3 pounds (1.5 kg) potatoes of choice ((Chat Washed, Yukon Gold or Russet Potatoes), peeled)
6 oz (185 g) unsalted butter
4 cloves garlic, (crushed)
1/2 cup grated parmesan cheese
1 cup milk ((more if needed))

Steps:

  • Peel potatoes and cut into large chunks. Boil in salted water for 20 minutes or until fork tender (not falling apart).
  • Halfway through cooking time, prepare browned butter: Heat butter in a small pan over medium-heat.
  • When butter begins to foam, add the crushed garlic and reduce heat to medium. Stir continuously and swirl the pan until the butter it begins to change colour and turn golden brown with a nutty aroma. Its normal to see crispy little brown bits at the bottom of the pan. Remove immediately from heat. Set aside.
  • Drain potatoes and transfer them back to the pot.
  • Strain just over half of the browned butter over the boiled potatoes through a sieve. Reserve crispy garlic pieces to serve later.
  • Add the parmesan cheese and milk. Beat with a hand beater until smooth and creamy (about 1-2 minutes) -- or use a potato masher. Add extra milk if you like a thinner mashed potato consistency.
  • Taste test and season with more salt if needed.
  • Serve with reserved browned butter, extra parmesan cheese, chopped parsley and crispy garlic pieces.

5 large whole russet potatoes ((peeled and cut into large chunks))
1 - 1 1/2 cups half and half
1 1/2 teaspoons minced garlic ((or 3 whole cloves, chopped))
15 leaves fresh sage ((finely chopped))
1/2 cup salted butter
2 tablespoons Parmesan cheese ((freshly grated))
2 tablespoons Grueyre cheese ((freshly grated))
1/2 teaspoon garlic powder
1/2 teaspoon salt
additional salt and pepper to taste

Steps:

  • In a large pot add in potatoes, garlic cloves, salt to taste, and enough water to cover over an inch over the potatoes. Bring water to a boil and lower heat to a slow boil and allow to cook for 25-30 minutes, or until potatoes are fork tender.
  • Once potatoes are fork tender, drain potatoes and garlic and place in a very large mixing bowl.
  • In a medium saucepan, over medium high heat add in butter and allow butter to melt.
  • Once butter has melted, add in sage leaves. Cook together while mixing occasionally until butter turns into a nice golden brown.
  • Once butter has browned, remove from heat and allow butter to cool slightly before slowly adding in half and half. Stir gently and add in cheeses. Stir to incorporate together.
  • Using a potato masher (or a hand mixer) mash potatoes, adding in milk mixture little by little until as creamy as desired. Once potatoes are creamed add garlic powder and salt, then taste for seasonings. If desired, add in more salt and pepper.
  • Serve warm.

1 tablespoon salt
1 cup whole milk
1/2 cup sour cream
3/4 cup unsalted butter
2 bunches scallions, cut crosswise into 1/2 inch pieces

Steps:

  • Cover potatoes with cold water by 2 inches in a 5-to 6-quart heavy stock pot and add 1 1/2 teaspoons salt.
  • Bring to a boil, then reduce heat to a simmer, uncovered, until potatoes are tender, 10-15 minutes.
  • Drain potatoes in a collander, then return to pot and cook over moderate heat, shaking pot ocasionally, until dry, 1 to 2 minutes.
  • Mash hot potatoes with masher or force through food mill into another pot, then cover to keep warm.
  • Bring milk with 1 1/2 teaspoons salt just to a boil in a 1-quart saucepan, then remove from heat and stir into potatoes until combined.
  • Stir in sour cream, then cover and keep warm.
  • Cook butter in a 12-inch heavy skillet over moderately high heat, stirring frequently and scraping up brown bits, until foam subsides and butter is golden brown, about 8 minutes.
  • Add scallions and pepper and cook, stirring, until slightly softened, about 2 minutes.
  • Fold butter mixture into mashed potatoes and season with salt.

5 lbs russet potatoes ((peeled and chopped into 1-2 inch cubes))
1 stick unsalted butter
6 garlic cloves
1/2 cup fresh sage
1 tsp salt
1/2 tsp black pepper
1 cup milk ((fat free skim milk))

Steps:

  • Chop 5 lbs of russet potatoes into one or two inch cubes. Remove the skin for a smoother, creamier texture.
  • Add the chopped potatoes to a large pot along with 1/2 tsp of salt. Fill the pot with hot water, cover with a lid and let it boil on high heat for 20-25 minutes. Once the potatoes are fork tender, drain them and put them back into the pot.
  • While the potatoes are cooking add a stick of unsalted butter, garlic and fresh sage to a large pot and simmer on medium heat for 15 minutes. After 15 minutes remove the sage and garlic and add in the milk, mix and simmer for 5 more minutes.
  • Add the sage, brown butter and milk mixture to the pot of drained potatoes. Give everything a good mix and mash using a potato masher until you reach your desired level of smooth, creamy goodness.
  • Serve warm and enjoy!
  • Optional topping: crispy fried sage.

Got some leftover mashed potatoes? Need something different to do with them? Have them in the morning with your bacon and eggs or even as a side dish. Even though the directions seem long, these are quick and easy to prepare. Sometimes I fry up a chopped onion to go with it. I'm showing the recipe to make just one patty. You can easily change the amount you make to suit your needs. I don't normally measure anything, but gave measurements for the purpose of this recipe.

3/4 cup mashed potatoes
1/2 teaspoon flour
1/8 teaspoon parsley (or herb of your choice)
1/8 teaspoon garlic powder
salt and pepper, to taste
flour, for coating
2 teaspoons olive oil or 2 teaspoons butter, for frying

Steps:

  • Heat up a small fry pan (I use cast iron) over medium heat.
  • Meanwhile, in a small bowl, mix well the potatoes, 1/2 teaspoons of flour, herbs, garlic powder, salt and pepper together with a fork.
  • Gather up the potato mixture with your hands and form into a patty and flatten slighty.
  • Holding the patty in the palm of your hand, sprinkle a bit of flour on the patty. (I use a shaker can) Gently pat the flour onto the patty, flip over and do the same with the other side.
  • Add olive oil or butter (I sometimes use a bit of both) to the heated pan. When the oil is hot, gently place the patty into the pan. IMPORTANT: DO NOT MOVE THE PATTY AROUND. Let cook about 3-5 minutes.
  • Using a spatula and a fork, gently flip the patty over to cook on the other side. The potato should be nicely browned. Again, DO NOT move it around in the pan. Cook for another 3-5 minutes until browned and heated through.
  • Transfer to plate and cover with fried onions, if using.
  • Enjoy!
  • For Vegan omit butter.

1 1/2 packages cream cheese (12 ounces total), at room temperature
1/2 cup half-and-half
1/2 cup heavy cream
Kosher salt and freshly ground black pepper
Milk, if needed, for thinning
Chopped fresh parsley, for garnish

Steps:

  • Peel the potatoes, rinse in cold water and cut into fourths. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
  • Meanwhile, add the butter to a saucepan over medium heat. Allow the butter to brown, 2 to 3 minutes, being careful not to burn it. Swirl the pan as you go, stopping when the solids turn medium to deep golden brown.
  • Drain the potatoes, then return them to the pot. With the burner on low heat, mash the potatoes with a potato masher; the more steam that's released while you mash, the better. Mash for about 5 minutes. Turn off the burner.
  • Add the cream cheese, half-and-half, cream, some salt and pepper and three-quarters of the brown butter to the pot and stir to combine. If the mixture needs thinning, add some milk. Check the seasonings, adding salt and pepper to taste. Drizzle the remaining brown butter over the top. Sprinkle with fresh parsley.
