BROWN BUTTER CAKE WITH SPICED CHOCOLATE GANACHE AND DULCE DE LECHE

- For the cake: Melt the butter in a large shallow saucepan over medium-low heat. Cook, stirring occasionally, until the butter starts to brown and smell nutty, 10 to 12 minutes. Scrape the butter and all the browned bits into a heatproof bowl. Place the bowl over an ice bath to solidify and set aside.
- Preheat the oven to 350 degrees F. Grease three 8-inch cake pans with the 1 tablespoon butter (or spray with nonstick cooking spray) and then lightly dust with flour.
- Whisk together the 3 3/4 cups flour, baking powder, cinnamon, nutmeg, baking soda and salt in a medium bowl until well combined, then set the flour mixture aside.
- When the brown butter has solidified, scrape it into the bowl of a stand mixer fitted with the paddle attachment. Add the brown sugar and granulated sugar and beat on high speed until very light and fluffy, about 3 minutes. Scrape down the bowl and reduce the speed to medium, then add the eggs one at a time, beating after each addition and scraping the bottom of the bowl to be sure everything is well mixed.
- Add the sour cream and vanilla and beat just until well mixed, scraping down the bowl again. Add the flour mixture in three parts, alternating with the milk, beating just until incorporated. Remove the bowl from the mixer and give the batter a couple of folds with a spatula, scraping the bottom to ensure everything is evenly mixed.
- Divide the batter among the three prepared cake pans and bake until golden brown and a toothpick inserted in the center comes out mostly clean with some moist crumbs sticking to it, about 25 minutes. Place the pans on a wire rack until cool enough to handle, then invert them onto the rack and unmold the cakes. Carefully turn the cakes right-side up and let cool completely on the rack.
- For the assembly: Look at your cake layers. If any of them have a dome in the center, cut it off with a serrated knife so the entire top is flat. Place one cake layer on a cake plate or cardboard cake round. Spread vanilla frosting around the outside of one layer and then frost a 1-inch band around the top. Evenly spread half the dulce de leche in the center of the layer until you reach the 1-inch band and then sprinkle with half the sea salt. Add another cake layer and repeat with the frosting and remaining dulce de leche and sea salt. Add the last cake layer and frost the entire cake with a smooth and even layer of frosting. Refrigerate for about 30 minutes until the frosting is set and cold.
- Remove the cake from the refrigerator and place it on a serving plate or cake stand. Using a spoon, create drips with ganache around the outside of the cake from the top edge. Pour the remaining ganache in the center of the cake and spread it with an offset spatula to cover the top. Let the ganache set completely before serving.
- Place the chocolate in a heatproof bowl. Stir together the cream, cinnamon, vanilla and chili powder in a small saucepan. Heat over medium heat until it just begins to bubble around the edges, then pour it over the chocolate and let sit for about 10 seconds. Stir until smooth and shiny. Let the ganache sit until it has cooled and thickened slightly, about 5 minutes.
BROWN BUTTER CAKE WITH BROWN BUTTER FROSTING RECIPE
Steps:
- Allow the butter to cool to room temperature, stirring it every now and then with a rubber spatula, then place it in the refrigerator until cold about 30 minutes. It is crucial that the butter is chilled until solid. Once cold, re-soften the butter at room temperature for 30 to 45 minutes.
- When ready to make the cake, adjust oven rack to lower middle position and preheat the oven to 350°F. Lightly butter an 8- by 4 1/2-inch (2-quart) loaf pan and dust is with a tablespoon of flour.
- Beat the brown butter in the bowl of a stand mixer fitted with a paddle attachment at medium speed until creamy and lightened in color, about 2 minutes. Add sugar and continue to beat until the mixture looks fluffy, 2 to 3 minutes, scraping down the bowl with a rubber spatula every now and then. Once the mixture is fluffy, add eggs one at a time, mixing well (about 2 minutes) after each addition. Again, scrape the sides and bottom of the bowl every now and then.
- Once all the eggs have been added to the stand mixer, combine flour, salt and baking powder in a bowl and stir to combine. Combine the milk and vanilla in a separate bowl. Add half the flour mixture to the mixer and fold with a rubber spatula until somewhat incorporated. Mix on medium speed until the batter looks smooth. Add the milk mixture and beat on medium speed until smooth. Add the remaining flour mixture and mix well, 1 to 2 minutes, until the mixture looks smooth. Make sure to scrape the sides and bottom of the bowl with a rubber spatula every now and then as you mix.
- Pour the batter into the prepared cake pan. Rap the pan sharply on the counter to remove any air bubbles. Bake the cake for 30 minutes. After 30 minutes of baking, cover the top of the cake loosely with aluminum foil to prevent the cake from browning too much. Continue baking until a tester inserted into the center of the cake comes out clean, about 20 minutes longer. Remove from the oven and allow the cake to cool for 15 minutes in the pan before turning cake out on a wire rack. Allow cake to cool to room temperature before frosting.
- For the Frosting: brown the butter, following the process explained in steps 1 and 2. Add the powdered sugar and whisk until incorporated. Add the water one teaspoon at a time (mixing well after each addition). Add vanilla and whisk until the mixture looks smooth.
- Using the back of a spoon, slather the frosting on top of the cake. Place the cake in the refrigerator until the frosting has firmed up, about 20 minutes. Cut into slices and serve. Store the cake in an airtight container in the refrigerator for up to 3 days.

- In a small saucepan, melt butter over medium-high heat until nut-brown in color, about 10 minutes. Remove pan from heat, and pour butter into a bowl, leaving any burned sediment behind.
- Add sugar, vanilla, and 1 tablespoon milk; stir until smooth. If the icing is too thick, add the remaining tablespoon milk, a little at a time, until consistency is spreadable. Let cool 5 minutes. Use immediately.
CARDAMOM, BROWN BUTTER CARROT CAKE WITH ESPRESSO FROSTING
Steps:
- For the spiced carrot cake: Preheat the oven to 350 degrees F. Butter a 9-by-9-by-3-inch square baking pan. Line the pan with parchment paper and butter and flour the paper.
- Brown the butter in a small stainless-steel saucepan over medium-high heat. It should melt, foam and then the foam should subside. When you smell a nutty aroma, remove the butter from the heat. Remember that it will continue to brown as it cools.
- Combine the flour, baking powder, baking soda, cardamom, cinnamon, cloves and salt in a medium bowl. Whisk together the olive oil, vegetable oil, browned butter and vanilla in a medium bowl. Mix the eggs, granulated sugar and brown sugar in an electric mixer until fluffy, about 4 minutes.
- Drizzle the oil mixture into the mixer and whisk until light and fluffy, 2 to 3 minutes. Transfer to a large mixing bowl and fold the dry ingredients into the mixture with a rubber spatula until combined, then stir in the carrots. Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes.
- For the frosting: Dissolve the espresso powder in 2 tablespoons of hot water. Beat the cream cheese and butter in a large bowl with an electric mixer on medium speed until fluffy, about 3 minutes. Add the confectioners' sugar, espresso and cardamom and beat until light and fluffy.
- To assemble: Remove the cake from the pan and let cool on a wire rack. Cut into 9 squares, then split each square in half horizontally. Spread some of the icing between two cake layers, then generously spread icing over the top and garnish with the candied walnuts.
GREEN TOMATO CAKE WITH BROWN BUTTER ICING
I thought that this was an interesting use of green tomatoes. The cake is rich made as directed, but I think that it could be lightened easily.

- Preheat oven to 350 degrees F.
- Grease and flour a 12 cup bundt pan.
- Beat butter and sugar with a mixer until creamy.
- Add eggs, 1 at a time, beating well after each addition.
- Combine flour, cinnamon, baking powder, salt, and nutmeg.
- Gradually add dry ingrediens to butter mixture, beating well. (Batter will be soft.)
- Stir in tomatoes, raisins, and walnuts. Spoon batter into prepared pan. Bake for 70 to 75 minutes, or until a tester inserted in center comes out clean.
- Let cool in pan on wire rack for 10 minutes. Remove from pan, and let cool completely.
- Icing: In a medium saucepan over low heat, melt butter. Cook 6 to 8 minutes, or until butter is lightly browned. Whisk in confectioners' sugar until smooth.
- Spoon Browned Butter Icing over cake.
