1 head broccoli, cut into florets
2 cups cottage cheese
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Steam broccoli until bright green and tender, 5 to 10 minutes. Combine broccoli, pasta and cottage cheese in 2 quart baking dish; mix well.
  • Sprinkle pasta mixture with Cheddar cheese and bake for 8 to 10 minutes, until cheese is bubbly.

(Let's face it, some of those dishes from some of those cooks are a little too much trouble if you've got a hungry bunch or your market has limited selections.) This one, however, is simple and darn good.

1/2 cup sour cream or 1/2 cup plain yogurt
1/2 cup mayonnaise
1 1/4 cups shredded cheddar cheese
2 eggs
1/2 teaspoon salt
1 1/2 teaspoons black pepper
6 cups broccoli, blanched
2 (4 ounce) cans mushrooms, drained
1 (3 ounce) package chicken-flavored ramen noodles, with seasoning packet

Steps:

  • Preheat the oven to 350 degrees.
  • In a small bowl, combine mayo, sour cream, cheese, eggs, salt pepper, and ramen seasoning packet. In another bowl, combine the broccoli, mushrooms, and broken ramen noodles; toss with the mayo to evenly coat.
  • Place mixture in a greased 8x8 baking dish (or something similar).
  • Bake for 45 minute covered, then 15 minute uncovered to brown. Cool about 15 minute before serving.

  • Cook and drain pasta.
  • Mix broccoli cheese soup with milk.
  • Stir in 1 stick of melted butter and 1 cup shredded cheddar cheese into soup mix.

This serves a lot and can be made the day ahead which make it an easy dish to bring. I love Ronzoni Smart Taste or Dreamfields pasta when I cook.

3/4 lb thin spaghetti
1 lb Velveeta cheese
24 ounces chopped frozen broccoli
1 medium onion, chopped
1/2 cup unsalted butter
3/4 cup milk

Steps:

  • Cook pasta as directed and drain well.
  • Thaw broccoli and drain well.
  • Melt butter in 10 inch fry pan add onion and cook for 10 min on medium heat, add broccoli and mix well.
  • Slice Velveeta cheese.
  • Grease bottom on 13x9 pan with butter.
  • Put 1/2 cooked pasta in bottom of pan top with 1/2 Velveeta cheese slices add 1/2 mixture of broccoli.
  • Add remaining pasta,and broccoli then top with remaining cheese.
  • Pour milk over top and sprinkle with parmesan cheese.
  • Bake 350°F for 40-45 minutes.

1 medium onion, chopped
1 garlic clove, minced
3 tablespoons butter or 3 tablespoons olive oil
3 tablespoons flour
1 cup milk
salt
pepper
1 cup brown rice, cooked
1 cup ham, diced (can use more)
3 cups broccoli florets, steamed
1 cup broth, chicken (or vegetarian)
1 cup cheese (shredded or cubed, I use Jarlsberg, your choice)
1 cup onion rings, french fried

Steps:

  • Preheat oven to 350 degrees F.
  • Cook onions in butter until almost soft, add garlic and cook all until soft.
  • Sprinkle flour over butter/onion mixture, stir to form a roux.
  • Slowly pour in milk and broth. Stir until somewhat thickened. Add cheese, salt and pepper. Continue to stir until thickened.
  • Spread ham, broccoli and rice in 9x9 glass casserole pan (or similar).
  • Pour cheese mixture over top.
  • Bake for 15 minutes.
  • Sprinkle fried onions on top. Bake for another 15 min until cheese is bubbling but not burnt!
  • Note: I was out of milk and didn't want to cook rice or broccoli ahead of time. I did the onion - flour steps the same, then upped the liquid (3 Cups broth) and just added the raw rice and broccoli to the pan, let the mixture of stuff come to a boil, then simmered for a few minutes; stirred in the cheese; sprinkled the onions on top; baked for 20min. Yum!
