BROCCOLI AND GREEN BEANS

Number Of Ingredients 6

8 cups broccoli florets (about 1 1/2 pounds)
1/2 pound green beans
2 tablespoons cup extra-virgin olive oil
2 cloves garlic, sliced thin
1/2 teaspoon crushed red pepper flakes, plus more if desired
Sea salt and freshly ground black pepper

Steps:

  • In a large pot, bring 6 quarts of salted water to a boil. Have ready a large bowl of ice water. Place broccoli into pot and cook for 2 minutes. You just want to parboil the broccoli at this point since you will saute it later on. Using a spider strainer, remove broccoli from pot and shock it in a bowl of ice water. When broccoli is completely cool, place it in a colander and allow to drain. Refresh the bowl of ice water. Bring the water back to a boil. Add green beans and cook for 4 minutes. Like the broccoli, you just want to parboil the green beans. Remove green beans from pot with spider strainer and add to ice water. When green beans are completely cool, add them to the colander and allow to drain.
  • In a large saute pan, heat olive oil. When almost smoking, add the garlic and saute for about 45 seconds. When the garlic starts to brown, remove immediately and discard. Overcooking the garlic will impart a very bitter taste to the dish. Add the red pepper flakes, broccoli and green beans to the pan and cook for 5 minutes. Season with salt and pepper. Serve immediately.

If you're fortunate enough to have broccoli in the garden, or know someone who does, this is a special treat. It's quite tasty and not bitter, unlike most greans.

A mess of broccoli greens
1/2 medium onion, sliced
2 clove garlic, crushed/minced
1 Tbsp bacon grease
1 tsp steak seasoning

Steps:

  • 1. In your cast iron skillet, caramelize the onion in the bacon grease. Meanwhile, stack and roll a handful of leaves, cut lengthwise once and then chop (1/2") crosswise.
  • 2. Remove the onion to the side, dump all of your leaves into the skillet, stir until they begin to wilt, reduce heat, add 1/2-3/4 C of water and cover. Stir every two to three minutes. When they are tender enough for your liking, add the garlic, onion and steak seasoning (here in SET, we use TexJoy). Remove from heat.

1 1/2 lbs broccoli
1 tablespoon corn oil (or any neutral oil)
1 teaspoon freshly grated gingerroot
2 garlic cloves, minced
1/4 teaspoon pepper
1/2 cup water chestnut, sliced (if using canned water chestnuts, rinse and drain well)
3 tablespoons soy sauce
3 tablespoons brown sugar
1/2 teaspoon sesame oil
3 tablespoons gin

Steps:

  • Cut broccoli up into florets. Slice stems.
  • Bring a pot of salted water to boiling. Blanch the broccoli for about 2 minutes but no longer than 3 minutes. Drain and rinse with cold water. Set aside to drain.
  • Heat the corn oil in a wok on medium-high heat. Add the ginger and garlic and sautè for about 1 minute. Be careful not to burn! (Reduce heat if necessary.).
  • Add the drained broccoli, black pepper and water chestnuts to the wok. Stir fry 1-2 minutes.
  • In a small glass bowl, whisk together the soy sauce, brown sugar and sesame oil. Add to the broccoli.
  • Add the gin, cover wok and cook 1 minute.
  • Transfer to a platter and serve hot.
