to high. If you have an old-school broiler drawer beneath your oven, you can get a better result by setting the baking sheet on top of a muffin tin, thereby elevating the baking sheet to 2-3 inches (5-7.5 cm) from the heating element. Set the bread on a foil-lined baking sheet and broil until golden brown, about 2-3 minutes (watch the bread closely as broiler intensities vary--never walk away from food under the broiler!). Flip the bread slices and toast the other side until golden brown, another 1-2 minutes.
- 3. Place 2 pieces of mozzarella over each bread slice (overlapping if necessary), set on the baking sheet, and broil until the cheese is melted and browned, 2-3 minutes (watch the cheese closely as the broiler intensities vary).
- 4. To serve, top each toast with 1 tablespoon basil and sprinkle with salt.
ROASTED TOMATO AND BUTTER BEAN TOASTS
These are designed to be the perfect party bite. A toasted baguette base is topped with sage-flecked butter beans, juicy roasted cherry tomatoes and a few sprigs of chives to finish this flavor sensation.

- Preheat the oven to 350 degrees F.
- Arrange the butter beans on one side of a baking dish and the tomatoes on the other side. Drizzle with 2 tablespoons olive oil, the 2 sliced garlic cloves and a sprinkle of sea salt all over.
- Sprinkle the sage only over the butterbeans and drizzle the Worcestershire sauce only over the tomatoes. Toss each section individually with a couple of spoons and keep separate, to keep the flavors separate.
- Bake until the butter beans start to turn golden and the cherry tomatoes are soft and roasted, about 15 minutes. Remove from the oven.
- Meanwhile, put the slices of baguette on a baking sheet, drizzle each with 1/2 tablespoon olive oil and toast in the oven until golden, about 12 minutes. Then remove to cool.
- When the toasts are cool, rub one side of each with the remaining whole garlic clove.
- To assemble, lay some of the butter beans (about 4) on each toast, pressing down gently with a fork to slightly crush so they do not roll around. Arrange 2 roasted tomatoes on top and garnish with a few chives. Arrange on a serving plate and eat!
TOMATO TOAST WITH BUTTERED SHRIMP
Crisp, golden-brown toast is the perfect bed for impossibly ripe tomatoes, made even better when topped with saucy, garlicky shrimp. These fully assembled tomato toasts may require a knife and fork to properly tackle, but they are also wonderful eaten with your hands. Keeping the tails on the shrimp makes for a festive presentation, but feel free to remove them so you don't have to deal with them as you eat.

- Finely chop 2 cloves of garlic and add to a small bowl with parsley; season with salt and pepper and set aside. Thinly slice remaining 4 garlic cloves; set aside.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add bread and toast until golden brown on one side, 2 to 3 minutes. Turn bread, adding another drizzle of olive oil as needed and toast on the other side, another 2 to 3 minutes. Transfer to a large serving platter and set aside.
- Heat butter and remaining 2 tablespoons olive oil in the same skillet. Add the sliced garlic and season with salt and pepper. Cook, swirling skillet occasionally, until the butter starts to brown and the garlic is golden, 2 to 3 minutes.
- Add shrimp and season with salt and pepper. Cook, tossing occasionally, until shrimp are bright pink and just cooked through, 3 to 4 minutes. Add white wine, if using, and let cook for a minute or two, just to take the edge off the wine (don't reduce so much that you lose that sauciness, though). Remove pan from heat.
- Place tomatoes on top of toast and sprinkle with half of the parsley-garlic mixture. Spoon shrimp and any buttery sauce in the skillet over the tomatoes and toast. Finish with remaining parsley-garlic mixture and serve with lemon wedges alongside.
BROWN BUTTER TOMATO TOASTS
Steps:
- Brown the butter: In a small saute pan over medium heat, melt the butter. Continue stirring and cooking the butter after it has fully melted; it should start to bubble.As the butter cooks, the color will slowly change to a golden brown and it will smell nutty and caramelized. Pull the butter off the heat once a light brown color has been reached, about 3-4 minutes total.
- Brush both sides of each piece of bread with a little olive oil. Grill over high heat until toasted, 1-2 minutes per side.
- Thickly slice the tomatoes. Layer tomato slices over the grilled bread.
- Drizzle the browned butter over the tomatoes, then sprinkle with salt and pepper.
- Serve immediately.

- 1. Heat the butter and olive oil in a large saucepan and sauté the onion and garlic until the onion is translucent, about 5 minutes. Add the tomatoes, water, cream, salt, red pepper flakes, celery seed, oregano, and sugar. Bring to a boil, then lower the heat to a simmer and simmer for 15 minutes.
- 2. Remove from the heat and puree in batches in the container of a blender. Return the soup to the pot and reheat to a simmer, seasoning to taste with more salt and pepper.

Heat the butter in a small pan over medium heat and cook, stirring often, until the butter is golden brown and aromatic, about 3 minutes after the butter melts. Remove from the heat. Put the bread cubes in a bowl and pour the brown butter over them, tossing to coat. Season to taste with salt and pepper and toss again. Spread the bread cubes on a baking sheet and place it in the oven. Bake until the croutons are toasted and golden, about 20 minutes, stirring occasionally. Remove the pan from the oven.
- 4. Serve the soup hot, garnished with the croutons.
