BROWN SUGAR GRILLED SALMON
Part of our annual trek to the mountains is cooking out streamside. This year I decided to try salmon and found this recipe on another site. I scaled it back to feed 2 and marinated the fish for about 6 hours. It was spectacular. You can baste the fish while it's cooking if you wish, but not necessary. We used a grill basket and oiled it first to prevent sticking.

From howsweeteats.com

- In a bowl, combine brown sugar, paprika, garlic powder, salt, pepper and red pepper flakes, mixing well.
- Heat the broiler on your oven to high, and place the oven rack as high as it will go. Place salmon filet on a baking sheet and rub brown sugar mixture all over top. I tend to buy a piece of salmon with skin on, so I place the salmon skin side down on the baking sheet and just rub the spices on top. Place under the broiler and broil for 5-6 minutes, until sugar begins to caramelize and get golden. Serve immediately!
- It is pretty important to use a piece of salmon that is no thicker than one inch – if your salmon is thicker, I suggest flipping the salmon after 5 minutes and broiling for another 2-3 (this requires that the skin be removed) OR lowering your oven rack one level down – this will prevent the sugar from burning since you have to broil longer. After the initial 5 minutes, the sugar may be a bit smokey but it should not burn.

- For the crispy skin salmon, store the salmon filets in the fridge skin side up for 30-60 minutes. The goal is to dry out the skin which helps make it crispy.
- When buying salmon for the fish cakes, ask the fish person to remove the skin for you, they will be more than happy to do it. On a plastic cutting board, cut the salmon into large cubes and then chop until the texture is fine, but still has some small chunks of fish here and there(check video to see how I do this).
- For the broiled and glazed salmon, season the top of each salmon filet with the 1 tablespoon of brown sugar, some lemon & orange zest, and a nice pinch of salt.

- For the bourbon glaze: In a small saucepan over medium heat, combine the bourbon, brown sugar, Worcestershire sauce, honey, Dijon mustard, vinegar, garlic powder, and 1 teaspoon kosher salt. Simmer the mixture, stirring frequently until the sugar has dissolved. Continue to gently simmer the glaze, without stirring, until it has reduced by half, 12 to 15 minutes. Cool for at least 15 minutes before using, to give it a chance to thicken up.
- For the salmon: Position a rack in the upper third of the oven and preheat the broiler. Line a baking sheet with parchment paper. Season the flesh side of each fish fillet with 1/2 teaspoon salt and 1/2 teaspoon pepper (or if they don’t have skin, sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on each side). Place them, skin-side down, side by side on the baking sheet. Broil for 4 minutes. Remove the salmon from the oven and, using a pastry brush, brush liberally with some of the bourbon sauce. Return the baking sheet to the broiler for 1 minute. Or, if you fillets are particularly thick, check for doneness, and if necessary, go a little longer.
- Brush the fillets again with the bourbon sauce and transfer to a platter. Pour the extra sauce into a serving dish, and serve alongside the salmon for drizzling and dipping. (If you brush the sauce on too soon, the sugars in the glaze could burn, so doing it toward the end of cooking and then once more when the fish is out of the oven works out perfectly.)

- Lay the salmon out on a large 9x13 dish and sprinkle with one cup of brown sugar. Squeeze the juice out of two lemons and cover the brown sugar to make it a paste.
- Use a Copper Grilling Mat for the grill. It stops the sugary marinade from dripping into the coals and creating flare ups and smoke.

- Combine all marinade ingredients in a small bowl. Place the salmon in a large zip-tight bag or shallow glass baking dish and add the marinade, turning to coat the fish entirely. Seal tightly or cover with plastic wrap and marinate in the refrigerator for 1-3 hours.
- Preheat grill to medium-high heat. Take a large piece of heavy-duty aluminum foil and remove the salmon from the marinade, laying it skin side down in the center of the piece of foil. Fold the long sides up and then over themselves, repeating with the short sides, to create a sealed packet containing the salmon.
- Transfer the foil-wrapped salmon to the hot grill over indirect heat not directly over the flames and close the grill lid. Cook for 15-18 minutes until almost entirely cooked through. Brush the grill grates directly over the flames with a little oil, then carefully open the foil packet and using one of the long edges of the foil, and flip the salmon directly onto the grill grates over direct heat to char the top. Grill just until cooked through, and grill marks appear (1-2 minutes) being careful not to overcook, the use two large spatulas to remove the salmon from the grill.
