HONEY WHOLE WHEAT ROLLS
Most of the farmers in our area grow wheat, so this recipe definitely represents my region. I bake these rolls often, especially when I'm making soup or stew. -Celecia Stoup, Hobart, Oklahoma

Steps:
- In a small bowl, dissolve yeast in warm water. In a large bowl, combine butter, honey, egg, whole wheat flour, oats, salt, yeast mixture and 1 cup all-purpose flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough; shape into 15 balls. Place in a greased 13x9-in. pan. Cover with a kitchen towel; let rise in warm place until doubled, about 45 minutes. Preheat oven to 375°., Bake until golden brown, about 20 minutes. If desired, brush with additional butter. Serve warm.

EASY (BREAD MACHINE!) HONEY WHEAT SANDWICH ROLLS
With honey and butter in these sandwich buns you CAN'T go wrong! Let your bread machine do all the work; all you have to do is shape, bake, and eat them... PLEASE NOTE: Prep time includes assembling ingredients in bread pan, time in dough cycle, and rising time.

Steps:
- 1. Place warm milk, beaten egg, softened butter, honey, and salt in bread pan.
- 2. Add bread machine flour and whole wheat flour to bread pan.
- 3. Top flours w/ bread machine yeast. Place pan in bread machine, select dough cycle and start.
- 4. When dough cycle is complete, turn dough ball out onto lightly floured surface. Roll out dough to 3/4 inch thickness.
- 5. Cut out rolls w/ 4 inch diameter biscuit cutter. (I like bigger rolls so I use top of tumbler 5-6 inches diameter). This will, of course, produce fewer sandwich buns.
- 6. Place cut out dough rounds on lightly greased cookie sheets; cover and let rise until doubled in size (about 1 hour). Meanwhile, preheat oven to 350 degrees F.
- 7. Bake in preheated oven 10-15 minutes (time will be determined by bun size). When rolls are baked, brush tops w/ melted butter if desired. Allow to cool thoroughly before slicing horizontally w/ bread knife. HAVE A HAPPY SANDWICH!
BREAD MACHINE WHOLE WHEAT ROLLS
This easy recipe is from my Welbilt bread machine manual. The molasses and honey give the rolls a delicious, but not overly sweet taste. I usually cut this recipe in half but use the same amount of yeast. These rolls are always served for our Thanksgiving meal. Leftover (day old) rolls make perfect croutons or breadcrumbs.

- Place the ingredients into the bread baking pan as recommended by your bread machine's manual. Use the DOUGH cycle setting.
- To hand shape the roll, once the dough cycle is complete remove the dough to a lightly floured cutting board. Divide the dough into 12 equal pieces and shape into balls. Place the rolls into greased muffin tins, brush lightly with melted butter or butter substitute. Cover with a piece of wax paper and a clean cloth and let rise in a warm place for about 15-20 minutes.
- Bake the rolls at 375°F for 15-20 minutes.
- Refrigerate leftovers.
- *NOTE: Here's a trick to measure the honey and molasses easily. By measuring the oil first, the oil coats the measuring utensil. Then when you measure out the honey and molasses the two ingredients slide off easily into the bread machine pan.

- In a large bowl, combine 2 cups bread flour, sugar, yeast and salt. In a small saucepan, heat the milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Beat in eggs. Stir in whole wheat flour and enough remaining bread flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Cover and let rest 15 minutes., Divide dough into thirds. Roll each portion into a 20-in. rope. Cut each into 20 pieces; shape each into a ball. Grease three 9-in. round baking pans; arrange 20 balls in each pan. Cover and refrigerate overnight., Let rise in a warm place until doubled, about 1-1/4 hours. My mother makes these on every major holiday...and they are always a hit with family. They disappear immediately..so if you're serving a big group of people, make a double batch (but not at the same time..your bread machine will overflow!).

- Put in bread machine in order given. When adding the yeast, make a hole in flour and put yeast in the hole.
- Put on dough cycle.
- On lightly floured surface, divide dough into 20 equal parts and shape into smooth balls.
- Place balls in greased 9 X 13 pan.
- Heat oven to 350 degrees.
- Cover with clean cloth/towel and let rise in warm place until double in size (20 to 30 minutes).
- Bake 20 to 25 minutes or until light golden brown.
- Heat butter and honey in microwave and brush over rolls.
- Remove immediately from pan.
- Enjoy this delicious treat.
