If you like rolls with a tough crust, this is your roll. These are exactly like the rolls I ate when I lived in Germany. My brother found this recipe and had me test it out. Turns out really yummy.

Number Of Ingredients 7

2 1/2-3 cups flour
2 1/2 teaspoons dry active yeast
1 teaspoon sugar
1 teaspoon salt
1 teaspoon oil
1 cup warm water
1 egg white

Steps:

  • Preheat oven to 450°F.
  • Pour 2 1/2 cups flour into a large bowl and form a well in the center.
  • In a separate container, mix yeast, sugar, and two tablespoons water (water comes from the 1 cup above).
  • Pour yeast mixture into the well but do not mix with the flour at this time.
  • Cover bowl with a cloth and set it in a warm place for 15 minutes to rise.
  • Add remaining water and oil and beat until mixed. Add SALT.
  • Turn dough out onto counter and knead until smooth. Adding remaining 1/2 cup flour as needed.
  • Put dough in bowl, cover and let rise until double in size. (about 30-40 minutes).
  • Punch down and divide dough into 12 parts.
  • Shape into oval rolls and place 3" apart on greased and floured cookie sheet.
  • Cover and let rise until double in size.
  • Beat egg white and 1 tsp water with a fork until frothy and brush onto rolls.
  • Bake for 15-20 minutes or until golden brown.
  • The time is an estimate, depending on how fast your dough rises.

When I was living & working in Germany, I would go out every morning for breakfast, & every morning I would eat these little babies! This is a traditional recipe for Brotchen. If you like light, fluffy bread rolls DON'T try these! Brotchen are crusty on the outside but are chewy & quite dense on the inside.........

25 g active dry yeast
10 g white sugar
590 ml warm water (110 degrees F)
25 g shortening
10 g salt
875 g all-purpose flour
3 egg whites, stiffly beaten
1 egg white (for egg wash)
30 ml cold milk

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy; about 10 minutes.
  • Mix in shortening, salt and 3 cups of the flour. Beat with dough whisk or heavy spoon for 2 minutes. Fold in egg whites. Gradually add flour 1/4 cup at a time, until dough forms a mass and begins to pull away from bowl.
  • Turn onto a floured surface. Knead, adding more flour as necessary, for 8 to 10 minutes, until smooth and elastic with bubbles.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour. Deflate the dough, form into a round and let rise again until doubled, about 45 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into 24 equal pieces and form into oval rolls about 3 1/2 inches long. Place on lightly greased baking sheets, cover and let rise until doubled in volume, about 40 minutes.
  • Place an empty baking sheet on the bottom rack of the oven. In a small bowl, lightly beat the egg white with the 2 tablespoons of milk to make the egg wash. Lightly brush the risen rolls with the egg wash. Place 1 cup of ice cubes on the hot baking sheet in the oven and immediately place the rolls in the oven.
  • Bake at 425 degrees F (220 degrees C) for about 20 minutes or until the tops are golden brown. Remove to a wire rack and cool.

2 ¼ cups whole wheat flour, or more as needed, divided
1 teaspoon salt
1 teaspoon dried sage
1 cup warm water, divided
1 teaspoon honey
1 (.25 ounce) package quick-rise active dry yeast
2 teaspoons olive oil, divided
1 egg white, beaten

Steps:

  • Mix flour, salt, and sage together in a large bowl. Form a well in the center.
  • Mix 2 teaspoons warm water, honey, and yeast together in a small bowl. Pour mixture into the well without mixing. Cover bowl with a cloth; set in a warm area for 15 minutes.
  • Pour the remaining water and 1 teaspoon olive oil into the flour-yeast mixture; stir with a wooden spoon until dough sticks together. Cover with a cloth and keep warm. Let rise until doubled in volume, about 1 hour.
  • Punch down dough and turn onto a lightly floured surface. Knead until smooth, using the remaining flour as needed. Return to the bowl; cover and let rise until doubled in volume, about 40 minutes.
  • Grease a baking sheet with the remaining olive oil; lightly dust with flour.
  • Punch down the dough; divide into 12 equal parts. Shape into ovals and cut a cross on top of each roll with a butter knife. Place rolls on the prepared baking sheet. Cover with a cloth and let rise until doubled in volume, about 40 minutes. Brush the rolls with egg white.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Bake rolls in the preheated oven until golden, about 15 minutes.

These are traditional German bread rolls made from pretzel dough- so the dough can also be used to make pretzels (Brezen). A Betty Bossi recipe. Preparation time includes rising time. Dough could initially be done in the breadmaker.

500 g plain flour
1 1/2 teaspoons salt
10 g yeast
1 teaspoon malt extract
2 tablespoons butter (soft)
150 ml milk, mixed with
150 ml water
1 liter water
1 tablespoon salt
80 -100 g bicarbonate of soda
coarse salt, extra

Steps:

  • Mix the first 6 ingredients together and knead to a soft dough, about 10 minutes.
  • Then let it rest in an oiled bowl, covered, until the dough has doubled in size (about 1 hour).
  • Form into 14 bread rolls/pretzels/croissants. Place on baking paper well spaced, and allow to rise again (about 20-40 minutes).
  • Mix the water, salt and bicarb in a stainless steel pan and bring to the boil. Take it off the heat.
  • Take the risen bread rolls, and using a slotted spoon, dip them one by one in the bicarb water, drain well and set back on the paper.
  • Cut slits in the bread rolls with a sharp knife and sprinkle with extra coarse salt.
  • Bake for 20-25 minutes in the middle of a preheated 200 degree Celcius oven.
