HOMEMADE BUTTERY ENGLISH MUFFINS
Homemade English Muffins! Oh boy! Never again be fobbed off with those little white sponges sold in grocery stores. I have called for whole wheat flour because that is what I use, but you can certainly use all or part hard unbleached (white) flour. The ascorbic acid (Vitamin C powder) is available in bulk food stores, but you will not need it unless your flour is organic, and does not have dough conditioners added. Don't be put off by the length of the instructions, these are really quite easy. You can even make the dough in your bread machine.

Steps:
- Heat the milk and butter to blood temperature.
- Test a drop on your wrist-- it should feel barely warm.
- Beat in the egg.
- Dissolve the yeast in the milk mixture.
- Measure the flour into a bowl and stir in the salt.
- Make a well in the middle and pour in the milk mixture.
- Mix well.
- Turn out the dough and knead it until it is smooth and elastic, about 10 minutes.
- Put the dough back into a clean, oiled bowl and turn it over (so it is coated in the oil.) Cover it with a damp teatowel and let it rise for about 2 hours, until doubled in volume.
- Punch it down, then turn it out and roll it into a cylinder, about 1 1/2" in diameter.
- Cut it into 16 equal slices.
- They should be 1/2" thick; flatten them slightly if required.
- Arrange these on an oiled cookie sheet or on waxed paper.
- Cover them with the damp towel and let rise another 2 hours, until doubled in size again.
- Bake them in a heavy, ungreased, cast iron skillet at a temperature just slightly lower than for pancakes.
- (Medium-low heat.) They should be lightly browned.
- Turn them once, and bake the other side.
- Each side should take 3 to 5 minutes.
- To serve the muffins, they should be split and toasted.
- (They will be just barely cooked in the middle otherwise.) These can also be made in a bread machine on the dough cycle.
- Put the wet ingredients in first, and follow with the dry ingredients.
- Run the dough cycle.
- Let rise for the first time, then follow the instructions above from that point, step ten.
ENGLISH MUFFIN PATTY MELTS
English muffins are the perfect vehicle for this twist on a patty melt because they toast as you're melting the super gooey cheese, plus the nooks and crannies of the buns soak up all the juices of the special sauce, patty and caramelized onions!

- Put 2 tablespoons butter, the onions and 1 teaspoon salt in a medium skillet over medium heat. Cook, stirring occasionally, until the onions begin to soften and release liquid, 10 minutes. If the skillet becomes a little brown, add 1 to 3 tablespoons of water, 1 tablespoon at a time, and scrape the bottom with a wooden spoon to release the browned bits and prevent burning. Add 1 teaspoon sugar and cook, stirring occasionally, until the onions are golden brown and soften, 10 minutes.
- Form the ground beef into four 6-ounce patties (about 1/2 inch thick). Season the patties on both sides with several cracks of pepper and 1 tablespoon salt total.
- Heat the oil in a 12-inch cast-iron skillet or large skillet over medium high heat until shimmering. Add the patties and cook to your desired degree of doneness, about 4 minutes per side for medium rare or 5 minutes per side for medium.
- Meanwhile, make the special sauce. Stir together the mayonnaise, ketchup, relish, horseradish, Worcestershire sauce, remaining 1 teaspoon sugar and 1/4 teaspoon salt in a small bowl. Set aside.
- Generously spread the remaining 1 tablespoon butter on the outsides of the English muffins. Put the tops, buttered-side down, in a large nonstick skillet over medium-low heat.
- On each top, add 2 teaspoons of the special sauce, 1 cheese slice, 1 tablespoon caramelized onions and 1 patty. Top each patty with 1 tablespoon caramelized onions, 1 cheese slice and 1 English muffin bottom. Cover and cook until the bottom cheese slice melts, 2 to 3 minutes. Flip using two spatulas, cover and cook until bottom cheese slice melts and the English muffin is toasted, 2 to 3 minutes. Serve with the remaining sauce.
SOURDOUGH ENGLISH MUFFINS
The website I found this on gives credit to chard, who posted it on the KAF Baking Circle. I used my discard sourdough starter when I was feeding it. My starter was still quite young, so I am sure an aged starter will only improve these english muffins. I made them with sugar this time, but will try honey next time. Please note the recipe uses all purpose white flour. If you wish to use whole wheat you may need to add some yeast. I cooked these with the temperature on my griddle set at 300. I did not grease it, although the recipe says you should. I had cut my muffins & had to go out, so they were covered & left to rise for about 3 hours & were fine. I made egg m_muffins with them this morning. My picky daughter gave them her thumbs up!

- Night Before:.
- Combine starter, 2 c flour & milk in a large bowl.
- Stir to combine, cover & let stand 8 hours or overnight.
- Baking Day:.
- Stir in sugar, salt & baking soda.
- Add the last 3/4 c flour.
- Knead for 4 - 5 minutes.
- Roll to 3/4" & cut into 4" rounds, knead scraps together & cut or shape last muffins.
- Place on cornmeal or semolina dusted wax paper, dust tops.
- Cover & let rise 1 - 2 hours.
- Heat lightly greased griddle/pan to medium heat, cook 6 - 10 minutes per side.
- Muffins should be a nice golden brown & cooked through.

- In a large bowl mix the flour, baking powder, salt, sugar, and nutmeg.
- Cut in the butter with 2 knives or a pastry cutter until it resembles coarse meal.
- Mash the potato until it is smooth.
- Add it to the flour.
- Make a well in the center of the flour and add the milk.
- Mix it lightly with a fork, adding more milk if needed to make a soft dough.
- Put it on a lightly floured surface and knead it until smooth.
- Pat it (or roll it) to 1/2 inch thickness or less.
- Using a 3 inch cookie cutter (or whatever you use to make 3 inch rounds) cut them out.
- Dust a griddle with flour and heat until the flour browns just a bit.
- Cook the muffins on the griddle (at medium to medium-high heat) until they are cooked through and golden brown, turning them once.
- Serve them hot with your favorite topping.

- Proof the yeast with the sugar and warm water.
- Mix the white rice flour, potato starch, tapioca starch, xanthan gum and salt.
- Combine the 1 tablespoon + 2 teaspoon sugar, egg whites, and canola oil.
- Add yeast mixture. Beat to mix.
- Add half of the flour mixture and beat until smooth. Add rest of the flour mixture and beat three minutes.
- Spoon into English muffin rings sprayed with oil spray and let rise about 45-60 minutes for regular yeast and 25-35 minutes for quick rise yeast.

- Mix together hash, ketchup, onion, parsley flakes, and oregano. Divide mixture on muffins.

- Since you cook these on top of the stove, there is no need to preheat the oven.Proof the yeast in the l/2 Cup of lukewarm milk with the sugar.Scald the 1 cup of milk, melt the butter in it and let cool to lukewarm.
- Add the salt and the slightly beaten egg to the milk-and-butter mixture. Pour the yeast sponge into a large mixing bowl and blend in the milk-butter-and-egg mixture. Add the flour, a little at a time,mixing together well.
- Turn the dough out onto a lightly floured work surface and knead, adding more flour if necessary.
- Knead until elastic and shiny.
- Then place the dough in a large buttered bowl, cover with a towel and let rise for at least 1 hour, until doubled in bulk.
- Meanwhile, pour the cornmeal onto a platter and set aside. Take the dough out onto the work surface and knead again for a couple of minutes.
- Roll it out with a rolling pin to a thickness of about 1/3" and, with a glass or a large biscuit cutter, cut out round cakes.
- Put these onto the platter with the cornmeal, press down slightly and turn to get the other side covered with cornmeal.
- Place on a baking sheet and cover with a towel.
- Let stand for about 20 to 30 minutes or until doubled in size. Place a skillet over medium heat and when hot, brush with a little melted butter, turn the heat low and place about 5 to 6 muffins in the pan.
- Cook for approximately 5 minutes on each side, or until they are slightly brown.
- Cool on a rack.
- Toast after they are completely cooled off and right before serving them.

- Spray a large skillet with cooking spray and heat over medium heat. Carefully place one sandwich (or two if you can fit them) in the hot skillet, brown on one side (about 60 seconds), flip, press slightly, and brown on other side (another 30-60 seconds). - In a large bowl, dissolve the yeast in the water.
- Add the sugar, salt and dry milk and blend.
- Add half the flour and whisk for 1 minute.

- Add water and evaporated milk. Heat to 115 degrees.
- Dissolve yeast in milk mixture.

- Melt the butter or oil in a round glass or ceramic ramekin (3½ inch, 6 ounce size). In a separate bowl, mix baking soda and apple cider vinegar together ( it will be very fizzy and bubbly) Set aside.
- Add all the rest of ingredients to the ramekin, and whisk or stir with a fork very briskly. Add the baking soda-cider vinegar mixture to the ramekin and stir in well. Stir, scraping sides, until clump free.
- Cook in microwave for 1 minute and 30 Seconds Take a knife between the bowl and muffin and slide around to loosen edges. Cool enough to handle, then remove from bowl and cut in half sideways.
- You can also make several and bake them together on a baking pan at 400 degrees F for 12 to 15 minutes, until middle is firm.
- No matter how you cooked them, now they need to be toasted. If you do not toast them, you will not get that muffin like texture. Toast in a buttered or oiled frying pan, until lightly browned on each side. Use a spatula to press the tops of muffins lightly down while pan toasting.
- Cool after pan toasting and eat immediately or place a piece of parchment paper between each half then into a zippered freezer bag. Into the freezer they go.
- Take out night before needed and defrost in fridge. If you don't have the time, you can take out of freezer when needed and defrost in microwave for 25 seconds. How ever you defrost them, you need to pan toast them again or put in toaster oven (not a toaster) for a toast cycle.
