4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

Broccoli Toasts With Melty Provolone image

A beautifully assembled toast can make a lovely light dinner. In this version, blanched broccoli is cooked in olive oil that's been infused with garlic and anchovies (always optional) until it's very tender, then it's piled onto toasted bread. Grated extra-sharp provolone, which is a nice complement to the mildly sweet broccoli, is sprinkled on top, then the toasts are broiled until the cheese is melted and golden brown. You can use cauliflower, broccoli rabe or thickly sliced sweet peppers in place of the broccoli, but be sure to cook your vegetables until they are velvety soft - it provides a nice contrast to the crunchy bread. While these toasts work well on their own, they make an equally good accompaniment to roast chicken or grilled fish.

Kosher salt
1 head of broccoli, about 1 pound, trimmed and cut into small florets
3 tablespoons extra-virgin olive oil
4 anchovy fillets, roughly chopped (optional)
2 garlic cloves, finely chopped
1/2 teaspoon red-pepper flakes
1/2 teaspoon lemon zest
Black pepper
6 (3/4-inch thick) slices of a 10-inch round peasant loaf
3 ounces grated provolone, preferably extra-sharp

Steps:

  • Bring a large pot of salted water to a boil and blanch the broccoli for 2 to 3 minutes. Drain broccoli and pat dry.
  • Heat the olive oil in a 12-inch tall-sided skillet over medium heat. Add the anchovies, if using, the garlic and red-pepper flakes and cook until the anchovies have dissolved and the garlic is fragrant, 1 to 2 minutes. Add the broccoli and cook, stirring occasionally until the broccoli is cooked down and very tender, about 8 to 10 minutes. Add a tablespoon or two of water, if needed, to help it along. Stir in lemon zest. Taste and season with salt and pepper, if needed.
  • While the broccoli cooks, heat the broiler. Lay the bread on a large sheet pan and toast until golden, about 1 to 3 minutes a side depending on your oven. (Check often to make sure they don't burn.) Remove from oven and divide the broccoli mixture between the toasts. Scatter each toast with the grated provolone, return to oven and broil until the cheese melts and turns golden in spots, 1 to 3 minutes more. (Again, check often to make sure they don't burn.) Remove from oven and serve slices whole or cut in half.

2 strips bacon, thinly sliced
2 tablespoons unsalted butter
1/2 yellow onion, chopped (about 1 cup)
2 cloves garlic, minced
1/2 teaspoon celery seed
2 tablespoons all-purpose flour
2 cups low-sodium chicken broth
2 cups milk
4 small red-skinned potatoes (about 6 ounces), scrubbed and quartered
1/2 head broccoli (about 10 ounces), broken into florets, stem peeled and sliced
Kosher salt and freshly ground pepper
1 tablespoon Dijon mustard
1 baguette, sliced into eight 1/4-inch-thick pieces
4 ounces Cheddar, cut into 8 thin slices

Steps:

  • Cook the bacon in the butter in a medium saucepan over low heat until it renders slightly, about 2 minutes. Add the onion, garlic and celery seed and cook until soft, about 4 minutes. Scatter the flour over the mixture and stir to coat. Gradually add the broth and the milk, whisking until smooth.
  • Add the potatoes and sliced broccoli stem; increase the heat to medium and simmer, covered, until slightly softened, about 5 minutes. Add the broccoli florets and season with 1/2 teaspoon salt. Continue cooking, uncovered, at a rapid simmer until the vegetables are tender, about 5 minutes; season with salt and pepper.
  • Meanwhile, position a rack in the upper part of the oven and preheat the broiler to high. Spread the mustard on each piece of baguette and top with a cheddar slice. Place on a baking sheet and broil until the cheese melts; serve with the soup.

Steps:

  • Preheat oven to 425 degrees F.
  • Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.
  • Spread the panko into a 13 by 9-inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

1 tablespoon olive oil
3 cloves garlic, thinly sliced

Steps:

  • Put broccoli, with water still clinging to it from being washed, into a large microwave safe bowl or dish with a lid. Cover the bowl with the lid and microwave for 5 minutes.
  • In the meantime, heat the oil in a large skillet over a medium heat and add the garlic. Cook the garlic in the oil, stirring frequently, until it is golden brown, about 3 minutes. Transfer the toasted garlic to a small dish.
  • Remove the bowl of broccoli from microwave and carefully uncover it, drain it and pat it dry. Put the broccoli into the skillet with the olive oil and saute over a medium heat for 3 minutes. Sprinkle with toasted garlic, and season with salt and pepper.

1 large sweet potato (12 oz each)
1 red Thai chile, halved with some seeds removed (optional)
1 cup water
1/2 cup orange juice, fresh always best
kosher salt
pepper
1 large head broccoli, stem removed and cut into large florets
8 tablespoons olive oil, divided
kosher salt
pepper
4 3/4 inches slices crusty bread
2 tablespoons pistachios, chopped
1 tablespoon lemon juice, more OK
1 tablespoon fresh basil, chopped, divided
1 tablespoon of fresh mint, chopped, divided
flaky sea salt

Steps:

  • For the sweat potato mash, combine sweet potato, chile, OJ and water. Season with salt and pepper. Bring to a boil, reduce heat and simmer until sweet potato is very soft and liquid has evaporated - about 20-25 minutes. Remove from heat and mash. Let cool slightly. Can be done up to 3 days in advance.
  • Preheat oven to 425°F Toss broccoli and 25% of oil on a rimmed baking sheet. I use silpat. Season with kosher salt and pepper. Roast until tender, about 15-20 minutes. Let cool. Chop coarsely.
  • When serving, brush both sides of the bread with 25% of the oil and toast on a baking sheet until golden brown - about 6-8 minutes.
  • Toss broccoli, nuts, lemon juice, 1/2 the basil and mint with the balance of the oil in a large bowl. Season to taste with salt and pepper.
  • Spread toast with sweet potato. Top with broccoli mixture and remaining basil and mint. Sprinkle with the flaked salt and cut into pieces.

1/4 cup extra-virgin olive oil
1 whole garlic clove

8 slices Italian bread (1/2-inch thick slices)

Steps:

  • Trim the broccoli, reserving some of the stems.
  • Bring a large saucepan of water to boiling.
  • Add the broccoli and salt to taste.
  • Cook until the broccoli is tender, about 10 minutes; drain well, reserving some of the water.
  • Transfer the broccoli to a food processor.
  • Add the garlic and process until chopped fine.
  • With the motor running, add the oil through the tube and process until smooth and spreadable.
  • Add a tablespoon or two of the broccoli water if the mixture is too thick.
  • Season with salt and pepper to taste.
  • Place a barbecue grill or broiler rack about 5 inches away from the heat source.
  • Preheat the grill or broiler.
  • Toast the bread on one side until golden brown, about 2 minutes.
  • Turn the bread and toast the other side, about 2 minutes.
  • Spread with the warm broccoli puree; serve immediately.
