Everyone has their own version of broccoli salad. This one's basically broccoli, raisins, cashews and bacon in a dressing. Very simple - but it's my favorite.

- Combine broccoli, raisins, cashews and bacon.
- In separate bowl combine mayonnaise, cider vinegar and sugar for dressing.
- Pour dressing over all.

SOUTHERN BROCCOLI SALAD
A classic sweet and savory Southern broccoli salad combines raw (or barely cooked) broccoli with sweet dried fruit (typically raisins or cranberries), crunchy sunflower seeds and savory Cheddar in a creamy, tangy mayonnaise dressing. Briefly blanching the broccoli in boiling water ensures bright green veggies with a crisp-tender texture. The salad gets better with time, so make it a few hours ahead and refrigerate it. (Reserve the crispy bacon and sprinkle it on top right before serving.) And, if your tastes skew sweet, further increase the sugar by another tablespoon.

Steps:
- Bring a large saucepan of salted water to a boil.
- Heat a large nonstick skillet over medium. Add bacon and cook, turning occasionally, until golden and crispy, 7 to 8 minutes. Transfer to a paper towel-lined plate to drain; discard bacon fat or reserve for another use. Chop the bacon into bite-size pieces.
- Meanwhile, add broccoli to boiling water and cook until bright green, 1 minute. Rinse under cold water until cool (or transfer to an ice bath). Drain broccoli well and pat dry.
- In a large bowl, combine mayonnaise, onion, vinegar and sugar and mix well. Add the broccoli, cheese, raisins and sunflower seeds. Season with salt and pepper, and toss until well combined. (If time allows, refrigerate for 30 minutes to 3 hours to allow flavors to meld, stirring occasionally.)
- Transfer broccoli salad to a serving bowl or platter. Top with bacon. Salad can be served immediately, or refrigerated and served chilled.
SUNFLOWER BROCCOLI SALAD

- In a bowl, combine the broccoli, bacon, onion, raisins and sunflower kernels. In a small bowl, combine the dressing ingredients; stir until smooth. Pour over broccoli mixture and toss gently. Cover and refrigerate for at least 2 hours before serving, stirring occasionally.

BROCCOLI PEACH SALAD WITH AVOCADO AND SUNFLOWER SEEDS
This has a refreshing taste and crunch. You can leave out the sunflower seeds if you wish. You can also add raisins if you like them. This is so easy! You can make this in winter using canned peaches and frozen broccoli.

- In medium saucepan bring water to boiling, add baking soda, then the florets. Cook 3 minutes. Drain in colandar and dip in a bowl of ice water.
- Let set until cool.
- Place diced avocados in a separate bowl and toss with lemon juice. Set aside.
- In medium salad bowl add broccoli, and toss with rice vinegar.Add diced peaches, sunflower seeds, raisins and poppy seed dressing.
- You may cover and refrigerate if you wish.
- Just before serving, add the diced avocados with the lemon juice.
- This is a salad if which you can increase any of the ingredients you like.
- The longer it sits with the dressing, the flavor increases. If you prepare for a longer time to sit in the refrigerator,reduce the dressing. A little goes along way.
- Important: Always add the avocado at the last minutes before serving and toss to mix.
- This salad goes well with any grilled meat or fish.

- While slowly cooking bacon to extra crisp, soak raisins in HOT tap water. Drain bacon on paper towels. Drain raisins. Pour extra fat out of frying pan.
- In same pan (keeping the fond (browned bits), toast sunflower seeds lightly for one minute.
- Make dressing by combining mayo, sugar, vinegar, salt, and pepper. Add crumbled bacon, sunflower seeds, and raisins.
- Trim florettes from top of rinsed, raw broccoli - toss into dressing. (You COULD choose to nuke or steam broccoli, but would loose much of the crunch). Use veg peeler to remove tough part of broccoli stem, then dice and add to salad. Toss, cover, and refrigerate for 30 minutes.
